My spinach salad with a comforting bacon dressing is a recipe I turn to again and again in winter. It's quick, elegant and so delicious. I can always count on compliments. -Sandy Davis, Prescott, Arizona

3 bacon strips, chopped
2 tablespoons red wine vinegar
1 small garlic clove, minced
1/2 teaspoon packed brown sugar
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon coarsely ground pepper
Dash ground nutmeg
Dash crushed red pepper flakes
1/4 cup olive oil
6 ounces fresh baby spinach (about 8 cups)
1/3 cup thinly sliced red onion
4 hard-boiled large eggs, chopped

Steps:

  • In a skillet, cook bacon over medium heat until crisp, stirring occasionally. Using a slotted spoon, remove bacon to paper towels. Discard all but 1 tablespoon drippings., Add vinegar, garlic, brown sugar, mustard and seasonings to drippings; heat through, stirring to blend. Transfer to a small bowl; gradually whisk in oil. Stir in half of the bacon., Place spinach, onion and eggs in a large bowl; toss with warm dressing. Sprinkle with remaining bacon; serve immediately.

For marinated apples
1 cup sliced apple (1 small apple)
1/2 cup Apple Cider Vinaigrette
For strawberry Champagne vinaigrette
1/2 cup sliced hulled strawberries
2 tablespoons Champagne vinegar
1 tablespoon sugar
Pinch salt
For serving
4 cups organic spinach leaves (4 ounces)
4 tablespoons crumbled plain goat cheese (2 ounces)
4 tablespoons dried cranberries
4 teaspoons chopped toasted walnuts

Steps:

  • Make marinated apples:
  • In small bowl, combine apple slices and apple cider vinaigrette. Cover and marinate in refrigerator for at least 2 and up to 6 hours.
  • Make strawberry Champagne vinaigrette:
  • In blender, purée all ingredients until smooth.
  • To serve:
  • In medium bowl, toss together spinach and strawberry Champagne vinaigrette. Mound 1 cup dressed spinach on each plate. With fork or slotted spoon, lift apples from marinade and scatter 1/4 cup over each salad. Top each salad with 1 tablespoon cheese, 1 tablespoon dried cranberries, and 1 teaspoon walnuts.

Number Of Ingredients 12

8 c or 10 cups fresh spinach cleaned and torn into pieces.....i like the baby spinach
1 c or 2 cups fresh mushrooms any type sliced
1 small red onion cut into slices
2 small mandarin oranges ,peeled and cut into sections or 1-2 small tins of mandarin oranges drained
10 slice bacon cooked till crips and crumbled
DRESSING:
salt and fresh ground pepper
2 Tbsp or to taste of sugar
juice of 1 lemon
2 clove or 3 of garlic minced
1/4 c olive oil, light
1/2 c champagne or balsamic vinegar

Steps:

  • 1. Arrange all salad ingredients in bowl in order listed. Mix all dressing ingredients in a jar and shake well. Just before serving toss salad and pour on dressing.
  • 2. NOTE: This dressing is a full 8 oz jar so for my husband and I , I only used half. This keeps well in the fridge. It is good on other green salads too.
