CHICKEN ROTINI STOVETOP CASSEROLE

1 (12 ounce) package rotini pasta
2 cups half-and-half cream
½ cup butter
⅔ cup freshly grated Parmesan cheese
½ teaspoon dried basil leaves
½ teaspoon dried oregano
½ teaspoon chopped fresh chives
½ teaspoon chopped fresh parsley
4 skinless, boneless chicken breast halves - cubed
½ green bell pepper, chopped
½ red bell pepper, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • Combine half-and-half and butter in a saucepan over medium heat. Boil gently, stirring, until mixture has reduced to 1 1/2 to 1 2/3 cups. Remove pan from heat; whisk in cheese, basil, oregano, chives, and parsley. Cover, and set aside.
  • Saute chicken in a large skillet until lightly browned on both sides. Stir in green and red bell pepper, and cook until vegetables are tender, and chicken is no longer pink in the middle.
  • In a casserole dish, combine the hot cooked pasta, chicken mixture, and sauce. Mix well, and serve immediately.

8 ounces whole-wheat egg noodles
1 (14-ounce) can reduced-sodium chicken broth
1 pound boneless, skinless chicken breasts, trimmed, cut into 3/4-inch pieces
1 (14- to 16-ounce) package frozen broccoli florets, thawed and chopped, if desired
1 1/2 cups skim milk
1/2 cup reduced-fat mayonnaise
3 tablespoons all-purpose flour
1 1/2 teaspoons dry mustard
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 1/2 cups shredded Colby-Jack or Cheddar cheese

Steps:

  • Place noodles in a large skillet. Pour broth over the noodles. Layer chicken, then broccoli over the noodles. Whisk milk, mayonnaise, flour, dry mustard, garlic powder, salt and pepper in a medium bowl. Pour over the broccoli. Bring to a simmer over medium-high heat. Reduce heat to maintain a simmer, cover and cook, stirring once or twice, until the noodles and chicken are cooked through, 15 to 18 minutes. Meanwhile, position rack in upper third of oven; preheat broiler. When the casserole is done, sprinkle cheese on top and broil until lightly browned, about 3 minutes.

When I worked outside the home for a couple years a co-worker made this for our lunch one day---I am so glad I got the recipe from her---I love it! *my parents do not like mushroom soup---so when I have made it for them---I use cream of chicken & cream of celery. So just use your 2 favorite cream of soup*

2 boneless chicken breast-cooked
1 can(s) lower sodium chicken broth
1 can(s) cream of mushroom soup
1 can(s) cream of chicken soup
1 box low sodium chicken flavor stovetop

Steps:

  • 1. Boil the 2 chicken breast until cooked---cut into bite size pieces.
  • 2. Preheat oven to 350'.
  • 3. In medium to large pot--bring the broth and both cream of soups to a boil. *I use a whisk to blend them all together.
  • 4. Add chicken and stovetop. Stirring to mix well. Take off heat. Let sit 5 minutes.
  • 5. Pour into a greased (I use non-stick spray) 13x9 in dish.
  • 6. Bake 35-40 minutes.
  • 7. **Optional--- Today when I made this I sprinkled the top with crushed French's Fried Onions. Add this the last 5-10 minutes of cook time so it doesn't get too brown.

My kids enjoy this tasty meal. They like their meals quick, fast, and in a hurry during this time of year! It's busy with all the football, band practice, and other events. That doesn't include work. This little dish is just what we need to fill our tummys with a warm quick home cooked meal. It's one that I'll continue to make for the rest of my life! I hope you'll find it that good too.

19 ounce(s) birds eye steam fresh broccoli
3 stalk(s) scallions
1 large chicken breast halves, skinless and boneless
1/2 stick(s) butter
1 can(s) cream of celery soup
2 tablespoon(s) dried onions
1 package(s) mahatma yellow rice, cooked
2 tablespoon(s) olive oil
4-6 ounce(s) shredded colby-jack cheese
- salt and pepper to taste

Steps:

  • Put rice on to cook as follows.
  • In the mean time, put olive oil, dried onions, and salt-pepper to taste Chicken breast in the pan and brown on both sides. It will not be done through and through. Take out and dice. Return to pan.
  • Add Broccoli, butter, cream of celery soup, and scallions. Cover and Simmer until rice is done.
  • Mix rice into the broccoli mixture, top with 4-6 oz of shredded Colby-Jack cheese. Let sit until cheese is melted. serve with ritz crackers.

2 1/2 cup(s) chicken broth
2 - chicken breasts
8 - green onions
1 package(s) mushrooms
3 tablespoon(s) butter
1 1/4 cup(s) rice
6 tablespoon(s) soy sauce
2/3 cup(s) almonds, slivered
- chopped green onions for garnish

Steps:

  • Pour chicken broth into saucepan, add chicken and poach gently for 30 minutes. Save broth for step 3. When chicken is done and cool, chop into bite-sized pieces. Set aside.
  • Wash and chop green onions, set aside. Wash and slice mushrooms.
  • In large pot, saute mushrooms in 1 Tbsp butter until soft. Add remaining 2 Tbsp butter to pot, add rice. Stir to coat rice thoroughly.
  • Add chicken, soy sauce and broth. Stir well. Add onions, saving some for garnish. Bring to a boil. Cover and simmer over low heat, stirring occasionally, allowing rice to absorb liquid and flavors to blend...about 25 minutes.
  • Top with almonds and more green onions for garnish.
