2 loaves frozen French bread dough
1 (10 ounce) package frozen chopped spinach
1 lb hot pork sausage
2 tablespoons chopped onions
1 egg
10 ounces grated mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Allow the dough to thaw; cook the spinach according to the package directions; drain well.
  • Brown the sausage and drain off the fat, add the onion and cook until onions are soft. Beat egg and add about 1/2 to the reserved spinach and save the rest to brush over top of bread.
  • Working with one loaf of bread at a time, roll the bread into a rectangle about 9 x 13 inches. Spread half of the spinach, sausage, and mozzarella cheese over the dough and sprinkle with 1/2 of the parmesan cheese. Roll up jelly roll style starting on a long end. Seal all edges tightly so the stuffing remains inside.
  • Place on baking sheet and pierce tops of bread loaves with a fork a few times. Brush with the egg and bake at 375°F for 20 minutes or until browned. Repeat the steps for the other loaf of bread.

3 cups heavy cream
1 bay leaf
2 cloves garlic, smashed
1 cup grated Parmesan
2 tablespoons chopped fresh thyme
1 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons olive oil
1 cup small-diced onions
1 cup small-diced celery
3 cloves garlic, minced
1 tablespoon chopped fresh thyme
2 cups whole milk
6 large eggs, beaten
2 teaspoons salt
1 teaspoon ground black pepper
4 cups cubed day-old white bread
2 tablespoons unsalted butter
4 sausage patties, cooked
1 cup spinach
8 eggs, poached

Steps:

  • For the Parmesan-thyme cream: In a heavy-bottomed saucepot over medium-low heat, add the cream, bay leaf and garlic. Simmer until reduced by two-thirds, about 20 minutes, being careful not boil the liquid or scorch the bottom of the pot. With a slotted spoon, remove the garlic and bay leaf. Whisk in the Parmesan. When the Parmesan has melted the sauce is smooth, add the thyme, salt and pepper. Cook for another 2 minutes. Serve warm. (Make 1 quart.)
  • For the savory bread pudding: Preheat the oven to 350 degrees F.
  • Heat the olive oil in a saute pan over medium heat. Add the onions and saute until beginning to soften, 4 minutes. Add the celery, garlic and thyme; cook for another 3 minutes. Set aside and let cool.
  • In a large mixing bowl, whisk together the milk and eggs, and sprinkle with the salt and pepper. In another mixing bowl place the cubed bread. Pour the milk-egg mixture over the bread and mix. Let sit for 10 minutes, until the bread has soaked up liquid. Fold in onion mixture.
  • Grease an 8-by-10-inch baking dish with the butter. Add the bread mixture and cover with foil. Bake for 30 minutes. Remove the foil and cook until the top is toasted and golden brown, another 10 to 15 minutes.
  • To serve, cut into 4-by-4-inch portions and place on a plate. Add a sausage patty, 1/4 cup of the spinach and two poached eggs. Pour one-quarter of the Parmesan-thyme cream over the top.

This is from the Best of Louisianna cookbook. I made this as a appetizer for a Christmas dinner at my daughters. My grandkids who don't care for spinach loved this. I modified recipe and used pre made french bread loafs from store and spread the mixture on top and baked it. Really good.

2 french bread loaves
2 pkg 10 0z each frozen chopped spinach
2 Lbs hot pork sausage
4 Tbs chopped onion
2 eggs
20 oz grated mozzarrella cheese
1 c grated parmassen cheese

Steps:

  • 1. Cook spinach according to package directions. Drain well. Set aside. Brown sausage and drain off fat. Add Oinion and cook till onions are soft. Pre heat oven to 375 degrees.
  • 2. Beat eggs. Add the drained spinach.Mix in sausage onion mixture and parmassen cheese and mix in food processor.
  • 3. Cut 2 loafs of french bread in half length wise and spread with sausage mixture and top with mozzarella cheese. Bake 20 minutes or until browned. Cool slightly and cut into slices 1 1/2 to 2 inches wide.

(1) loaf Bridgeford bread dough
(2) bundles spinach
(1) 16 oz. sausage or pack of Italian sausage (remove the skins)
(4) cloves garlic - minced
(2) cups jack or mozarella cheese
(1/8) cup romano cheese

Steps:

  • Coat frozen bread dough liberally with olive oil. Place on large cookie sheet, in warm area with no drafts. Let dough rise to approx double the size. MEANWHILE: 1.) Wash spinach well, remove stems. Place in large pot and steam until tender. Drain, then set aside. 2.) Brown sausage & minced garlic in frying pan and crumble sausage into small pieces. 3.) Grate cheese & keep separate. READY TO FILL & ROLL: 1.) When dough has risen to proper size, pat & flatten dough down & across covering as much of the cookie sheet as possible. 2.) Spread sausage, spinach & both cheese evenly across the dough. 3.) Take one side of dough and jelly roll entire mixture. Pinch & seal dough together to hold contents in place. 4.) Arrange entire dough roll in crescent shape,(to fit better for baking) seam side down, BAKE at 350 degrees for 30 minutes, or until golden brown. NOTE: Can be baked ahead - Re-heat at 275 degrees until warmed through. Best if served warm.

Add about half of it to the drained spinach and reserve the rest to brush over the top of the bread. Working with one loaf of bread at a time, roll the bread out into a rectangle, about 9x13 inches. Spread half of the spinach, sausage, and mozzarella cheese over the dough. Sprinkle with half of the Parmesan cheese. Roll up, jelly roll-style, starting on a long end, sealing all edges tightly so the filling remains inside. Place on baking sheet and pierce tops of bread loaves with fork a few times. Brush with beaten egg. Bake at 375° for 20 minutes or until brown. Serve hot. Repeat steps with second loaf. Note: Most frozen bread loaves come two to a package. If not, simply save the extras in the freezer to be used at a later date.
