1 lb small, fresh zucchini
1 lb small, fresh crookneck yellow squash
1 large yellow onion
3 teaspoons margarine
3 teaspoons water
salt and pepper

Steps:

  • Rinse zucchini and squash.
  • Cut into thin slices, discarding stems and bottoms.
  • Slice onion into thin rings.
  • Spray a wok or large, covered frying pan with cooking spray.
  • Melt butter in pan over medium-high heat.
  • Add zucchini, squash and onion.
  • Stir-fry for several minutes, until tender-crisp.
  • Season with salt and pepper, to taste.
  • Add 3 T water and cover.
  • Reduce heat and simmer for 6-8 minutes or until mixture meets your criteria for doneness (We like ours slightly soft, others may prefer either crisp or very soft).

1 tablespoon olive oil, or as needed
3 cloves garlic, minced
1 yellow squash, cut into bite-size cubes
1 zucchini, cut into bite-size cubes
1 (12 ounce) package extra-firm tofu, cut into bite-size cubes
¼ cup brown sugar
3 tablespoons soy sauce
1 tablespoon sriracha sauce
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large skillet or wok over medium-high heat. Cook and stir garlic in hot oil until just fragrant, about 30 seconds. Add squash and zucchini, cook and stir until vegetables soften, about 7 minutes. Transfer squash mixture to a bowl.
  • Place skillet back over medium-high heat, place tofu pieces in the skillet, and top with brown sugar and soy sauce. Cook and stir until each side of tofu is golden brown, 3 to 5 minutes.
  • Return squash mixture to the skillet; cook and stir until heated through, about 3 minutes. Stir in Sriracha sauce and season with salt and black pepper.

1 pound pork shoulder, cut into thin bite-size pieces or shredded
1 pound peeled winter squash, julienned

2 tablespoons soy sauce
Minced scallions, chives or cilantro for garnish, optional

Steps:

  • Put half the oil in a heavy skillet or wok and turn heat to high. When hot, add pork and cook, stirring once or twice, until browned; don't worry about cooking it through. Remove with a slotted spoon.
  • Add remaining oil, followed a moment later by squash. Cook, stirring occasionally, for about 2 minutes. Add ginger and scallions and stir; add stock and cook until it reduces by about half. Add soy sauce and cook 30 seconds or so.

2 tablespoons butter
1 tablespoon olive oil
1/2 butternut squash, peeled, seeded and diced.
1/2 teaspoon kosher salt
1/4 teaspoon chile powder (more to taste)
Freshly ground black pepper
1 bunch kale, leaves torn, stalks discarded

Steps:

  • Heat 1 tablespoon of the butter and the olive oil in a large skillet over high heat. Add the squash and sprinkle with the salt, chile powder and pepper. Cook for several minutes, turning gently with a spatula, until the squash is deep golden brown and tender (but not falling apart). Remove to a plate and set aside.
  • In the same skillet, melt the remaining 1 tablespoon butter over medium-high heat and add in the kale. Toss it around with tongs and cook it for 3 to 4 minutes. Add in the cooked squash and gently toss together.

1 medium zucchini
1/2 cup red bell pepper, cut into chunks
1 1/4 cups shredded carrots
2 tablespoons oil (I use new Enova oil, or vegetable oil)

1/2 teaspoon minced ginger
soy sauce, to taste
red pepper flakes, to taste

Steps:

  • Wash squash and zucchini and cut in half.

  • When oil is hot add red pepper.
  • Cook about 3 minutes.

  • Add carrots and cook at least 2 minutes more until carrots are how you prefer.

2 tablespoons canola oil
½ teaspoon kosher salt, divided
1 tablespoon cornstarch
1 tablespoon cold water
3 cloves garlic
1 fresh ginger, peeled and minced (2 in piece 5 cm)
¼ teaspoon red pepper flakes
⅓ cup soy sauce
1 tablespoon honey, or granulated sugar
1 tablespoon sesame oil
1 tablespoon rice vinegar
¼ cup water
2 tablespoons canola oil, divided
2 cloves garlic, thinly sliced, divided
1 lb boneless, skinless chicken breast, or thighs, cut into 1-inch (2.5 cm) cubes

Steps:

  • Preheat the oven to 400°F (200°C).
  • Place the squash halves, cut-side up, on a baking sheet. Coat the exposed flesh with the canola oil, then sprinkle with ¼ teaspoon salt. Flip over so the cut side is down, then bake for 40-50 minutes, until the squash is just barely tender when pierced with a fork. Remove from the oven and let cool slightly.
  • Line a baking sheet with 2 clean kitchen towels.
  • Use a fork to scrape out the "spaghetti" strands from the squash onto the prepared baking sheet and season with the remaining ¼ teaspoon salt, tossing to distribute. Let cool for 30 minutes. The spaghetti squash can be made ahead and stored in the refrigerator in an airtight container for up to 2 days. If using from the cold, remove the squash from the refrigerator 30 minutes before cooking.
  • While the squash is cooling, make the sauce: In a medium bowl, whisk together the cornstarch and cold water until smooth. Grate the garlic on a microplane directly into the bowl. Add the ginger, red pepper flakes, soy sauce, honey, sesame oil, and rice vinegar and stir to incorporate. Whisk in the water until smooth.
  • Make the stir fry: Heat 1 tablespoon canola oil in a 12-inch skillet or wok over medium-high heat. Add 1 clove of garlic and stir for about 30 seconds, until fragrant. Add the chicken, ⅛ teaspoon red pepper flakes, and ½ teaspoon salt and stir to coat. Cook the chicken for 6-8 minutes, letting it brown without stirring, until no pink remains and the chicken is cooked through. Transfer the chicken to a plate or bowl.
  • Reduce the heat to medium. Without wiping out the pan, add the remaining tablespoon canola oil, remaining garlic clove, and remaining ⅛ teaspoon red pepper flakes and cook for 30 seconds, until fragrant. Add the bell peppers and broccoli, stir to coat, then deglaze the pan with the water, scraping up all the browned bits stuck to the bottom of the pan. Cook, stirring occasionally, until the broccoli is starting to soften, 8-10 minutes.
  • Add the carrots and cook for another 2 minutes, then add the snow peas and season with a pinch of salt. Cook for another 2-3 minutes, until all of the vegetables are tender. Transfer the vegetables to the plate with the chicken.
  • Roll up the spaghetti squash in the kitchen towels and wring to squeeze as much water as possible.
  • Add 2 tablespoons of sauce to the pan and let come to a simmer, then add the spaghetti squash and stir constantly until heated through, 1-2 minutes. Divide the squash among serving bowls.
  • Pour the remaining sauce into the pan and let simmer for about 1 minute, until thickened. Return the chicken and vegetables to the pan and toss to coat evenly in the sauce and heat everything through, 2-3 minutes. Divide among the bowls atop the squash. Garnish each bowl with thinly sliced scallions. Serve immediately.

2 small summer squash, seeds removed and cut into a 3/4-inch dice (about 1 1/2 cups)
8 to 10 small cherry tomatoes, mixed colors
1/3 cup loosely packed fresh basil leaves
Rice, for serving

Steps:

  • Combine 2 tablespoons olive oil, lemon juice, thyme, 1/4 teaspoon salt, pepper, and red pepper in a large bowl. Add the chicken or turkey and toss. Marinate 15 minutes.
  • Drain the meat and pat very dry. Heat a wok or large skillet over high heat. Add the remaining 2 tablespoons oil to the pan. Add the chicken and stir-fry until opaque and firm, about 4 minutes. Use a slotted spoon to transfer to a large bowl. Add the onion and pepper to the pan and stir-fry, until softened, 1 to 2 minutes. Add to the chicken. Add the squash to the pan, and stir-fry until tender-crisp, about 2 minutes. Add to the chicken. Add the tomatoes and garlic to the pan and stir-fry until glazed and slightly charred, about 2 minutes longer. Return the chicken and vegetables to the pan. Season with salt and pepper. Heat until warmed through, about 2 minutes. Add the basil and toss to combine. Serve with rice.

This is a great way to use this healthy squash. Chef's note 9/13: I just changed it up and it worked perfectly. I used the squash as directed and added more carrots (I didn't have bell peppers). I used the broth and soy sauce as well as a heaping tablespoon of spicy black bean sauce. It was so tasty, I put it under a chicken and broccoli stir fry and I didn't need any rice.

  • Stir-fry garlic and basil, oregano or Italian Seasoning in hot cooking oil or butter for 15 seconds.
  • Add carrot and stir-fry for 1 minute.
  • Add zucchini and/ or yellow squash and stir-fry for 2 1/2 minutes.
  • Add leeks or green onions and stir-fry about 1 1/2 minutes more or until vegetables are crisp-tender.
  • Option: Sprinkle with parmesan or Romano cheese; toss gently.

Summer Squash Stir-Fry with Beef image

Number Of Ingredients 14

1 STIR-FRY
1 pound grass-fed sirloin steak, sliced thin
1 large onion, sliced
1 yellow summer squash, cut in half lengthwise and sliced
1 red or orange bell pepper, sliced
1 sesame oil
1 pinch sea salt and black pepper
3 scallions, sliced, for garnish
1 SAUCE
1 cup coconut aminos
2 tablespoon real maple syrup
1 juice of lime
2 garlic cloves, minced
1 beef BOU cube

Steps:

  • Place the steak, onion, squash and pepper into a large bowl. Toss well with tongs.
  • In a small pot, combine all sauce ingredients, Heat gently over low heat while whisking, until BOU is completely dissolved. Pour sauce into liquid measuring cup. Set aside.
  • Heat 1 tablespoon of oil in a wok over medium-high heat. Add 1/4 of the stir fry mixture along with a pinch of salt and pepper. Cook, stirring constantly, for 3 minutes.
  • Briefly stir the sauce to distribute the garlic, then add 1/4 of the sauce to the wok. Continue cooking and stirring for 2 more minutes.
  • Remove stir-fry from pan. Repeat steps 4-6 three more times.
  • Garnish with scallions and serve.

2 tbsp extra virgin olive oil
8 ounces italian sausage-rolled into 1 inch meatballs
3 garlic cloves, chopped
1 small red onion, sliced
1 small red bell pepper, sliced
1 lb yellow squash, cut
1 lb zucchini squash, cut
1 tsp all purpose seasoning salt
1/2 tsp crushed red pepper flakes

Steps:

  • 1. Add oil to large skillet. Fry meatballs until golden brown. Transfer garlic, onion, bell pepper to skillet. Stir-fry for 2 minutes. Add squash, parsley, seasoning salt and pepper flakes to skillet.
  • 2. Cook for 8-10 minutes or until squash is fork tender. Do not overcook.
  • 3. Adjust seasoning to taste.

I made up this recipe with some leftovers in the fridge, and my husband loves it! Its really quite easy to make. It does take awhile to let the squash cook though, so think ahead if you plan on making it.

1 spaghetti squash (small or medium sized)
8 Brussels sprouts, halved
5 ounces carrots, matchstick cut
1/2 cup mushroom, chopped (I use shiitake mushrooms)
1/2 cup zucchini, chopped
1/4 teaspoon browning sauce (I use Gravy Master seasoning and browning sauce)
1/4 cup water
1/3 cup parmesan cheese, shredded
3 tablespoons butter (or margarine)

Steps:

  • Preheat oven to 375°F.
  • Pierce the rind of the squash, and place it on a foil-covered cookie sheet
  • Cook the pierced squash in the oven for about 1 hour.
  • Start cooking the veggies about 20 minutes before squash is done cooking
  • In a large skillet on medium heat, melt one tablespoon of the butter and saute the Brussels sprouts, carrots, zucchini, and mushrooms. Saute vegetables until the zucchini is soft, about 20 minutes.
  • Take the squash out and set it aside for about fifteen minutes.
  • Mix the browning sauce with the water and pour into the skillet with the veggies and stir it inches Let skillet set on very low heat while you prepare the squash.
  • Cut squash in half, remove and dispose of the seeds and the stringy stuff attached to the seeds. Then take a fork and scrape out the "spaghetti" from the squash and put it into the skillet with the veggies.
  • Add the rest of the butter and the parmesan. Stir until the butter and parmesan are melted.
  • Serve immediately. Add salt and pepper if desired.

1 (2 lb) butternut squash, peeled and cut into 1/2-inch cubes
2 tablespoons peanut oil
2 tablespoons coarsely grated orange rind
1 tablespoon minced peeled fresh ginger
1/2 teaspoon crushed red pepper flakes
1 (3 inch) cinnamon sticks, broken
1 1/4 lbs pork tenderloin, trimmed and cut into 2-inch strips
2 tablespoons sugar
3 tablespoons low sodium soy sauce
2 tablespoons chinese black vinegar
2 tablespoons red wine vinegar
1 teaspoon cornstarch
1/4 teaspoon salt
1 cup chopped green onion

Steps:

  • Place squash in a large microwave-safe bowl. Add water to a depth of 1 inch. Cover with plastic wrap; vent. Microwave at high 8 minutes or until tender. Drain and set aside.
  • Heat oil in a large nonstick skillet over medium heat. Add rind, ginger, red pepper, and cinnamon stick pieces; cook 1 minute, stirring constantly. Remove and discard cinnamon stick pieces.
  • Increase heat to medium-high. Add pork to pan, and sauté 4 minutes or until browned. Combine sugar and next 5 ingredients (through salt), stirring with a whisk. Add sugar mixture to pan; cook 2 minutes or until sauce is slightly thickened, stirring constantly. Add squash; toss to coat. Stir in green onions.
