1 pound smoked kielbasa
1 pound dried split peas
6 cups water
1 cup chopped carrots
1 cup chopped onion
1 cup chopped celery
1 tablespoon minced fresh parsley
1 teaspoon salt
1/2 teaspoon coarse black pepper
2 bay leaves

Steps:

  • Cut sausage in half lengthwise; cut into 1/4-in. pieces. Place in a Dutch oven or stockpot; add remaining ingredients. Bring to a boil. Reduce heat; cover and simmer 1-1/4 to 1-1/2 hours or until peas are tender. Remove bay leaves.

1/2 lb sausage, ground
1 cup celery, chopped
1/2 cup onions, diced
16 oz split peas, 1 lb, dry
4 cups chicken broth
2 cups water
1 cup carrots, chopped
1 teaspoon salt
1 teaspoon thyme
1/2 teaspoon pepper
2 bay leaves

Steps:

  • Place sausage, onions and celery in a large stock pot and heat on medium to brown sausage.
  • Add split peas, broth, water, carrots and spices. Heat on medium-high heat until boiling.
  • Reduce heat to simmer and cover, 2 hours. Stir occasionally.
  • Remove bay leaves and discard before serving.

2 celery ribs, thinly sliced
1 medium onion, chopped
1 package (16 ounces) dried green split peas
9 cups water, divided
1 package (14 ounces) smoked turkey kielbasa, halved and sliced
4 medium carrots, halved and thinly sliced
2 medium potatoes, peeled and cubed
1 tablespoon minced fresh parsley
1 teaspoon dried basil
1-1/2 teaspoons salt
1/2 teaspoon pepper

Steps:

  • In a Dutch oven coated with cooking spray, cook celery and onion until tender. Stir in split peas and 6 cups water. Bring to a boil. Reduce heat; cover and simmer for 25 minutes. , Stir in the kielbasa, carrots, potatoes, parsley, basil, salt, pepper and remaining water. Return to a boil. Reduce heat; cover and simmer for 20-25 minutes or until peas and vegetables are tender.

10 cups water
1 pound smoked sausage of your choice, sliced
5 cubes chicken bouillon
1 ½ cups chopped carrot
1 cup chopped celery
2 potatoes, peeled and chopped
½ teaspoon garlic powder
½ teaspoon dried oregano
2 bay leaves
1 onion, chopped

Steps:

  • In a 5 quart slow cooker, combine the peas, water, sausage, bouillon, carrot, celery, potatoes, garlic powder, oregano, bay leaves, and onion.

3 cups chicken broth

1/2 cup chopped fresh parsley, plus 8 to 10 parsley stems
4 sprigs thyme
1 pound green split peas, picked over and rinsed
1 large leek, white and light green part only, halved lengthwise and thinly sliced crosswise
2 stalks celery, chopped
2 carrots, chopped
Kosher salt and freshly ground pepper
1 smoked turkey leg (1 to 1 1/2 pounds)
1/4 cup nonfat plain yogurt
1/2 cup frozen peas, thawed
Crusty multigrain bread, for serving (optional)

Steps:

  • Tie the parsley stems and thyme together with kitchen string and place in a 6-quart slow cooker. Add the split peas, leek, celery, carrots, 1 teaspoon salt and 1/2 teaspoon pepper; stir to combine. Add the turkey leg and 7 cups water. Cover and cook on low until the split peas and meat are tender, 6 to 8 hours.
  • Discard the herb bundle. Discard the skin and bones from the turkey leg and shred the meat. Vigorously stir the soup to break up the peas and make the soup smoother. Thin with water, if desired. Stir in the chopped parsley and about three-quarters of the turkey meat; season with salt and pepper.
  • Ladle the soup into bowls. Thin the yogurt with a little water, then spoon onto the soup. Top with the thawed peas and the remaining turkey. Serve with bread, if desired.

1 cup chopped yellow onions
2 cloves garlic, minced
1/8 cup good olive oil
1/2 teaspoon dried oregano
1-1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 cups medium-diced carrots (3 to 4 carrots)
1 cup medium-diced red boiling potatoes, unpeeled (3 small)
1 pound dried split green peas
8 cups chicken stock or water

Steps:

  • In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot.

3/4 cup finely chopped celery

1 egg
1 pound ground pork

Steps:

  • In a Dutch oven or soup kettle, combine peas, carrots, celery, onion and water; bring to a boil over medium heat. Reduce heat; cover and simmer for 1 hour. , Add potatoes, salt and pepper; cover and simmer for 30 minutes., Meanwhile, in a large skillet, saute celery and onion in 2 tablespoons oil until tender; transfer to a large bowl. Add bread crumbs, water, salt, sage and egg; crumble pork over mixture and mix well. Form into 3/4-in. balls. , In the same skillet, brown meatballs in remaining oil until a thermometer reads 160°. Add to soup; cover and simmer for 15 minutes.

1 large onion, chopped
1 cup chopped fennel bulb

3 cups water
4 bay leaves
1 tablespoon reduced-sodium beef base
2 teaspoons Italian seasoning
1/2 teaspoon pepper
2 cans (15 ounces each) cannellini beans, rinsed and drained
Shaved Parmesan cheese, optional

Steps:

  • In a Dutch oven, cook sausage, onion, fennel and celery root over medium heat 4-5 minutes or until sausage is no longer pink, breaking into crumbles; drain.
