2 packages (10 ounces each) frozen chopped spinach
6 ounces cream cheese, softened
4 tablespoons butter, divided
1/4 teaspoon salt
1/2 cup seasoned bread crumbs

Steps:

  • Cook spinach according to package directions; drain well. Stir in cream cheese, 2 tablespoons butter and salt. , Transfer to a greased 1-qt. baking dish. Melt remaining butter; toss with bread crumbs. Sprinkle over spinach mixture. Bake, uncovered, at 350° for 20 minutes or until lightly browned.

1 cup coarsely crumbled fresh breadcrumbs from crustless French bread
2 tablespoons olive oil
2 tablespoons grated Parmesan cheese
10 cups (packed) baby spinach leaves (about 10 ounces)
3 garlic cloves, minced
2 tablespoons thinly sliced drained oil-packed sun-dried tomatoes, patted dry with paper towels

Steps:

  • Heat medium nonstick skillet over medium heat. Add breadcrumbs; drizzle 1 tablespoon oil over. Stir until breadcrumbs are golden brown, about 5 minutes. Remove from heat. Add Parmesan cheese and toss to blend. Set aside.
  • Rinse spinach under cold water. Drain slightly, allowing some water to cling to leaves. Heat remaining 1 tablespoon oil in heavy large pot over medium heat. Add garlic and stir 30 seconds.
  • Add spinach and sun-dried tomatoes; increase heat to high and stir just until spinach wilts, about 2 minutes. Season with salt and pepper. Transfer to bowl. Sprinkle with toasted Parmesan crumbs.

2 cups fresh breadcrumbs, made from crustless french bread
7 tablespoons extra virgin olive oil, divided
12 ounces linguine
4 cloves garlic, thinkly sliced
3 tablespoons fresh lemon juice
1/4 teaspoon dry crushed red pepper
1 (6 ounce) bag baby spinach leaves
grated parmesan cheese (to garnish)

Steps:

  • Preheat oven to 375*F.
  • Toss bread crumbs with 1 TBS oil in large bowl to coat.
  • Spread evenly on rimmed baking sheet.
  • Bake until breadcrumbs are golden, about 5 minutes.
  • Cool.
  • Sprinkle with salt.
  • Cook pasta in large pot of boiling salted water until tender, but still firm to the bite, stirring occasionally.
  • Drain, reserving 1/2 cup cooking liquid.
  • Meanwhile, heat remaining 6 TBS oil, thinly sliced garlic, lemon juice, and dried crushed red pepper in heavy small saucepan over medium heat.
  • Cook oil mixture until garlic turns golden, about 5 minutes.
  • Toss pasta, oil mixture and spinach in large bowl until spinach wilts, adding reserved cooking liquid as needed to moisten.
  • Sprinkle breadcrumbs over.
  • Serve pasta, passing grated Parmesan cheese seperately.

1 pound package frozen chopped spinach, thawed
5 eggs
1 large onion, minced
10 tablespoons margarine, melted
1 cup shredded Parmesan
2 garlic cloves, minced
1/2 teaspoon dried thyme leaves
1/2 teaspoon cayenne
1 3/4 cups Italian-style bread crumbs

Steps:

  • Preheat the oven to 350 degrees F.
  • Squeeze the excess water from the spinach and put it in a large mixing bowl. Add the remaining ingredients and mix well by hand.* Form the mixture into 1-inch balls, either by hand or with a small ice cream scoop. Place the balls closely together on a baking sheet.
  • Cook in the top half of the oven until firm to the touch, about 20 to 25 minutes. Let cool 5 minutes, and then transfer to a platter and serve immediately.

4 cups fresh baby spinach
2 teaspoons plus 1/4 cup olive oil, divided
1 garlic clove, minced
1/2 cup garlic-herb spreadable cheese
2/3 cup plus 1/4 cup seasoned bread crumbs, divided
1/2 teaspoon salt, divided
4 boneless skinless chicken breast halves (6 ounces each)
1 egg, lightly beaten
1/4 teaspoon pepper

Steps:

  • In a large skillet, saute spinach in 2 teaspoons oil until spinach is wilted. Add garlic; cook 1 minute longer. Remove from the heat. Stir in the spreadable cheese, 2/3 cup bread crumbs and 1/4 teaspoon salt. Cut a pocket in the thickest part of each chicken breast; fill with spinach mixture. Secure with toothpicks., Place egg in a shallow bowl. In another shallow bowl, combine the pepper and remaining bread crumbs and salt. Dip chicken in egg, then coat with bread crumb mixture., In a large skillet over medium heat, cook chicken in remaining oil for 8-10 minutes on each side or until a thermometer reads 170°.
