I lovingly adopted this recipe from Zaar. After making it I adjusted the ingredients a bit to give it more flavor and appeal. It is an easy meal to put together and tastes pretty good as well. I served it with buttered egg noodles and steamed broccoli. Everyone enjoyed it.... Happy Cooking!

2 lbs lean ground beef
8 teaspoons dehydrated onion
2 teaspoons beef bouillon powder
1 teaspoon onion powder
1/2 teaspoon parsley
1 1/2-2 teaspoons brown sugar
1/2 teaspoon garlic powder
1/2 cup quick-cooking oats
1/2 cup water
1/2 cup sour cream
2 large eggs, beaten
1/4 cup parmesan cheese, grated

Steps:

  • Brown meat in a large skillet.
  • Drain off the excess fat.
  • Stir in next 8 ingredients.
  • Cover and simmer for about 5 minutes, stirring occasionally.
  • Stir in the sour cream and eggs.
  • Spread the mixture evenly in an oven proof skillet or baking dish and then sprinkle the cheese over the top. Set under broiler until cheese turns a lovely color.
  • Serve with catsup, if desired.

This is a recipe that I have fine tuned for our family. The easiest -- and one of the best tasting!

2 ½ pounds ground beef
3 eggs, beaten
1 (6 ounce) package herb-seasoned dry bread stuffing mix
1 cup hickory smoke flavored barbeque sauce
1 onion, finely chopped
1 teaspoon minced garlic
½ cup milk
1 cup barbeque sauce
1 cup packed brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large mixing bowl, combine the ground beef, eggs, stuffing mix, hickory smoke flavored barbeque sauce, onion, garlic and milk. Mix thoroughly and place into the prepared baking dish. Shape into 2 loaves.
  • In a small bowl, combine the barbeque sauce and brown sugar; blend well. Pour the glaze over the 2 meatloaves.
  • Cover the baking dish and bake in the preheated oven for 60 to 90 minutes. Uncover the last 15 minutes of bake time. Let sit for 15 minutes before slicing.

1 ½ pounds ground beef
1 small onion, chopped
¾ cup chicken-flavored bread stuffing mix (such as Kraft® Stove Top®)
1 egg
1 cup shredded mozzarella cheese, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease one 9x5-inch loaf pan with cooking spray.
  • Mix beef, onion, stuffing mix, and egg by hand in a bowl. Press beef mixture into prepared pan.
  • Bake in the preheated oven until no longer pink in the center, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Top meatloaf with shredded mozzarella cheese and let rest while cheese melts, about 10 minutes.
