1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
salt, to taste
pepper, to taste
8 cups Baby Spinach, trimmed
2 red peppers, roasted, cut in strips
1/2 cup pecan pieces, toasted
4 ounces brie cheese, thinly sliced

Steps:

  • Whisk together oil, vinegar, mustard, honey, salt and pepper.
  • Place spinach in a salad bowl.
  • Pour dressing over top and toss to coat.
  • Add red peppers, pecans, and Brie cheese, toss again.
  • Serve immediately.

1/2 cup olive oil
1/4 cup good-quality balsamic vinegar
2 tablespoons maple syrup
2 tablespoons fresh herbs, chopped (such as chives, tarragon, chervil or parsley)
1/2 tablespoon Dijon mustard
sea salt and pepper
2 small rounds brie cheese, at room temperature
8 ounces Baby Spinach
1 cup thinly sliced red onion
2 cups fresh raspberries
1/2 cup pine nuts
fresh ground pepper

Steps:

  • Whisk togeher vinaigrette ingredients. Alter tartness by using more or less oil.
  • To make Salad; Cut each Brie rould into 8 wedges; place 4 wedges of brie around 4 plates. Mound spinach in center of each; sprinkle with red onion, raspberries and pine nuts,.
  • Drizzle balsamic vinaigrette over top. Grind a little black pepper over salad and serve. Makes 4 servings.

4 red bell peppers
1 teaspoon honey
1 teaspoon Dijon mustard
1 tablespoon balsamic vinegar
2 1/2 tablespoons extra-virgin olive oil
1/2 pound fresh baby spinach (about 8 cups packed)

Steps:

  • Quick-roast and peel pepper . Cut roasted peppers into 1/2-inch-wide strips. In a small bowl whisk together honey, mustard, and vinegar. Add oil in a slow stream, whisking until emulsified, and season with salt and black pepper. Roasted peppers and vinaigrette may be prepared 2 days ahead and chilled separately, covered.

This recipe is from one of our local restaurants. It was in the paper, I thought it sounded good, so I tried it. It's very very yummy!! You can make the garnish several hours ahead or even the day before.

2 ripe medium tomatoes, seeded and cut into small dice
1 1/2 teaspoons chopped sweet onions
1 1/2 teaspoons chopped cilantro
salt & pepper
1 (10 ounce) bag fresh baby spinach leaves
4 ounces brie cheese
1 tablespoon canola oil
1 tablespoon olive oil
2 cloves garlic, finely chopped
1 pinch crushed dried red pepper flakes
salt & pepper

Steps:

  • To Make Garnish: In bowl, toss all ingredients together well; cover and refrigerate until serving.
  • To Make Spinach and Brie: Wash and stem spinach and dry thoroughly; set aside.
  • Cut brie in half crosswise so you have two thin discs, then cut each disc into 6 pie shaped sections; place on a baking sheet sprayed with cooking spray.
  • Preheat oven to 350.
  • Heat oils in lge skillet; add garlic, red pepper, s& p.
  • Stir fry about 2 minutes.
  • Place brie in oven.
  • add spinach to skillet and toss rapidly so they get coated with the mixture; you want spinach warm, but not completely wilted.
  • Arrange spinach mixture on serving platter; transfer brie wedges, cut side up, to tops of spinach; Top with Garnish.
