1 tablespoon grill seasoning
4 medium russet potatoes, scrubbed and cut into eighths
2 sheets aluminum foil

Steps:

  • Preheat the oven to 500 degrees F (260 degrees C).
  • Mix olive oil and grill seasoning together in a large bowl. Add potato wedges and toss to coat.
  • Line 2 baking sheets with aluminum foil. Crumple up foil slightly and grease with cooking spray. Arrange potato wedges on the foil so that they are not touching and have enough room to cook.
  • Bake in the preheated oven, turning once, until brown and crispy, about 25 minutes.

Steps:

  • In a large skillet heat oil over medium high heat. Add butter and stir until melted. Add potatoes and toss to coat. Cook the potatoes for 10 minutes, occasionally tossing and stirring them. Transfer potatoes to a baking sheet and roast in oven at 400 degrees for another 20 minutes. Bake until potatoes are golden brown and crispy. Season with salt and pepper.

2 tablespoons canola oil
1 to 2 tablespoons malt vinegar
1-1/2 teaspoons water
1 cup frozen french-fried potatoes
1/2 pound beef top sirloin steak
3 cups torn iceberg lettuce
1/3 cup chopped tomato
1/4 cup chopped red onion
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • For dressing, whisk first 4 ingredients until sugar is dissolved. Cook potatoes according to package directions., Meanwhile, place a skillet coated with cooking spray over medium heat. Add steak; cook until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°), 5-6 minutes per side. Remove from heat; let stand 5 minutes before slicing., To serve, divide lettuce, tomato and onion between 2 plates; top with potatoes, steak and cheese. Drizzle with dressing.

3 tablespoons extra-virgin olive oil
1 teaspoon dried thyme, eyeball it
1 teaspoon dried oregano, eyeball it
1 tablespoon steak seasoning blend, such as Montreal Steak Seasoning, or salt and pepper

Steps:

  • Preheat oven to high. Cut potatoes and spread out on a cookie sheet. Coat potatoes with extra-virgin olive oil, dried herbs and steak seasoning or, salt and pepper. Spread potatoes to the corners of the cookie sheet. Cook potatoes in very hot oven 25 minutes. Turn potatoes once, half way in the cooking process. Serve fries hot from the oven.

4 large russet potatoes, well scrubbed
1/4 cup olive oil
1 teaspoon Neely's dry rub
Kosher salt and freshly ground black pepper
Creole Dipping Sauce, recipe follows
3 tablespoons Creole mustard
1/2 cup mayonnaise
Dash hot sauce

Steps:

  • Preheat the grill to medium heat.
  • Add the potatoes to a large pot of cold water. Bring potatoes to a boil over medium heat, then reduce the heat and simmer until the potatoes are just slightly tender but not cooked through about 10 to 12 minutes. Drain the potatoes and dry well. Slice the potatoes into thick wedges, about 6 per potato.
  • In a large bowl, whisk together the olive oil, dry rub, and salt and pepper, to taste. Add the potato wedges and toss. Grill the potatoes until golden brown and crisp all over, about 10 to 12 minutes. Transfer the potatoes to a serving bowl or platter and serve with Creole Mustard Dipping Sauce.
  • Combine all of the ingredients in a small bowl.

These super-crusty, oven-fried potato wedges, or 'steak fries' as they call them where I'm from, are done with rendered duck fat, and while I'm a big fan of ones done with olive oil and/or butter, these really are better.

1 tablespoon chopped fresh thyme
1 pinch cayenne pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil.
  • Place potato wedges in a bowl; sprinkle thyme, cayenne, salt, and black pepper over the top. Drizzle melted duck fat over potatoes and toss to coat.
  • Transfer potatoes, skin-side down, to the prepared baking sheet. Season wedges again with salt.
  • Bake in the preheated oven for 40 minutes. Increase oven temperature to 450 degrees F (230 degrees C). Turn potatoes onto their sides and bake for 10 minutes. Flip over and cook on the other side until golden brown, about 10 minutes more.

My Favorite Steak Salad (With French Fries!!!) image

Sometimes, I just don't want to separately make a meat, a vegetable and a starch. This is an awesome all in one salad that my family and I enjoy often. The salad and the french fries in the salad are inspired by a restaurant called "The Decade" in Pittsburgh, which is sadly no longer in existence. You can really do whatever you want with this recipe - any ingredients - any dressings; I'm just sharing the way that we usually do it. Enjoy!

13 ounces lettuce (bagged lettuce of your choice or pick, wash and hand-tear your own)
2 hard-boiled eggs, quartered
1 English cucumber, sliced
2 tomatoes, sliced (or 4 Romas)
1 1/2 lbs New York strip steaks
2 tablespoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
1 lb frozen french fries (I use Ore-Ida Golden, Crinkle, or Waffle, but use your favorite)
1/4 teaspoon seasoning salt (or you can use regular salt)
1 cup pre-shredded mozzarella cheese
1 1/2 cups croutons
1 (8 ounce) bottle salad dressing (I use Good Seasons, but Ranch or Blue Cheese or your favorite will work well, too, use to taste)

Steps:

  • Using 4 dinner-sized bowls, layer the lettuce, cucumber, tomatoes, and eggs.
  • Take your steaks out of the refrigerator, rub them with olive oil and season with the salt and freshly ground pepper. Leave them out for 30 minutes. This relaxes the meat fibers.
  • Preheat the oven to 450 degrees, or whatever the instructions on your french fries call for.
  • At the same time, preheat your grill for about 450 degrees for the steaks.
  • After your oven preheats, put your fries in the oven.
  • At the same time, put your steaks on the grill. Flip them after 6-8 minutes and cook for an additional 6-8 minutes for medium-rare/medium. Your fries will be done or close to done at the same time as the steaks.
  • When done, turn off your oven, season your fries with the seasoned or regular salt. Put the fries on the salads.
  • Slice the steak into bite sized pieces and distribute the pieces over the fries.
  • Sprinkle the salads with the mozzarella cheese and croutons.
  • Pour on the salad dressing in the amount that you desire and toss if you wish.
  • Enjoy this delicious all-in-one meal!

1 1/2 teaspoons dry mustard

2 tablespoons vegetable oil

4 each 10 ounce rib eye steaks
2 tablespoons coarse ground black peppercorn
1 tablespoon coarse ground white peppercorn
1 tablespoon coarse ground green peppercorn
1 tablespoon coarse ground red peppercorn
1/2 tablespoon szechwan peppercorn
Salt to taste
4 heads roasted garlic
2 tablespoons dijon mustard
2 egg yolks
2 cup canola oil
Juice of 1/2 lemon
Salt and black pepper to taste
6 large baking potatoes, washed and wrapped in foil and pricked (Can use leftover mashed potatoes)
8 garlic cloves
1 cup chopped scallions
1 cup heavy cream
2 tablespoons butter
2 cups AP flour
3 eggs, beaten
2 cups panko
Salt and black pepper to taste
2 large, ripe tomatoes, sliced 1/16"
Extra virgin olive oil
Balsamic vinegar
Fleur de sel
Cracked black pepper

Steps:

  • Mix the peppercorns together on a plate. Season the steaks with salt then press lightly into the peppercorns on both sides. Place on a hot grill. Cook for 6-8 minutes, turning once for medium-rare. Let rest 3 minutes before serving.
  • For the aioli: In a food processor, add roasted garlic cloves, dijon and yolks. While processor is on, drizzle in oil, slowly at first until it emulsifies then more quickly. Add juice, salt and pepper and pulse to incorporate. Check for seasoning. Store in fridge.
  • For the fries: Bake the potatoes until fully cooked (about 45 minutes at 350 degrees, knife should slide off potato when pricked). In a sauce pan, add cream and garlic and reduce by 50 per cent on low heat, about 15 to 20 minutes. With a hand blender, mix well and check for seasoning. When the potatoes can be handled, scoop out flesh into a bowl. Fold in the cream, scallions and butter and hand mash. You can use a mixer fitted with a paddle. Check for seasoning. Spread mash on 1/2 sheet tray, 1/2" thick. Cover with plastic, top with another tray and press firmly. Chill overnight in the fridge. You may freeze the mash in 4 hours. Slice rectangular 'fries' (3x1/2x1/2). Dredge in flour, egg then panko. Fry at 350 degrees until GB & D, about 5 minutes. Season with salt.
  • For the salad: On 4 large plates, spread out the tomato like carpaccio slices. Drizzle lightly with oil and vinegar and season with Salt and pepper.
  • Plating: On the above tomato plates, stack the fries up and place steak in front. Serve the aioli in a ramekin for both the steak and fries.

SWEET POTATO STEAK FRIES

3 pounds sweet potatoes, scrubbed clean
Olive oil, for drizzling
Kosher salt and freshly ground black pepper, for sprinkling
Paprika, for sprinkling

Steps:

  • Preheat the oven to 450 degrees F and line a rimmed sheet pan with foil. Cut the ends off the potatoes, then cut the potatoes in half lengthwise. Cut into thick wedges, keeping all of the fries evenly sized. Spread the fries on the lined sheet pan and drizzle with a few tablespoons of olive oil, a big pinch of kosher salt and lots of freshly ground pepper. Sprinkle to taste with paprika and garlic powder and toss everything to evenly coat. Roast until brown and crispy on the bottoms, 10 to 15 minutes.

8 ounces grilled sirloin steak
1 cup ranch dressing
1/4 cup A1 steak sauce
2 tablespoons pommery mustard
Salt and pepper

Steps:

  • Tomato mushroom sauce: Saute the garlic and shallots in olive oil until tender, about 4 minutes. Add the corn, mushrooms, and demi-glace and bring to a simmer. Reduce by 1/4. Add tomatoes and remove from heat. Swirl in whole butter and add salt and pepper, to taste.
  • Tom's Steak Fries: Place potato in salted, cold water and bring to a boil. Reduce heat and simmer for approximately 20 minutes. Drain and cool potato. Quarter and deep-fry until golden brown. Season with salt and pepper.
  • To assemble dish: Place grilled steak in the center of the dish. Spoon vegetables and sauce over the steak. Top with spinach and onion and drizzle with A1 dressing.
  • Mix together all of the ingredients, to taste.

CHIMICHURRI-STYLE STEAK SARNIES & CHEAT'S SPICY FRIES

Elevate a steak sandwich with a punchy, zingy chimichurri sauce, chipotle mayo and spicy Cajun-style fries on the side. It's perfect Friday night food

2 x 200g rump steaks, fat removed
2 long ciabatta rolls
2 handfuls of rocket
30ml sunflower oil
270g shop-bought frozen fries
Cajun spice mix
70g mayonnaise
1 tsp chipotle chilli paste
½ lime, zested and juiced
1 banana shallot, peeled and roughly chopped
1 red chilli, finely chopped
1 garlic clove, crushed
1½ tbsp sherry vinegar
small bunch of parsley
small bunch of coriander
50ml extra virgin olive oil

Steps:

  • Heat the oven to its highest setting. For the fries, pour the sunflower oil into a baking tray and put in the oven for 15 mins to get hot. Reduce the temperature to 220C/200C fan/gas 8. Tip the fries into the oil, turn to coat, and cook for 20 mins. Add the Cajun spice mix and return to the oven for 15 mins until golden and crisp.
  • Meanwhile, make the mayo by mixing all the ingredients together in a bowl. Set aside.
  • For the chimichurri-style sauce, blitz all the ingredients together until you have a smooth sauce, then season to taste. Set aside.
  • Heat a griddle pan over a high heat. Rub the steaks with salt only (pepper will catch and burn), put the steaks in the pan and cook for 3 mins on each side (for medium). Remove from the pan, cover with foil and leave to rest for 10 mins.
  • Halve the ciabatta rolls, toast in the same griddle pan that you cooked the steak in, cut-side down, and spread one half of each with the chipotle mayo. Slice the steak into strips, divide between the ciabattas, drizzle over the chimichurri and add a little rocket. Serve with the fries and any leftover mayo.

3 pounds sweet potatoes
1/4 cup olive oil
2 teaspoons paprika, sweet, hot or a combination
1 tablespoon coarse or kosher salt
1 teaspoon cumin seeds, toasted
1 teaspoon coriander seeds, toasted
1 tablespoon dark brown sugar

Steps:

  • Heat the oven to 425 degrees. Cut the skins off the sweet potatoes, squaring off the round sides to make each potato into a large rectangle. Cut into long fries about 1/4-inch thick and 1 inch wide. (If not using potatoes immediately, soak in water for up to 1 day. Drain and pat dry before cooking.)
  • Put two large sheet pans in the oven to heat. Toss the potatoes, and skins if you like, with oil, paprika and 2 teaspoons of the salt. Arrange in one layer on the hot pans. (Don't use parchment paper; it will make the potatoes soggy.) Roast until tender and starting to brown on the bottom, about 15 minutes.
  • Meanwhile, grind the cumin, coriander and 1 teaspoon salt together. Mix in the brown sugar.
  • Remove pans from the oven and raise the heat to 450 degrees, or set to broil. With a spatula, carefully loosen the fries and turn each one over. Sprinkle with the spice and sugar mixture. Return to the oven and bake just until the fries are blistered and sizzling vigorously, about another 5 minutes. (If your oven has a convection feature, use it.) Do not overcook, or the fries will become leathery. Cool slightly.

Sweet potatoes cut in steak fry fashion are tossed with olive oil and Indian seasonings for a great side dish that beats candied yams any day -- healthwise and flavorwise.

4 sweet potatoes
2 teaspoons garam masala
1 teaspoon ground coriander
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
2 tablespoons olive oil

Steps:

  • Peel the sweet potatoes. If they are average size, cut them in half lengthwise. Lay each half flat on the cutting board and cut it into four slices. These should be between 1/4 and 1/2-inch slabs.
  • Put the sweet potatoes in a large mixing bowl. Sprinkle on the seasonings and then pour on the olive oil.
  • Use your clean hands to toss the potatoes with the other ingredients until all is evenly distributed.
  • Set aside and allow the potatoes to marinate for 1/2-hour or more, depending upon the timing of your meal.
  • When you are ready to cook, spray a shallow sheet pan with a light coat of oil to prevent sticking and then pour out the potatoes, distributing them evenly and avoiding any stacking.
  • Place the pan on the middle rack of an oven preheated to 400 degrees Fahrenheit. Bake for about 30 minutes or until the fries are looking crisp. Serve hot.

1 cup mayonnaise
2 cloves garlic, smashed to a paste
1 teaspoon finely grated orange zest
1/2 teaspoon finely grated fresh lemon zest, Meyer lemons, preferred
1 1/2 teaspoons finely chopped fresh thyme leaves
1/4 teaspoon smoked paprika
1 tablespoon honey
Kosher salt and freshly ground black pepper
6 russet potatoes, scrubbed
1/4 cup canola oil

Steps:

  • In a small bowl, whisk together the mayonnaise, garlic, zests, thyme, paprika, honey and season with salt and pepper, to taste. Cover and refrigerate for at least 30 minutes before serving.
  • Put the potatoes in a pot of cold water, add 2 tablespoons of salt and cook over medium heat until the potatoes are tender, but still firm, about 10 minutes. Drain, let cool and cut each potato lengthwise into 8 slices.
  • Heat the grill to medium. Brush the potatoes with the oil and season with salt and pepper, to taste. Grill until golden brown and cooked through, about 2 to 3 minutes per side. Transfer to a serving platter or bowl and serve with the mayonnaise.

1/4 cup plus 2 tablespoons olive oil
3 cloves garlic, smashed
8 (1-inch) thick slices of Italian bread
1 porterhouse steak, about 2 pounds
Salt and freshly ground black pepper
2 vine-ripened tomatoes, diced
3 tablespoons pitted and chopped Nicoise olives
2 tablespoons finely sliced basil
2 tablespoons finely diced red onion
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Salt and freshly ground pepper
Arugula
Toasted Italian bread
Sliced steak
Tomato-Olive Relish
3 tablespoons olive oil
1 large red onion, thinly sliced
1 large red bell pepper, finely diced
1 large yellow bell pepper, finely diced
2 cloves garlic, finely chopped
6 large Yukon Gold potatoes, skin on, parboiled and diced
Salt and freshly ground pepper
1/4 cup finely chopped fresh parsley

Steps:

  • For the Steak: Mix together 1/4 cup of olive oil and the garlic and let rest for 30 minutes. Preheat broiler. Brush both sides of the bread with the garlic oil, place on a baking sheet and broil for 1 to 2 minutes on each side, until lightly golden brown. Heat grill pan over high heat until smoking. Brush steak on both sides with the remaining 2 tablespoons of olive oil and season with salt and pepper to taste. Grill for 4 to 5 minutes until golden brown on 1 side, turn over, reduce heat to medium and continue cooking to medium-rare doneness, 5 to 6 minutes. Remove from heat, let rest 10 minutes and slice into 1/4-inch thick slices.
  • For the Tomato-Black Olive Relish: Combine all ingredients in a bowl.
  • To assemble: Place arugula on 4 slices of toast. Top with several slices of steak and a large spoonful of relish. Top with the remaining bread slices.
  • Skillet Fries: Heat olive oil in a medium cast iron skillet over medium heat. Add onions and cook until soft. Add peppers and garlic and cook for 3 to 4 minutes. Add potatoes and cook until golden brown, season with salt and pepper.

  • Preheat oven to 400 degrees.
  • Combine oil, paprika, cumin, salt, and pepper in a large bowl.
  • Place potato wedges in the bowl and coat with spices.
  • Transfer potato wedges to a large ungreased baking sheet (do not overcrowd).
  • Bake until the potato wedges are golden and crisp (about 40 minutes). Serve immediately!
