1 boneless beef chuck roast (4 pounds)
1 teaspoon salt
1 teaspoon pepper
1 tablespoon olive oil
1 bottle (12 ounces) beer or 1 cup beef broth
1 can (28 ounces) pickled jalapeno peppers, undrained
1 large onion, chopped
1 teaspoon garlic powder
1 teaspoon chili powder
Corn tortillas (6 inches), crumbled Cotija cheese, lime wedges, fresh cilantro leaves, sliced radishes and sour cream, optional

Steps:

  • Sprinkle roast with salt and pepper. In a large skillet, heat oil over medium-high heat; brown meat. Transfer meat to a 5- or 6-qt. slow cooker. Add beer to skillet, stirring to loosen browned bits from pan; pour over meat. In a large bowl, combine jalapenos, onion, garlic powder and chili powder; pour over meat. Cook, covered, on low until tender, 6-8 hours., Remove roast; shred with 2 forks. Strain cooking juices. Reserve vegetables and 2 cups juices; discard remaining juices. Skim fat from reserved juices. Return beef and reserved vegetables and cooking juices to slow cooker; heat through. If desired, serve with optional ingredients.

I played about with the taco meat; tried a few new spices, and here you go... Another taco meat recipe that is Easy/Peasy to make. At least that is my story and I am sticking to...

PLAN/PURCHASE
THE ONIONS
1 tsp grapeseed oil, or other non-flavored variety
1/2 medium yellow onion, chopped finely
THE MEAT
1 lb ground beef, lean variety
12 oz beef stock, not broth
THE SPICES
1 Tbsp chili powder, i like it hot
2 tsp ground cumin
2 tsp dried oregano, ground (if you have mexican oregano, use it)
2 tsp dehydrated onions, ground
1 tsp white pepper, freshly ground
1 tsp smoked paprika
1/4 tsp cayenne pepper, or to taste
1/4 tsp garlic powder
1 pinch salt, kosher variety, fine grind

Steps:

  • 1. PREP/PREPARE

  • 3. To make this recipe easier, put all the dried spices into a single bowl, and then just dump them in, when needed. Easy/Peasy.
  • 4. Gather your ingredients (mise en place).
  • 5. Finely chop up the onion.
  • 6. Add the oil to a skillet over medium heat, then add the chopped onions.
  • 7. Stir until they soften, about 3 - 5 minutes.
  • 8. Add the ground beef and begin to break it up using a wooden spoon.
  • 9. Continue to break up the beef for another 3 - 5 minutes.
  • 10. Toss in all the dry spices.
  • 11. Stir to combine with the beef, about 3 - 5 minutes.
  • 12. Add the beef stock and lower the heat to a simmer.
  • 13. Stir and allow the stock to reduce until the mixture begins to thicken, about 8 - 10 minutes.
  • 14. PLATE/PRESENT
  • 15. Serve on tacos or whatever way you prefer. Enjoy.
  • 16. Keep the faith, and keep cooking.

This is my tried and true for either soft or hard shell taco filling. It's nice and spicy, tangy with a fair amount of tomato flavor. Tweaked from Cook's Illustrated.

1 tablespoon oil
1 small onion, chopped
3 garlic cloves, minced
2 tablespoons chili powder (Penzey's medium hot)
1 teaspoon cumin
1/2 teaspoon oregano
1/4 teaspoon cayenne
1 lb 90% lean ground beef
1/2 cup canned tomato sauce
1/2 cup canned chicken broth
1 teaspoon brown sugar
2 teaspoons cider vinegar
black pepper

Steps:

  • Heat oil over med. heat for 2 minute
  • Add onion and cook until softened - approx 4 minute
  • Add garlic and spices.
  • Cook until fragrant approximately 1 minute.
  • Add beef & cook 5 minutes.
  • Add tomato sauce, chicken broth, brown sugar & vinegar.
  • Reduce heat and simmer uncovered approx 20 min and stir until no more chunks remain and until it is the "wet" consistency you want.
  • Season with pepper and salt if needed.

1 tablespoon olive oil
1 lb lean ground beef
1 serrano pepper, chopped
2 tablespoons chili powder
1 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon Mexican oregano
1/2 teaspoon paprika
2 1/2 teaspoons cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper
1 (14 ounce) can black beans, rinsed & drained
1 (8 ounce) can corn, rinsed & drained
3 eggs
3/4 cup 2% low-fat milk
1 cup shredded cheddar cheese, divided
6 corn tortillas (6 inch)

Steps:

  • Preheat oven to 400.
  • In a large skillet, heat the oil over medium-high heat. Add the beef and chili pepper, and fry for about 5 minutes or until beef is well-browned. Drain. Add the spices (chili powder through cayenne), stir, and cook for 1-2 more minutes. Remove from heat, and stir in the black beans and corn. Let cool for at least 5 minutes.
  • In a large bowl, whisk together the eggs and milk. Add 1/2 cup cheese and the beef mixture, stir to combine well.
  • Coat a deep 9-inch pie pan with cooking spray. Lay down the corn tortillas alongside the bottom and side of the pan to form a "tortilla pie crust." It helps to heat up your tortillas in the microwave for a few seconds beforehand to make them more pliable.
  • Pour your beef-egg mixture in the the pie crust and spread it out evenly. Cook for 30 minutes, then remove and top with the rest of the cheese. Cook for a further 5 minutes or until cheese is melted.
  • Remove from oven and let cool for at least ten minutes. Cut into wedges and top with a generous amount of pico de gallo.

Instead of using tortilla chips, you can also just scoop some of the casserole in a soft taco, this is actually really good as well, especially when served with some guacemole!

1 (15 ounce) can black beans, drained
1 (15 ounce) can red kidney beans, drained
1 (8 ounce) can sweetcorn, drained
1 (7 ounce) jar hot salsa
1 tablespoon habanero sauce
1/4 teaspoon dried chili pepper flakes
1 (7 ounce) jar jalapeno peppers, drained
2 cups cheese, grated (Monterey Jack, Cheddar or Gouda)
1/2 cup black olives, sliced
2 scallions, sliced (use the light green-green parts)
1/2 cup diced tomato
1/2 cup coriander, chopped
1 (8 ounce) bag nacho chips

Steps:

  • Preheat oven to 350°F Combine refried beans, black beans, kidney beans, corn, salsa, habanero sauce, chili flakes, and half of grated cheese. Chop up half the jalapenos and stir inches Transfer mixture to microwave proof oven dish and cover with microwavefoil.
  • Microwave on high for about 8-10 minutes until hot and bubbly.
  • Put remaining jalapenos on top, sprinkle remaining cheese over dish, sprinkle scallions and olives.
  • Transfer to preheated oven until cheese is melted.
  • Sprinkle tomatoes and chopped coriander on top. Wait 5 minutes and serve with nacho chips.
