3 tablespoons honey
3 cups raw walnut halves
½ tablespoon white sugar
½ teaspoon salt
½ cup extra-virgin olive oil
6 tablespoons seedless blackberry jam
4 tablespoons good quality balsamic vinegar
4 tablespoons orange juice
2 teaspoons Dijon mustard
2 teaspoons honey
½ teaspoon dried basil
salt and freshly cracked black pepper to taste
8 cups fresh spinach
1 sweet apple, chopped
1 Granny Smith apple, chopped
1 cucumber, sliced and quartered
2 red bell peppers, chopped
4 green onions, chopped
1 cup crumbled feta cheese
12 ounces fresh blackberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Place 3 tablespoons honey in a microwave-safe bowl. Microwave on Medium until honey liquefies, about 30 to 45 seconds. Add walnuts and stir to coat. Spread in one layer onto the prepared baking sheet and bake in the preheated oven until nuts have darkened slightly, 8 to 10 minutes. Remove from oven, sprinkle with 1/2 tablespoon sugar and 1/2 teaspoon salt, and stir to coat. Allow to cool.
  • Combine olive oil, blackberry jam, balsamic vinegar, orange juice, Dijon mustard, 2 teaspoons honey, basil, salt, and pepper in a lidded jar. Shake until vinaigrette is well combined and chill in the refrigerator until serving.
  • Combine spinach, sweet apple, Granny Smith apple, cucumber, bell peppers, green onions, feta, and cooled walnuts in a large bowl. Toss to combine. Carefully mix in blackberries. Drizzle with vinaigrette and toss.

3 eggs
1 tablespoon canola oil
1 onion, minced
3/4 pound chopped uncooked bacon
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon dark brown sugar
1/2 teaspoon coarsely ground black pepper, plus more for seasoning
1 tablespoon salt, plus more for seasoning
1 pound fresh baby spinach, washed, spun dry and chilled
1 avocado, halved, pitted and flesh diced
1/2 lemon, juiced

Steps:

  • In a small saucepan, add the eggs and a few pinches of salt. Cover the eggs with cold water and bring to a boil over medium heat. Remove the pan from the heat and cover with a lid for 10 minutes. Remove from water and cool in a bowl of iced water. Peel and set aside.
  • In a large saute pan over medium heat, add the oil. Add the onions and bacon and saute until the bacon is crisp. Stir in the vinegar, mustard, sugar, black pepper and salt and cook for 1 minute. Set aside and keep warm.
  • In a large serving bowl add the spinach, avocado and the lemon juice to keep avocado from turning brown. Season with salt and pepper, to taste. Cut the eggs into quarters and add to the bowl. Ladle desired amount of dressing on the salad and serve.

2 cups torn spinach leaves
4 large fresh mushrooms, sliced
2 teaspoons grated onion
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons Dijon mustard
2 tablespoons white wine vinegar
1/2 cup vegetable oil
1/4 teaspoon lemon juice
6 bacon strips, cooked and crumbled

Steps:

  • In a large salad bowl, combine spinach and mushrooms; set aside. For dressing, combine onion, salt, pepper and mustard in a bowl. Whisk in vinegar until well combined.
