STUFFED ACORN SQUASH SUPREME
Acorn squash is partially cooked in the microwave, then filled with turkey sausage, broccoli, cheese, rice, and apples.

Steps:
- Prepare rice mix according to package directions; cover, and set aside.
- Place squash halves cut side down onto a plate. Cook the squash in a microwave oven for 5 minutes on High, until tender but firm.
- In a medium skillet over medium heat, cook sausage until evenly browned; drain, and set aside.
- In a large bowl, mix together the prepared rice, sausage, apple, and coriander. Stuff each squash half with the mixture.
- Cover stuffed squash halves with plastic wrap, and heat in the microwave until squash is cooked through and soft, about 5 minutes. Remove plastic, and top stuffed squash with cheese. Continue to cook until cheese is melted, about 1 minute.

- Place squash in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until very tender. Drain well in a fine mesh strainer, pressing water out with the back of a large spoon. , Transfer to a large bowl; mash. Stir in the eggs, cheese, mayonnaise, cracker crumbs, onion and dressing mix. , Pour into a greased 1-1/2-qt. baking dish. Sprinkle with bread crumbs and paprika. Drizzle with butter. Bake, uncovered, at 325° for 45-50 minutes or until a thermometer reads 160°.

- 1. Mash cooked squash; add sour cream, soup, carrot, onion, and desired amount of salt and pepper.
- 2. Sprinkle a layer of bread crumbs in a shallow casserole dish(I use a 12 inch square); spoon squash mixture over crumbs.
- 3. Cover with additional crumbs and dot with fresh butter pats. Bake at 350F for 30-45 minutes. Allow to cool 10 minutes before serving.

I was looking for a veggie-based side that was not based on potatoes, rice or noodles. This is a mild, tasty side dish that would pair well with chicken or fish. I got it from my Taste of Home 2006 cookbook.

Steps:
- Cut squash in half length-wise; discard seeds.
- Place one squash half, cut-side-down, on a microwaveable plate.
- Cover and microwave on high 8 minutes or until easily pierced with a fork, turning once.
- Repeat with second squash half.
- When cool enough to handle, scoop out squash , separating strands with a fork; set aside.
- In a skillet, cook bacon and onion until bacon is crisp.
- Using a slotted spoon, remove to paper towels and drain, reserving drippings.
- Add butter, brown sugar, salt and pepper to drippings.
- Stir in squash and bacon; heat through.
- Remove from heat and stir in cheese until just blended.
- Serve immediately.

- In a large bowl slightly beat eggs. Add biscuit mix, oil, salt and pepper. Mix and beat by hand fairly well; batter may be lumpy.
- Add grated cheese and grated zucchini and mix well.
