"STARBUCKS" OAT FUDGE BARS
I am always tempted to buy these at Starbucks so when a friend brought these to a cookie exchange I was quite excited!

Steps:
- Cream butter, sugar and eggs.
- Mix flour, soda and oats and add slowly to creamed mixture.
- Spread 3/4 of this into 9x13 pan.
- Melt remaining ingredients in a saucepan and pour over dough in pan.
- Blob the remaining oat mixture on top.
- Bake at 350° for 25 minutes.

- Set aside 2 tablespoons of the butter. Beat the remaining butter with a mixer on medium speed for 30 seconds. Add brown sugar; beat until well mixed. Beat in eggs and vanilla. In another large bowl stir together flour and baking soda; stir in oats. Gradually stir dry mixture into beaten mixture. Set aside.
- In a medium saucepan combine the 2 tablespoons butter, the sweetened condensed milk, and chocolate . Cook over low heat until chocolate melts, stirring occasionally. Remove from heat. Stir in vanilla.
- Press two-thirds (about 3-1/3 cups) of the oat mixture into the bottom of an ungreased 15×10x1-inch baking pan. Spread chocolate mixture over the oat mixture. Using your fingers, dot remaining oat mixture over the chocolate.
- Bake in a 350°F oven about 25 minutes or until top is lightly browned (chocolate mixture will still look moist). Cool on a wire rack. Cut into 2×2 inch inch bars.

Steps:
- For base/topping, cream butter, sugar, eggs, and vanilla.
- Mix flour, soda, cinnamon, and oats and add slowly to creamed mixture.
- Spread 2/3 of this into 9x13 pan (it will be a bit thin).
- For fudge filling, melt remaining ingredients in a saucepan and pour over dough in pan.
- Shape the remaining dough into circles and press them into the fudge.
- Bake at 350° for 25 minutes, or until topping is lightly browned.
- Let cool quite a bit before cutting into bars, as it will result in a delicious gooey mess!

PLAN B MOM'S STARBUCKS OAT FUDGE BARS
Steps:
- Pre-heat oven to 350°F. Line a 9-inch x 13-inch baking pan with foil and spray the foil with nonstick cooking spray. With an electric mixer with a paddle attachment, cream 1 cup butter with both sugars and the eggs. In a large bowl, mix the flour, baking soda, salt and oats and add slowly to the creamed mixture. Spread three-quarters of the batter into the prepared pan (I wet my clean hands with water to press down the dough evenly). Reserve the remainder of dough for the topping. Combine the condensed milk, chocolate chips, the remaining 1/2 cup of butter and vanilla in a microwave safe bowl and melt in the microwave, stirring often to prevent scorching. Stir until smooth and pour chocolate mixture over dough in pan. Drop the remainder of the oats dough by spoonfuls on top - press down slightly. Bake for 22-28 minutes, or until a toorhpick comes out with very few moist crumbs. Let cool completely before cutting and serving.

I recently was in Toronto with a few friends and we stopped into a Starbucks, where I was introduced to these oat fudge bars. I had to make my own and they are pretty close to the real thing- actually, I think they're a tiny bit better (sorry, Starbucks)!
