SPINACH ROLLS WITH PUFF PASTRY



Spinach Rolls with Puff Pastry image

A vegetarian version of mini sausage rolls but made with a spinach and feta filling. I used frozen spinach because it was a better buy than fresh at the time but the equivalent amount of fresh spinach, chopped and wilted, would do the job.

2 tablespoons vegetable oil
1 clove clove garlic, minced, or more to taste
1 (10 ounce) package frozen chopped spinach, thawed and drained
salt to taste
1 (4 ounce) package crumbled feta cheese
3 sheets frozen puff pastry, thawed
1 egg, beaten
1 tablespoon milk
2 tablespoons sesame seeds

Steps:

  • Heat oil in a skillet over medium heat and cook garlic until fragrant, 1 to 2 minutes. Stir in spinach and cook until warmed through, 3 to 5 minutes; season with salt and mix well. Transfer to a bowl and mix in feta cheese.
  • Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets.
  • Lay 1 sheet of puff pastry on a lightly floured surface and cut in half lengthwise. Roll 1 half out with a rolling pin so it is wide enough to fold twice lengthwise. Mix egg and milk together in a small bowl.
  • Spread 1/6 of the spinach mixture lengthwise in the center of the puff pastry. Roll one side over the filling and brush the other side with egg-milk mixture. Roll over again to seal.
  • Brush top of roll with egg-milk mixture and sprinkle with sesame seeds. Cut roll into 6 small rolls. Repeat with the remaining puff pastry. Place cut rolls onto the prepared baking sheets.
  • Bake in the preheated oven until spinach rolls are puffed up and golden, 20 to 25 minutes.

Number Of Ingredients 12

10-12 lasagna noodles
16 ounces fat free cottage cheese
3 tablespoons heavy whipping cream
3 dollops light or fat free sour cream
1 package feta cheese
1 fresh bunch spinach (stems removed)
Small package of fresh button mushrooms
2 cups marinara sauce
1-1/2 cups shredded cheese (sharp colby or mixed)
1 teaspoon Salt
1 teaspoon Pepper
1 teaspoon Garlic Powder

Steps:

  • Preheat Oven to 375 degrees Cook lasagna noodles as directed. (make sure that you salt the water before boiling). When al dente, strain and lay flat to cool. While noodles are cooking, saute spinach and mushrooms and let cool. Combine: Cottage Cheese, Whipping Cream, Sour Cream, 3/4 cups feta cheese, Salt, Pepper and Garlic Powder in a medium bowl until blended. Fold in spinach and mushrooms. Put a layer of marinara in the bottom of your pan. Take about 2-1/2 heaping tablespoons of combined mixture and spread across noodles, leaving about a half inch from ends of noodles. Roll up from end to end (doesn't have to be a very tight roll) and place on top of marinara in pan. Once you have rolled them all, put remaining marinara and feta on top of rolls and top with shredded cheese. Bake at 375 for about 10 minutes or until cheese is bubbly.

These make a really nice vegetarian starter (leave out the cheese and butter for a vegan) and are great finger food if you use about 18 smaller mushrooms. Add a couple of crispy, cooked, crumbled bacon slices too, if you wish.

450 fresh spinach, washed and stalks removed
120 g feta cheese, crumbled
12 medium open cup mushrooms, stalks removed
olive oil or vegetable oil
15 g butter
1 small onion, finely chopped
salt and pepper
shredded parmesan cheese

Steps:

  • Cook the damp spinach in a large pan for about 2 minutes-or until it has wilted.
  • Drain really well, and chop coarsely.
  • Mix the crumbled feta through the spinach.
  • Preheat the broiler to medium.
  • Place the mushrooms gill side up on a lightly greased baking sheet.
  • Season and drizzle over a little oil.
  • Grill for 4-5 minutes or until tender.
  • Melt the butter in a frying pan and cook the onion until golden.
  • Stir in the spinach mixture and season to taste.
  • Spoon the mix into the mushroom cups, sprinkle with a little shredded Parmesan and grill until it's golden.

I found this in the "Healthy Bites" publication at my local Weis grocery store and I am posting for safe keeping. It was in the "Cancer Control" section of the magazine.

3 teaspoons olive oil
1 garlic clove, minced
5 ounces fresh spinach
1/2 cup reduced-fat feta cheese
2 teaspoons lemon juice
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon black pepper
1/2 teaspoon oregano leaves
4 (4 -6 ounce) boneless skinless chicken breasts, pounded to 1/4-1/2 inch thickness
2 large eggs, beaten
3/4 cup panko breadcrumbs
nonstick cooking spray
1 cup crushed tomatoes (they recommend Furmano's Chunky Crushed Tomatoes with Basil, Garlic and Oregano)

Steps:

  • Preheat oven to 350.
  • Heat 1 tsp olive oil in a large skillet over Medium heat.
  • Add garlic and saute 1-2 minutes or until fragrant.
  • Add spinach and cook until wilted, about 3-5 minutes, tossing constantly; remove from heat.
  • In a medium bowl, combine spinach, feta, lemon juice, crushed red pepper, black pepper and oregano; set aside.
  • Dredge each chicken breast into beaten egg, then panko breadcrumbs.
  • Spread one quarter of the spinach/feta mixture over chicken, then carefully roll up and secure with 2 toothpicks.
  • Repeat with remaining chicken breasts.
  • Heat remaining 2 tsp olive oil in a large skillet.
  • Add rolled chicken breasts to skillet and cook about 5-7 minutes or until browned on all sides.
  • Remove from heat and place in a square baking dish, sprayed with nonstick cooking spray.
  • Bake 20-25 minutes or until minimum internal temperature reaches 165.
  • Top with tomatoes and serve. Warm the tomatoes first, if desired.

3 ounces fresh baby spinach, chopped
2 ounces black olives, finely diced (Optional)
4 ounces feta cheese, crumbled
4 ounces mozzarella cheese, shredded
1/4 teaspoon red pepper flakes
Dash salt and pepper
2 tubes crescent rolls
1 egg white, beaten

Steps:

  • Preheat oven to 350°F. Put spinach and olives in a large mixing bowl. Add feta, mozzarella, red pepper flakes and salt and pepper. Toss thoroughly and set aside. Unroll the crescent dough and divide into triangles. Using a spoon, place small heaps of spinach mixture on the wide part of the dough triangle. Roll them up and place them on a greased cookie sheet. Brush lightly with the egg white. Bake 15 minutes or until golden brown. Serve immediately or at room temperature.
