This is a hearty recipe from my mother-in-law! Make sure you drain and dry everything well. These are heavy ingredients and you want to keep it as light as possible so it will hang together.

2 cups dry spinach leaves, torn
1 -2 cup of shredded lettuce or 1 -2 cup the crispy part romaine lettuce
5 crisp bacon, slices broken into pieces
10 ounces , washed drained, and dry small curd cottage cheese
1 red onion, sliced
3/4 cup shredded swiss cheese
1 (8 ounce) can of mandarian oranges (well drained)
sliced mushrooms (optional)
1 (16 ounce) bottle poppy seed dressing

Steps:

  • Toss together spinach, lettuce, bacon, cottage cheese, onion, swiss cheese, oranges, and mushrooms.
  • Toss with dressing. Add as little or as much dressing as to taste.

4 cups baby spinach leaves
1 (11 ounce) can mandarin oranges, drained
1 (6 ounce) can sliced water chestnuts, drained
1/2 cup mayonnaise
1/2 cup plain yogurt
3 tablespoons poppy seeds
4 tablespoons honey

Steps:

  • Make your dressing first:.
  • Add equal parts yogurt, mayonnaise and mix well.
  • Add the honey and mix inches Adjust this to your tastes. It is generally lightly sweet and rounds out the flavors of the mayo and yogurt.
  • Add the poppy seeds, mix in (if you don't have seeds, don't sweat it, they give a bit of texture but I have wanted this salad and run out and it is fine without it -- )
  • Salad:
  • Either mix the spinach, sliced water chestnuts and mandarin oranges, or make this directly on the plate. I usually break the water chestnuts because about a 1/2 slice and one mandarin orange plus a fork full of spinach leaves seems to be about perfect.
  • Top with the dressing.
  • See! Isn't that easy? Five minutes!

This is a wonderful and refreshing salad that I got from Best of Bridge. I played around with it a bit and added a few other fresh fruits to it. This is yummy and great to offset a very rich main dish, such as my Death to Dieter's Lasagna.

1 bunch fresh spinach
2 pints sliced fresh strawberries, cut into thirds
1 (4 ounce) can mandarin orange sections, drained, reserving 2 tsp of the juice for the dressing
1 fresh kiwi, sliced in quarters
1/3 cup white sugar
1/2 cup light oil
1/4 cup white vinegar
2 tablespoons sesame seeds
3 tablespoons poppy seeds
1/4 teaspoon paprika
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons minced onions

Steps:

  • Combine all dressing ingredients, mix well and refrigerate.
  • Make well ahead to allow flavors to blend.
  • Taste dressing and adjust sugar/vinegar for your sweet/tart taste preferences.
  • Tear fresh spinach into bite sized pieces, wash and pat dry.
  • Wash strawberries, drain, pat dry and cut in thirds.
  • Shake dressing container well and toss with spinach, strawberries, kiwi and mandarin orange sections just before serving, otherwise the spinach will wilt.
  • This makes a wonderfully tart, slightly sweet and very colorful salad!

6 slices bacon
⅓ cup apple cider vinegar
¾ cup white sugar
½ red onion, coarsely chopped
½ teaspoon dry mustard powder
¼ teaspoon salt
½ cup vegetable oil
1 teaspoon poppy seeds
10 cups torn romaine lettuce leaves
1 (10 ounce) can mandarin orange segments, drained
¼ cup toasted slivered almonds

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place vinegar, sugar, red onion, mustard powder, and salt into the bowl of a blender. Cover, and puree on high until smooth. Reduce blender speed to medium-low; slowly pour in the vegetable oil and blend until incorporated and the dressing is creamy. Stir in the poppy seeds and set aside.
  • To serve, toss the romaine in a large bowl with the crumbled bacon, Mandarin oranges, and enough dressing to moisten. Place onto salad plates and sprinkle with toasted almonds.

1 (10 ounce) can mandarin orange segments, drained
1 granny smith apple
1/4 cup lemon juice
1 (10 ounce) package fresh spinach, trimmed washed and torn into bite-sized pieces
1/3 cup pine nuts
1/4 cup orange juice concentrate
2 tablespoons balsamic vinegar
2 tablespoons olive oil
2 teaspoons liquid honey
1 teaspoon poppy seed
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper

  • Place pine nuts in a small frying pan and toast on medium heat until golden, stirring constantly to prevent burning.

This recipe quickly becomes the favorite of pretty much everyone that tries it. It's so tasty, it's easy to make, and the ingredients are interchangeable! You can use the dressing immediately or make it in advance and store in refrigerator up to a couple of days. I have substituted pears and mandarin oranges for the strawberries and feta instead of blue cheese. Be creative! YUM!
