20 baby sweet peppers
cooking spray
1 teaspoon ground chipotle chile pepper
1 teaspoon paprika
1/2 teaspoon kosher salt
1 (1 lb) flank steak, trimmed
3 tablespoons canola mayonnaise (such as Hellmann's)
1 teaspoon lime rind, grated
1 tablespoon lime juice
1 teaspoon garlic, minced
1 teaspoon water
8 (6 inch) corn tortillas
1/2 cup refrigerated fresh salsa
2 ounces queso fresco, crumbled (about 1/2 Cup)

Steps:

  • Preheat broiler to high.
  • Arrange bell peppers in a single layer on a foil-lined jelly-roll pan; lightly coat peppers with cooking spray. Broil peppers 4 minutes on each side or until blackened. Cool slightly; discard stems. Cut peppers into strips.
  • Combine chipotle, paprika, and salt; rub spice mixture evenly over steak. Place steak on a broiler pan coated with cooking spray; broil 5 minutes on each side or until desired degree of doneness. Let steak stand 10 minutes; thinly slice steak across the grain. Combine mayonnaise and next 4 ingredients; stir well.
  • Working with 1 tortilla at a time, heat tortillas over medium-high heat, directly on the eye of a burner, for about 15 seconds on each side or until lightly charred. Place 2 tortillas on each of 4 plates. Divide steak evenly among tortillas; top each taco with 1/4 cup sweet peppers, 1 tablespoon salsa, 1 tablespoon cheese, and 1 1/2 teaspoons mayonnaise mixture.

½ lb top sirloin steak
pico de gallo, or salsa of your choice
4 corn tortillas
1 ripe avocado
⅓ cup fresh cilantro
3 tablespoons lime juice
⅔ cup water
salt, to taste
1 ½ teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
1 clove garlic, minced
2 tablespoons lime juice, or 1 lime

Steps:

  • Place the avocado, cilantro, lime juice, water, and salt in a blender or food processor. Blend until smooth and set aside.
  • In a small bowl, combine the chili powder, cumin, oregano, salt, pepper, garlic, and lime juice.
  • Rub the chili lime rub all over the steak in a thin, even layer.
  • Grill the steak on either a grill or stove-top grill pan. To get the "X" grill marks, sear the steak for 1 minute, then adjust about 90 degrees and grill for another minute. Flip the steak when you've achieved desired grill marks and repeat the process on the other side.
  • Allow the steak to rest for 5-10 minutes once taken off the heat.
  • Slice the steak thinly, against the grain of the meat.
  • Prepare the tacos by topping the corn tortillas with a few strips of meat, salsa, the avocado cilantro lime sauce, and cilantro, and serve.

2 -3 lbs skirt steaks
16 corn tortillas (or flour tortillas, your preference)
1 cup chopped cilantro
1 cup chopped onion
1/2 cup orange juice
4 tablespoons lime juice
4 tablespoons oil
1/2 cup cilantro, roughly chopped
1 teaspoon cumin
1 teaspoon salt
2 teaspoons julio's seasoning (check Amazon or any fajita seasoning, such as adobo seasoning)
1 ounce ranch dressing mix (the powder kind)
1 cup mayonnaise
1/2 cup milk
2 tablespoons lime juice
2 garlic cloves, roughly chopped
1/2 cup cilantro, roughly chopped
1/4 cup green chili salsa
1 dash hot sauce

Steps:

  • Marinade:.
  • In a food processor, add the orange juice, lime juice, oil, cilantro, cumin and salt. Puree the marinade until smooth.
  • Place the skirt steak in a large Ziploc bag.
  • Pour the marinade in the Ziploc bag with the skirt steak and seal the bag. Squeeze out as much air as possible. (vacuum sealing works great too!).
  • Shake bag to ensure the marinade is evenly distributed.
  • Marinade from a few hours or overnight in the refrigerator.
  • Lightly oil the hot grill (can use outdoor or indoor grill or broil in oven).
  • Remove the steak from the Ziploc bag and drain off the marinade. Sprinkle the Julio's seasoning (or any fajita seasoning) to both sides of the steak.
  • Grill streak for approximately 2-3 minutes each side, more or less depending on your temperature preference.
  • Remove steak from grill and let rest for about 10 - 15 minutes. For oven, use the broiler and broil each side for 3-4 minutes (should be cooked to medium).
  • Cut meat into tiny cube pieces.
  • Sauce:.
  • Place ranch dressing mix, mayo, milk, lime juice, garlic, cilantro, green salsa and hot sauce in a blender.
  • Blend the sauce until smooth.
  • Sample it and add hot sauce more or less to taste.
  • Make it several hours ahead of time to allow it to thicken.
  • To prepare the tacos:.
  • Warm the tortillas in a skillet or microwave just until warm.
  • Add the steak pieces.
  • Add onions.
  • Add cilantro.
  • Top with lime dressing.

Oh my gosh these are SOOOO good!! My family can't get enough of these tacos! A little bit of extra work, preparing the beef, but soooo worth it! These are the best tacos in the world, I swear! :) We usually don't use the lettuce leaves, but just do soft or crunchy taco shells...but its still really good!

1 1/2 lbs flank steaks
2 limes, cut in wedges
2 limes, juice of
1 teaspoon salt
1/2 teaspoon pepper
1 cup fresh cilantro, chopped
2 tablespoons onions, chopped
8 large romaine lettuce leaves (whole, washed and dried)
2 cups lettuce, chopped (use remaining Romaine)
2 cups low-fat cheddar cheese, shredded
1 cup diced tomato
salsa, your choice

Steps:

  • Prepare marinade for steak by using the juice from 2 limes, salt, pepper, cilantro and chopped onion.
  • Place all these in a plastic zip top style bag along with flank steak. Refrigerate for at least 8 hours or overnight.
  • Preheat grill, bbq, George Foreman or oven broiler.
  • Grill steaks over coals for about 4-6 minutes per side. Let it rest a few minutes before cutting steak into slices about 1/8-1/4 inch thick.
  • Cut remaining limes in half.
  • Using the Romaine lettuce leaves, fill with the remaining shredded Romain lettuce, tomatoes, steak strips, cheese and salsa.
  • Squeeze juice of half a lime over each wrap, wrap it up and enjoy!
