These super healthy black bean brownies are the ultra fudgy and decadent chocolate treat.

1 1/2 cups black beans ((1 15-oz can, drained and rinsed very well) (250g after draining))
2 tbsp cocoa powder ((10g))
1/2 cup quick oats ((40g) (See nutrition link below for substitutions))
1/4 tsp salt
1/3 cup pure maple syrup, (honey, or agave (75g))
pinch uncut stevia OR 2 tbsp sugar ((or omit and increase maple syrup to 1/2 cup))
1/4 cup coconut or vegetable oil ((40g) (See nutrition link for substitution notes))
2 tsp pure vanilla extract
1/2 tsp baking powder
1/2 cup to 2/3 cup chocolate chips ((Not optional. Omit at your own risk))
optional: more chips, (for presentation)

Steps:

  • Black Bean Brownies Recipe: Preheat oven to 350 F. Combine all ingredients except chips in a good food processor, and blend until completely smooth. Really blend well. (A blender can work if you absolutely must, but the texture-and even the taste-will be much better in a food processor. I use this food processor.) Stir in the chips, then pour into a greased 8x8 pan. Optional: sprinkle extra chocolate chips over the top. Cook the black bean brownies 15-18 minutes, then let cool at least 10 minutes before trying to cut. If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up! Makes 9-12 brownies. If you make this recipe, don't forget to leave a review! 6 tablespoons unsalted butter, plus more for greasing the pan
3 tablespoons cocoa powder, plus more for dusting the pan
3 ounces bittersweet chocolate, chopped
2 teaspoons instant espresso powder
1/2 cup sugar
1 cup frozen chopped spinach, thawed
2 teaspoons pure vanilla extract
2 large eggs, beaten
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8-inch square baking pan and dust it with the cocoa powder, tapping out the excess.
  • Fill a medium saucepan 1/3 full of water and bring it to a boil over medium-high heat. Put the butter, chocolate and espresso powder in a heatproof bowl, set it on the saucepan and turn off the heat. Let the bowl stand for about 5 minutes until the chocolate mixture is melted. Stir together until very smooth. Stir in the sugar until dissolved. Remove the bowl from the saucepan; let cool to room temperature.
  • Squeeze any excess moisture from the spinach and put it in a food processor. Add the vanilla and 1 tablespoon of water and puree until very smooth. Add the spinach puree and eggs to the cooled chocolate mixture and whisk until well combined.
  • Whisk together the flour, cocoa powder, baking powder and salt in a medium bowl until combined. Add the wet ingredients to the dry and fold with a rubber spatula until combined. Add the chocolate chips and stir to combine. Pour the batter into the prepared pan; use an offset spatula to spread the batter evenly. Bake until set and a toothpick inserted in the center still has a few moist crumbs stuck to it, about 25 minutes.
  • Cool the brownies completely in the pan before cutting.

They look like brownies, but they're not sweet! Here's a wonderful way to have spinach. This is a treat my girls love to eat. Two 10 ounce packages frozen spinach, cooked, may be substituted for fresh.

1 (10 ounce) package spinach, rinsed and chopped
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 eggs
1 cup milk
½ cup butter, melted
1 onion, chopped
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • Place spinach in a medium saucepan with enough water to cover. Bring to a boil. Lower heat to simmer and cook until spinach is limp, about 3 minutes. Remove from heat, drain, and set aside.
  • In a large bowl, mix flour, salt and baking powder. Stir in eggs, milk and butter. Mix in spinach, onion and mozzarella cheese.
  • Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Cool before serving.

3 large eggs
1/3 cup butter, melted plus (more for the baking dish)
1/4 cup cocoa powder
1/8 teaspoon salt
2 teaspoons vanilla extract
1/2 cup unbleached cane sugar (plus 2 tablespoons)
1/2 cup dark chocolate chips
1/3 cup walnuts, finely chopped

Steps:

  • Preheat oven to 350°F
  • Butter an 8-inch baking pan.
  • Place the black beans, eggs, melted butter, cocoa powder, salt, vanilla, and sugar in the bowl of a food processor and blend until smooth.
  • Remove the blade and carefully stir in the chocolate chips and walnuts. Transfer mixture to the prepared pan.
