1 tablespoon extra-virgin olive oil
1 small yellow onion, thinly sliced (1 cup)
2 cups frozen spinach (from two 10-ounce packages), thawed and squeezed dry
coarse salt and ground pepper
8 large eggs, lightly beaten
1/2 cup crumbled cooked bacon (5 slices)

Steps:

  • 1. Preheat oven to 425°. In a 10-inch ovenproof nonstick skillet, heat oil over medium-high. Add onion and spinach, season with salt and pepper, and cook until onion is translucent, about 5 minutes. 2. Add eggs and bacon, season with salt and pepper, and stir to combine. Cook, undisturbed, until edges are set, about 2 minutes. Transfer skillet to oven and bake until top of frittata is just set, 10 to 13 minutes. Invert or slide frittata onto a plate and cut into 6 wedges. Serve warm or at room temperature.

2 slices bacon, chopped
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg
6 large egg whites, lightly beaten
1 large egg yolk, lightly beaten
1 1/2 cups thinly sliced sweet onions, separated into rings
2 tablespoons water
1/4 teaspoon sugar
4 cups torn spinach
1/4 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 450 degrees F.
  • Cook bacon slices in a 10-inch nonstick skillet over medium heat until crisp.
  • Combine bacon slices and next 4 ingredients (bacon through egg yolk) in a bowl, and stir well.
  • Set aside.
  • Add onion to skillet; cover and cook 5 minutes or until crisp-tender, stirring occasionally.
  • Add water and sugar; saute 5 minutes or until onion is tender and golden brown.
  • Add spinach; cover and cook for 2 minutes or until spinach wilts.
  • Stir in bacon mixture; spread evenly in bottom of skillet.
  • Cook over medium-low heat 5 minutes or until almost set.
  • Wrap handle of skillet with foil; place skillet in oven, and bake at 450 degrees F for 5 minutes or until set.
  • Sprinkle with cheese; bake an additional minute or until cheese melts.

1 large yellow onion, finely chopped
1 tablespoon olive oil
~ 10 ounces fresh spinach
1/4 cup minced parsley
1/2 tsp basil
salt & pepper
6 eggs
1/4 cup light sour cream
1 cup shredded extra-sharp cheddar cheese
1/4 cup grated Parmesan cheese

Steps:

  • Preheat the over to 350° Fahrenheit. Coat a 9x9 inch square baking pan lightly in oil. In a large skillet, sauté the onions in the oil until translucent. Stir in the spinach and remove from heat. Add the parsley and basil, as well as salt and pepper to taste. In a large bowl, beat the eggs until well blended, then mix in the sour cream and cheddar cheese. Add the onion/spinach mixture and stir together until evenly blended. Pour into the 9x9 inch oiled pan and sprinkle with the Parmesan cheese. Bake for about 25 minutes, or until the eggs are set.
