These are not your ordinary steak sandwiches: Wasabi adds a nice horseradish kick to every bite!

1/3 c. sour cream
1/4 c. mayonnaise
1 tbsp. chopped fresh cilantro
1 to 2 teaspoons prepared wasabi paste
1 garlic clove, grated
1/4 tsp. kosher salt, plus more to taste
Black pepper, to taste
2 pounds sirloin steak (about 1 inch thick)
Olive oil, for drizzling
1 tsp. kosher salt
Black pepper, to taste
6 ciabatta rolls, split open
6 oz. sliced havarti or Swiss cheese
3 c. baby arugula
Potato chips, for serving

Steps:

  • Combine the sour cream, mayonnaise, cilantro, wasabi, garlic, salt and a few grinds of pepper in a small bowl. Cover and refrigerate 2 hours.
  • Preheat the oven to 425˚. Heat a large cast-iron skillet over medium-high heat until hot. Drizzle the steak with olive oil and sprinkle with the salt and a few grinds of pepper. Add to the skillet and cook until browned, about 2 minutes per side.
  • Transfer the skillet to the oven and cook 5 to 7 minutes for medium rare. Remove steak to a cutting board and let rest.
  • Meanwhile, place the bottom halves of the rolls on a baking sheet and top with the cheese. Bake until the cheese starts to melt, about 3 minutes.
  • Slice the steak and place on the roll bottoms. Top with the arugula. Spread the wasabi sauce on the top halves of the rolls and close the sandwiches. Serve with potato chips.

2 tablespoons heavy cream

Steps:

  • For the wasabi cream: Combine the sour cream, mayonnaise, cilantro, heavy cream, wasabi, garlic and salt and pepper to taste in a bowl. Chill for 2 hours.
  • For the petite filet: Preheat the oven to 425 degrees F.
  • Heat a cast-iron skillet over medium-high heat until hot. Drizzle the steaks with olive oil and season with salt and pepper. Add the steaks to the skillet and sear quickly, about 1 minute per side. Transfer the skillet to the oven and roast for 5 minutes.
  • Serve with the wasabi cream.

8 cloves garlic, minced
1 tablespoon olive oil
1 pinch salt and ground black pepper
2 (12 ounce) New York strip steaks
12 cloves garlic, peeled
1 cup olive oil for frying
1 pinch salt and ground black pepper to taste
1 ½ tablespoons balsamic vinegar

Steps:

  • Whisk minced garlic, olive oil, salt, and black pepper in a bowl, then pour into a resealable plastic bag. Add the steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
  • Combine 12 garlic cloves and 1 cup olive oil in a small saucepan over low heat. Cook, stirring occasionally, until garlic is golden and tender, about 30 minutes. Set aside.
  • Preheat an outdoor grill for high heat, and lightly oil the grate. Remove steaks from bag, wiping off excess marinade with paper towels. Generously season steaks with salt and black pepper.

2 tablespoons white wine vinegar
10 fluid ounces white wine
¼ cup minced shallots
1 tablespoon wasabi paste, or to taste
1 tablespoon soy sauce
1 cup unsalted butter, cubed
salt and black pepper to taste
1 tablespoon olive oil, or as needed
1 cup chopped cilantro leaves
6 (6 ounce) fresh tuna steaks, 1 inch thick

Steps:

  • Combine the white wine vinegar, white wine and shallots in a small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons. Strain out shallot and discard, return liquid to the pan.
  • Stir the wasabi and soy sauce into the reduction in the pan. Over low heat, gradually whisk in butter one cube at a time allowing the mixture to emulsify. Be careful not to let the mixture boil. When all of the butter has been incorporated, stir in cilantro, and remove from heat. Pour into a small bowl, and set aside.
  • Heat a large skillet over medium-high heat. Brush tuna steaks with olive oil, and season with salt and pepper. Place in the hot skillet, and sear for 3 to 5 minutes on each side. Be careful not to overcook, this fish should be served still a little pink in the center. Serve with sauce.

Found this recipe years ago in a Bon Appetit magazine. It sounds really good. It's from the Shin's in Le Meridien Hotel, NY Japanese "fusion" cuisine, (blend of Asian and Western).

2 cups low sodium chicken broth
1 cup canned beef broth
1/2 cup onion, chopped
1/2 cup tomatoes, seeded and chopped
1/4 cup apple, peeled and chopped
1/4 cup carrot, chopped
1/4 cup celery, chopped
1 tablespoon soy sauce
3 garlic cloves, chopped
1 teaspoon tomato paste
5 teaspoons wasabi powder, dissolved in
5 tablespoons water
1/2 cup fresh white breadcrumbs
2 tablespoons fresh parsley, chopped
2 garlic cloves, minced
7 tablespoons butter, chilled
2 medium onions, thinly sliced
32 ounces beef tenderloin steaks, 1 1/2-inches thick

Steps:

  • For SAUCE:.
  • Combine all ingredients except wasabi mixture in large saucepan.
  • Bring to boil.
  • Reduce heat, cover and simmer 1 hour.
  • Strain into medium saucepan.
  • Boil until reduced to 1/2 cup, about 15 minutes.
  • Stir in wasabi mixture.
  • Season with salt and pepper. (Can be made 1 day ahead. Cover and chill).
  • FOR STEAKS:.
  • Preheat broiler.
  • Combine breadcrumbs, parsley and garlic in small bowl.
  • Melt 2 tablespoons butter in heavy large skillet over medium-low heat.
  • Add onions and saute until tender and golden brown, about 15 minutes.
  • Meanwhile, season steaks with salt and pepper.
  • Broil to desired doneness, about 4 minutes per side for medium-rare.
  • Sprinkle breadcrumbs over steaks.
  • Broil until breadcrumbs are golden brown, about 2 minutes.
  • Bring sauce to simmer.
  • Remove from heat.
  • Gradually add remaining 5 tablespoons butter, whisking just until melted.
  • Arrange onions in center of 4 plates.
  • Top with steaks.
  • Spoon sauce around steaks and serve.
