BEET AND POTATO SALAD image

Number Of Ingredients 10

3 medium beets, trimmed at both ends
2 medium potatoes
1 medium onion
1 tsp salt
1 large clove peeled garlic
2/3 c. olive oil
1/3 c. red wine or cider
vinegar
salt & pepper
2-3 TBS chopped parsley

Steps:

  • preheat oven to 400. Wrap beets, potatoes and onion in foil. place beets and potatoes in oven 30 minutes. After 30 minutes add onion and continue baking for an hour or until beets and potatoes are done. when potatoes, beets, and onion are done, remove from oven and allow to cool. When cool, rub skins off of beets. Slice and dice into medium size pieces and put in a large bowl. Cut potatoes into a medium dice and add to bowl. Coarse chop onion and add to bowl. Give everything a good toss. On cutting board, put 1 tsp salt on board and then place garlic clove on top of salt. With the blade of a sturdy knife, mash and puree garlic and salt into a paste. In a jar or other receptacle that can hold at least 1 1/2 cups liquid, combine garlic/salt paste with vinegar and oil and mix well to create dressing. Pour dressing into bowl with beets, potatoes, and onions and toss with chopped parsley. Add salt and pepper to taste. Best if served slightly chilled or at room temp.
