NEW ENGLAND PUDDING image

Yield 6 to 8 people

2 cans (16 oz each) crushed pineapple, drained
2 to 4 apples, peeled,cored and diced
1 cup chopped walnuts
1/2 cup packed brown sugar
2 eggs beaten
1 cup sugar
1 cup flour
1/4 lb plus 4 TBS unsalted butter, melted
Vanilla ice cream for serving

Steps:

  • Preheat oven to 325 degrees. Butter a nine inch pan. Combine apples and pineapple. Fill the pan with mixture. Mix walnuts and brown sugar together and spread over the fruit. Beat the eggs until thick. Add sugar and flour and blend. Add the melted butter and mix well. Spread the batter over the sugar and walnuts, being careful the mixture does not touch the fruit underneath. Bake for about one hour or until golden brown. The pudding is done when poked and no butter flows underneath. Let cool slightly. Serve with vanilla ice cream.
