HOT SPICED APPLE CIDER

4 cups fresh apple cider
4 whole black peppercorns
6 or 7 (2 to 3-inch) cinnamon sticks
3 whole dried cloves
1 star anise
1 navel orange
Good bourbon, such as Maker's Mark (optional)
1 crisp red apple

Steps:

  • Place the apple cider, peppercorns, one of the cinnamon sticks, the cloves, and the star anise in a medium saucepan. Cut a large (1 by 4-inch) peel from the orange using a vegetable peeler and add it to the pan. Bring the cider mixture to a boil, lower the heat, and simmer for 5 minutes. Strain into a 4-cup glass measuring cup and discard the solids.
  • Pour the hot cider into mugs or heatproof glasses. Add 2 tablespoons of bourbon to each mug. Cut the orange in half through the stem, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each mug. Cut the apple in half through the stem, remove the core, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each glass.
  • Serve hot with a cinnamon stick in each glass for stirring.

My notes say this recipe was gleaned from a number of sources, so I don't know who to give all the credit to. Whoever it is, I think perhaps a sainthood might be in order. Yep, this spiced cider batter is that heavenly! The use of brown sugar adds a wonderful depth and touch of molasses, and the butter adds...well, butter! And though the batter itself is non-alcoholic, I'm sure a shot of rum or good brandy added to your mug would be just fine.

2 cup(s) (about 1 pound) dark brown sugar (light brown sugar will do, but it won't be quite as rich)
1/2 cup(s) salted butter, softened and cut into tablespoon-sized chunks
1 teaspoon(s) ground cinnamon (the good kind!)
1/2 teaspoon(s) ground cloves
1/4 teaspoon(s) ground nutmeg (freshly ground, right?)
OPTIONAL GARNISHES:
- cinnamon sticks
- whipped cream (perhaps with a little drizzle of homemade caramel sauce?)

Steps:

  • In the bowl of a food processor, pulse together the brown sugar and butter until they are nearly combined. Add in the cinnamon, cloves and nutmeg and pulse to thoroughly mix. Place the batter in an airtight container and refrigerate it until it has slightly hardened, about 3 hours. It will keep for at least a week in the refrigerator or for a short eon in the freezer.
  • To serve, place 1 heaping Tablespoon of the batter into a mug and fill the mug with simmering apple cider. That is CIDER, folks, not apple JUICE! Garnish.

CRISPY CIDER-BATTERED CHICKEN FINGERS

Believe it or not, the best beer batter isn't made with beer! It's actually done with sparkling apple cider, which produces a light, beautifully crispy, and very flavorful coating. Not to mention it's super easy.

4 (8 ounce) skinless, boneless chicken breast halves
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper
2 tablespoons all-purpose flour
1 cup self-rising flour
1 ¼ cups sparkling apple cider
1 quart canola oil for frying
⅓ cup Dijon mustard
2 tablespoons seasoned rice vinegar
1 teaspoon hot sauce
1 pinch white sugar, or to taste

Steps:

  • Cut each chicken breast into 6 finger-sized strips, and transfer into a mixing bowl.
  • Season with kosher salt, black pepper, and cayenne and toss until evenly coated. Sprinkle the all-purpose flour over top and shake the bowl to coat the strips. Toss until all the surfaces are completely coated, and then transfer onto a rack or plate. Place in the refrigerator, uncovered, for at least 10 minutes, or until ready to fry.
  • Meanwhile, whisk self-rising flour and sparkling apple cider together in a mixing bowl to form a thin batter. Batter should be somewhere between a thin pancake batter and a crepe batter, but still thick enough to coat the back of a spoon. Place in the refrigerator to rest for 5 to 10 minutes before using.
  • Mix Dijon mustard, vinegar, hot sauce, and sugar together for dipping sauce in a bowl.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Dip each chicken finger into the batter to coat. Deep-fry in batches in the hot oil until golden brown, crispy, and no longer pink in the centers, 3 to 4 1/2 minutes. Drain on paper towels and serve immediately with dipping sauce.

1/2 c vegetable oil
1/2 c apple sauce
2 large eggs at room temperature
2 c (14 ounces) granulated white sugar (12 ounces above 6,000 feet)
4 Tbsp unsalted butter, melted and slightly cooled
2 tsp vanilla extract
3 medium granny smith apples
1 c chopped pecans
3 c (14 3/8 ounces) all purpose flour (15 1/2 ounces above 6,000 feet)
1 tsp kosher salt
1 tsp baking soda
1 tsp ground cinnamon

Steps:

  • 1. Adjust an oven rack to the center position and preheat the oven to 350°(365º above 6,000 feet). Lightly grease a 12-inch cast-iron skillet or (if you must) a 9"x13"x2" pan.
  • 2. In a medium bowl, whisk together the oil, apple sauce, melted butter, eggs, sugar, and vanilla. Peel, core and finely (≈3/8") chop the apples, stirring them in as you go. Stir in the pecans.
  • 3. In a large mixing bowl, whisk together the flour, salt, baking soda, and cinnamon until everything is well combined. Make a "well" in center of these dry ingredients. Pour the wet ingredients into the well. Using a spatula or wooden spoon, fold the dry and wet ingredients together just until the flour is dampened. You will find this to be a very thick batter, In fact it's more like a cookie batter. And while it may seem like there are way too many apple pieces, but it all works out in the end.
  • 4. Turn the batter into your prepared skillet or baking pan, patting down the top so it's even. Bake for 40-45 minutes until the top is lightly browned and an inserted knife comes out almost clean.
  • 5. Let the cake cool in the pan on a cooling rack for 30 minutes before serving. Think seriously about serving this cake with a scoop of vanilla bean ice cream and/or cinnamon spiced whipped cream.
