6 brown bread slices
3/4 cup sprouted mixed beans
1/2 omato finely chopped
1/2 bell pepper finely chopped
1 small onion finely chopped
2 tablespoon softened butter
Pepper powder
chaat masala powder
Salt

Steps:

  • Measure ans rinse the sprouted beans well. Pressure cook with salt until soft,drain and mash coarsely.
  • Finely chop onions,tomatoes and green bell pepper. Sprinkle little salt, pepper powder and chaat masala powder and mix well.
  • Remove the edges from the bread. Take one bread slice and apply softened butter and spread the mashed sprouted beans. Top with chopped and mixed veggies and close with the other bread slice. Apply some butter on the top of the bread again.
  • Toast the prepared sandwich in a sandwich maker or tava until golden brown. Serve sprouts sandwich hot with sauce.

Turkey Sandwiches with Brussels Sprout Slaw image

12 ounces Brussels sprouts, trimmed
3/4 cup good mayonnaise, such as Hellmann's, plus extra for spreading
2 tablespoons whole-grain mustard
1 tablespoon good Dijon mustard
1 tablespoon apple cider vinegar
Kosher salt and freshly ground black pepper
6 individual or 2 large ciabatta breads, halved and toasted
3/4 pound sliced turkey breast

Steps:

  • Set up a food processor with the slicing disk and process the Brussels sprouts through the feed tube. (You don't need to remove the cores of the sprouts.) Transfer to a large bowl.
  • In a medium bowl, whisk together the mayonnaise, whole-grain mustard, Dijon mustard, vinegar, 1 teaspoon salt, and 1/2 teaspoon pepper. Add the mayonnaise mixture to the sprouts and toss well.
  • Place the ciabatta halves, cut sides up, on a cutting board. Spread a thin layer of mayonnaise over each half. Place a layer of turkey on the bottom halves, pile some of the slaw on top, and place a second layer of turkey on top of the slaw. Sprinkle generously with salt and pepper. Cover with the top halves of the breads, cut sides down. Serve the individual ciabattas cut in half or cut the large ciabattas in thirds and serve.

Assorted vegetables, such as cucumbers, red onions, lettuce, carrots, and radishes
2 ripe but firm avocados, halved, pitted, and peeled
12 slices whole-grain bread, toasted
4 ounces alfalfa, clover, or garbanzo sprouts
8 ounces fresh goat cheese, room temperature
Olive oil, for drizzling
Kosher salt and freshly ground pepper

Steps:

  • Slice vegetables into thin rounds or matchsticks, as desired; tear lettuce and slice avocados. Dividing evenly, layer vegetables on 8 toast slices. Top with sprouts. Spread goat cheese on remaining 4 toast slices; then drizzle with oil, and sprinkle with salt and pepper.
  • Stack sandwiches so that each has two layers of vegetables and one of cheese (cheese side down). Cut in half and serve.

½ avocado, mashed

Steps:

  • Spread each slice of bread with 1 tablespoon cream cheese. On one slice of bread, arrange cucumber slices in a single layer. Cover with sprouts, then sprinkle with oil and vinegar. Layer tomato slices, lettuce, and pepperoncini. Spread other slice of bread with mashed avocado. Close sandwich and serve immediately.
