- In a large skillet, cook and stir almonds and sugar over low heat until sugar is dissolved and almonds are coated. - Heat gas or charcoal grill. In small bowl, stir together fruit spread, vinegar and oil; reserve 1/3 cup for glaze. Set remaining mixture aside.
- Carefully brush grill rack with oil. Place chicken on grill over medium heat. Brush chicken with reserved glaze. Cover grill; cook 5 minutes. Turn chicken over; brush with glaze. Cover grill; cook 3 to 7 minutes longer, brushing occasionally with glaze, until juice of chicken is clear when center of thickest part is cut (170°F).
- Meanwhile, on 4 individual dinner plates, arrange spinach, raspberries, onion and almonds. Cut each grilled chicken breast into slices; place on top of salads. Drizzle with remaining fruit spread mixture.

- Add vinegar.
- Shake well-- this dressing stays emulsified very well.
- You can toss with the rest of the salad ingredients or toss with just the spinach and then garnish the top with the other ingredients, or plate each serving and pour dressing over, whatever you choose.

- To make the vinegarette drssing: Put raspberry preserves in a small bowl and cook in microwave at 50% power for 45 seconds or until preserves has liquified. Thoroughly mix all dressing ingredients in bowl with wire whisk. Set aside.
- Put the spinach, salad greens, strawberries, blood oranges and cranberries in a large bowl and toss until ingredients are well blended. Mix the chopped pecans with the brown sugar. Sprinkle over the salad.

I just threw this together one day when I had an unexpected lunch guest and it was such a hit, I've been making it to rave reviews ever since. You can sub feta for the gorgonzola, but I like the gorgonzola better...it gives the salad a richer taste and is not as dry as the feta. You can also sub toasted pine nuts or candied pecans or walnuts for the walnuts if you want to kick it up a notch. The best part about this salad is there is absolutely NO COOKING required. If you happen to have a leftover cold chicken breast, slice into strips and add it for a nice protein addition. Lose the banana if you add the chicken. Really, the possibilities are endless but the must-have ingredients for the right blend of flavors are the cheese, dressing, spinach and strawberries. Enjoy!
