1/2 cup olive oil
1/3 cup red wine vinegar
2 tablespoons minced fresh tarragon or 2 teaspoons dried tarragon
1 teaspoon Dijon mustard
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon minced chives
1/2 teaspoon minced fresh parsley
Salad greens

Steps:

  • In a jar with a tight-fitting lid, combine the first 9 ingredients; shake well. Serve over salad greens.

Outstandingly delicious salad with sardines and asparagus. Of course you can always substitute the sardines with your own fish of choice.

2 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
1 teaspoon whole grain mustard
1/4 teaspoon dried tarragon
1 pinch salt
1 pinch ground black pepper
1 garlic clove, crushed
1/2 bunch asparagus
2 large hard-boiled eggs
5 ounces mixed salad greens
20 cherry tomatoes
4 ounces sardines, drained
12 black olives

Steps:

  • Whisk vinegar, oil, mustard, tarragon, salt and pepper in a small bowl. Add garlic and set aside.
  • Cook asparagus until tender crisp. This depends on the size of the asparagus. If you are using thin asparagus this should only take about 3 minutes.
  • Slice eggs.
  • Divide salad greens between 2 plates.
  • Top with eggs, asparagus, tomatoes, sardines and olives.
  • Remove the garlic from the dressing and drizzle over the salads.

TARRAGON POTATO SALAD

2 pounds medium Yukon Gold potatoes (6 to 8 potatoes)
Kosher salt
1 cup good mayonnaise
2 tablespoons freshly squeezed lemon juice
2 tablespoons tarragon or white wine vinegar
1 teaspoon freshly ground black pepper
3 tablespoons chopped scallions, white and green parts
3 tablespoons minced red onion
2 tablespoons minced fresh tarragon leaves
2 tablespoons minced fresh dill

Steps:

  • Place the potatoes in a pot with enough water to cover them. Add 1 tablespoon of salt, bring to a boil, and simmer for 15 to 30 minutes, depending on the size of the potatoes, just until tender when pierced with a small knife or skewer. Drain in a colander. Put a kitchen towel over the colander and allow the potatoes to steam for 10 minutes. When cool enough to handle, peel the potatoes and slice 1/2 inch thick. Place the potatoes in a mixing bowl. Meanwhile, combine the mayonnaise, lemon juice, vinegar, 2 teaspoons salt, and the pepper. While the potatoes are still warm, pour the dressing over the potatoes and toss well. Add the scallions, red onion, tarragon, and dill and toss gently. Allow the salad to sit for at least 30 minutes for the flavors to develop. Sprinkle with salt and serve at room temperature.

1/2 pound Romano or green beans, cut into 1-inch lengths, blanched until tender and chilled
1/2 pound Yellow wax beans, prepared as above for green beans
1/2 pound fresh soybeans, blanched and chilled
2 pounds fresh fava beans, shelled and cooked until tender
1 can garbanzo beans, drained and rinsed
3 bunches green onion, cleaned and finely minced
1 large red onion, peeled and finely diced
4 stalks celery, finely diced
1 large yellow bell pepper, finely diced
1/4 cup finely chopped fresh tarragon
1 bottle dry white wine (Chardonnay, etc.)
Stems of 1 bunch tarragon (save leaves for the salad)
3 shallots, peeled and finely minced
2 lemons, zested and juiced, finely chop the zest and set the juice aside
2 tablespoons rice vinegar (unseasoned)
1 to 1/2 cups pure olive oil
Salt and pepper

Steps:

  • Combine the first 10 ingredients in a large mixing bowl. Set aside while you make the vinaigrette using the remaining ingredients.
  • Place the wine in a saucepan with the tarragon stems and reduce over medium-high heat to 1-cup liquid. Immediately pour the hot, reduced wine over the chopped shallots and lemon zest in a medium-sized bowl. Let sit together and cool to room temperature (or place in refrigerator to speed up process). Remove the tarragon stems and discard. Whisk in the lemon juice and rice vinegar. Continue whisking, drizzling in the olive oil, tasting as you go. Season with salt and pepper as needed, and add a bit more lemon juice or rice vinegar if more acidity is desired.

I learned to make this salad thirty years ago from my mother-in-law, who was born and raised in Paris. This is the best salad/dressing I've ever tasted and is always requested by friends and family.

1 large bunch of variety leaf lettuce
3 shallots (minced)
3 garlic cloves (minced, or 1/2 tsp garlic powder)
3 tablespoons tarragon vinegar
4 tablespoons vegetable oil
1 teaspoon salt
pepper (to taste)

Steps:

  • Rinse and spin-dry lettuce, set aside.
  • In large bowl, mix remaining ingredients. Add lettuce on top and place in refrigerator.
  • Toss well before serving and top with croutons and/or cheese sprinkles, if desired.
  • A few tips: You may want to add more or less salt, depending on how much lettuce you are using.
  • You can also use 1/4 chopped onion in place of the shallots - shallots have a milder, sweeter taste that truly compliments the dressing but vidalia or purple onion would be a good substitute.
  • You can also add radishes, chopped kale, and raw spinach greens to the lettuce before tossing.
