1 1/2 lbs medium asparagus, trimmed
1 tablespoon sherry wine vinegar
2 teaspoons minced shallots
1/4 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons finely chopped fresh tarragon
1 large egg, hard-boiled

Steps:

  • Steam asparagus on a steamer rack set over boiling water, covered, until just tender, 3 to 5 minutes (depending on thickness).
  • transfer to a bowl of ice water to stop cooking.
  • Drain well and pat dry with paper towels.
  • Whisk together vinegar, shallot, mustard, salt, and pepper in a small bowl a add oil in a slow stream, whisking until emulsified.
  • Whisk in tarragon.
  • Halve egg and force each half through a coarse sieve into a bowl.
  • Toss asparagus with 1 tablespoon vinaigrette and divide among 4 plates. Spoon remaining dressing over asparagus and top with egg.

2 tablespoons Dijon mustard
1/4 cup champagne vinegar
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 cup olive oil
2 shallots, peeled and finely chopped
2 tablespoons minced fresh tarragon
2 lbs asparagus

Steps:

  • Put the mustard in a small bowl. Whisk in the vinegar, salt and pepper. Slowly add the olive oil, whisking constantly, until completely incorporated. Stir in the shallots and tarragon. Set aside for at least 15 minutes.
  • Trim the asparagus, discarding woody ends. Steam, roast or grill the spears whole until just tender when pierced with a fork. Do not overcook.
  • Arrange the still-warm asparagus on a warm serving plate, spoon the dressing over it and turn the asparagus gently to coat.

3 lbs thin asparagus, cut into 5 inch spears
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons minced shallots
2 tablespoons chopped fresh tarragon
1 teaspoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 pinch ground red pepper

Steps:

  • Bring 4 quarts of salted water to a boil in a large pot.
  • Add the asparagus, return to a boil, and cook about 2 minutes or until just tender.
  • Rinse and drain under cold running water.
  • Pat asparagus dry with paper towels.
  • For tarragon sauce, combine the mayonnaise, sour cream, shallots, tarragon, lemon juice, salt, freshly ground pepper, and red pepper in a small bowl until well mixed.

1 bunch asparagus
3 tablespoons salted butter
1/8 teaspoon tarragon
2-3 dashes black pepper

Steps:

  • Fill the bottom pot of your steamer with a couple inches of hot water. Set it on the stove, covered, over high heat to bring it to a boil.
  • While the water is heating, rinse your asparagus and cut off the bottom two inches. Add the asparagus to your steamer basket.
  • When the water is boiling, place the steamer basket on top of the boiling pot and cover the steamer basket with a lid. Steam your asparagus for 10 minutes, or until it is just tender.
  • When the asparagus is almost done cooking, place your butter in a small, microwave-safe bowl and cover it with wax paper. Melt the butter in the microwave. Rub the tarragon between your thumb and fingers to crush it up a bit, and sprinkle it into the melted butter. Add your pepper and stir to blend.
  • Serve the asparagus in a platter with the bowl of tarragon butter on the side. Each person can spoon some tarragon butter over his or her portion. Store leftovers in the refrigerator for up to four days.

2 pounds fresh asparagus, trimmed
1/2 cup chopped onion
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon garlic powder
1 teaspoon lemon-pepper seasoning

1 cup chicken broth
1/4 cup minced fresh parsley
2 tablespoons cider vinegar
1 teaspoon dill weed

  • In a large skillet, bring water to a boil. Add asparagus; cover and boil for 3 minutes. meanwhile, in a small skillet, saute onion in butter until tender. 2 tablespoons olive oil
Kosher salt and freshly ground black pepper

Creamy Herb Vinaigrette, recipe follows
2 tablespoons mayonnaise
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard

  • Preheat the oven to 425 degrees F. Line a sheet tray with foil.
  • Add the asparagus in a single row to the prepared sheet tray. Drizzle with the olive oil, toss, and then season with some salt and pepper. Roast until tender, 15 minutes.

1/4 to 1/2 ounce dried morels or porcinis, or a combination of both
1/4 cup (1/2 stick) butter
1/2 cup chopped shallots
1 pound fresh shiitake or white button mushrooms or a combination of both, cleaned, trimmed and sliced
1 to 1 1/2 pounds asparagus, trimmed, cut into 1 1/2-inch lengths
1/4 cup heavy cream
1 teaspoon chopped fresh tarragon or 1 tablespoon chopped fresh chervil
Salt and freshly ground black pepper

Steps:

  • Put morels, porcinis or both in a bowl with very hot water to cover; soak until soft, about 20 minutes. Drain morels and reserve soaking liquid. Cut morels in half; if porcinis are large, chop them roughly.
  • Melt butter in a large skillet over medium-high heat; when butter is hot and foam has subsided, add shallots and reconstituted and fresh mushrooms to pan. Cook until shallots soften and fresh mushrooms have released their liquid and it has cooked off, about 10 minutes.
  • Add asparagus and 1/2 cup reserved liquid to pan. Bring liquid to a boil, cover, reduce heat so mixture simmers, and continue cooking for another 2 to 4 minutes, or until asparagus is crisp-tender. Add cream and tarragon or chervil and continue cooking, uncovered, until sauce thickens slightly and asparagus is tender, about 4 minutes more. Season with salt and pepper and serve.

4 chicken breasts, cut into pieces
1 lb asparagus, cut into 1 in. pieces
1/4 cup flour
1/3 cup shallot, minced
1 cup chicken broth
1/3 cup dry white wine
1/3 cup sour cream
2 tablespoons Dijon mustard
2 teaspoons fresh tarragon or 3/4 teaspoon dried tarragon
1 teaspoon salt
1 teaspoon pepper
2 tablespoons oil

Steps:

  • Heat 1 tbs. oil in large skillet over med-high heat.
  • Combine flour, 1/4 teaspoons salt and 1/4 teaspoons pepper. toss chicken in flour to coat and add to pan. Cook until browned all over, 5-7 minute When done transfer to plate and set aside.
  • Add 1 tbs. oil to skillet. Add shallots and cook until softened.
  • Add asparagus and 1/2 cup of broth. Cover and cook until asparagus is tender, about 3-4 minute When done transfer asparagus and liquid to bowl and set aside.
  • Return chicken to skillet and add 1/2 cup broth and wine and bring to a simmer. Cook about 2 minute Remove skillet from heat.
  • In a bowl, combine mustard, sour cream and tarragon. Stir into skillet. Return to heat and cook until heated through, about 1 minute.
  • Stir in asparagus and it's liquid and season with salt and pepper to taste.
  • Serve over white rice.
