Tommy's Chili image

A lot of people have been asking for this recipe and I couldn't think of a better way to share than with y'all. Its really easy to make and makes a lot! This chili is very mild. You can add hotter peppers if you want but this is great for kids too.

2 lb ground round or ground sirloin (the leaner the better)
2 Tbsp olive oil, extra virgin
1 large sweet onion
1 bunch cilantro
2 bottle beer, shiner bock works best
4 clove garlic, chopped
1 juice of one lime
2 Tbsp dried parsley flakes
5 Tbsp mexene chili powder
3 Tbsp cumin, ground
2 can(s) fire roasted tomatoes
1 tsp hickory or pecan liquid smoke. ( i use the pecan)
2 can(s) ranch style beans
2 can(s) chopped green chilies
1 lb colby cheese, cubed
1 bag(s) tortilla chips or scoop corn chips
2 Tbsp sugar
2 Tbsp salt

Steps:

  • 1. Brown your hamburger meat it a large pot in the olive oil. Drain any fat away, if you use really lean meat you don't have to drain at all.
  • 2. Add the entire chopped onion, the garlic and half of the bunch of cilantro, and the lime juice, cook until the onion is done.
  • 3. Add beer, the entire cans of tomatoes, one cans of green chilies, all the remaining spices and bring to a boil.
  • 4. Add both cans of beans and bring to a simmer. After simmering for 15 minutes, add sugar and salt to taste. I usually do not have to add salt and very little sugar, just enough to counter the acidity of the tomatoes.
  • 5. Serve with cubes of cheese, cilantro and extra green chilies.
