SPICY SWEET POTATO BALLS

3 pounds sweet potatoes cooked or 2 (17 ounce) cans, drained
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 egg
Miniature marshmallows
1/2 cup ginger snap crumbs

Steps:

  • Preheat oven to 400 degrees F.
  • Mash sweet potatoes while they are hot, then add, butter, salt, and spices. Add egg and continue to whip until thoroughly combined. Chill until firm. Form into golf ball sized pieces and place 2 to 3 marshmallows in center of each ball. Roll in ginger snap crumbs. Place on non-stick or lightly greased baking sheet. Bake for 10 to 15 minutes.

and pared OR 2 cans of
sweet potatoes drained and
heated
2 T. Brown Sugar
2 T. Butter
1/2 t. Salt
1/4 t. Cinnamon
1/4 t. Nutmeg
1 Egg
24 Miniature Marshmallows
1/2 cup Graham Crackers

Steps:

  • Mash hot sweeet potatoes. Add brown sugar, butter, salt, cinnamon and nutmeg. Add egg and continue mashing until thoroughly combined. Chill is not firm. Form mixture into balls using 1/3 cup for each ball, and placing 2 miniature marshmallows in the center of each ball, if desired. Dredge balls in graham cracker crumbs; place in baking pan and bake at 400 for 10-15 minutes. Makes about 8 balls.
