Awesome homemade pizza in about 30. Spice it up with Sriracha; cool it down with creamy ranch; make it better for you with spinach.

1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
1 box (9 oz) frozen chopped spinach
1 package (6 oz) refrigerated grilled chicken breast strips, cut into bite-size pieces
2 tablespoons Sriracha sauce
1/2 cup ranch dressing
1/4 teaspoon Watkins™ Garlic Powder
1 1/2 cups shredded three-cheese blend (6 oz)

Steps:

  • Heat oven to 400°F. Spray large cookie sheet with Crisco® Original No-Stick Cooking Spray. Unroll dough on cookie sheet; press to form 14x12-inch rectangle. Bake 6 minutes.
  • Microwave frozen spinach as directed on box 3 to 4 minutes to thaw. Drain well; squeeze dry with paper towels.
  • In small bowl, mix chicken and Sriracha sauce. In another small bowl, mix ranch dressing and garlic powder. Spread ranch dressing mixture evenly over partially baked pizza crust. Sprinkle spinach over ranch dressing mixture; top with Sriracha chicken. Sprinkle with cheese.
  • Bake 8 to 12 minutes or until cheese is melted and crust is golden brown.

1 tablespoon olive oil
1 clove garlic, minced
1 prepared pizza crust (12 inch I use Boboli.)
1 (10 ounce) package frozen chopped spinach, thawed,very well drained
1 cup shredded mozzarella cheese
2 plum tomatoes, thinly sliced
1 (4 ounce) package crumbled feta cheese, with garlic & herb
1 teaspoon chopped fresh rosemary
grated parmesan cheese

Steps:

  • Mix olive oil and garlic in small microwavable bowl.
  • Microwave on HIGH 30 seconds.
  • Place pizza crust on cookie sheet; brush entire surface with oil mixture.
  • Top with spinach, mozzarella cheese, tomato slices and feta cheese.
  • Sprinkle pizza with rosemary and parmesan Bake at 450' F for 10 to 12 minutes or until cheese is melted and crust is golden.
  • Let stand 5 minutes.

1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
2-1/4 cups all-purpose flour
2 tablespoons olive oil
1 tablespoon sugar
2 teaspoons Italian seasoning
1/2 teaspoon salt
1/2 cup shredded Asiago cheese
3/4 pound Italian turkey sausage links, thinly sliced
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
2 cups fresh baby spinach
6 slices reduced-fat provolone cheese, halved

Steps:

  • In a large bowl, dissolve yeast in water. Add flour, oil, sugar, Italian seasoning and salt; beat on medium speed for 3 minutes or until smooth. Stir in Asiago cheese., Turn onto a lightly floured surface; knead until smooth and elastic, about 5-6 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., Preheat oven to 425°. Punch dough down; divide in half. On a floured surface, roll each portion into a 13-in. circle. Transfer to two 12-in. pizza pans coated with cooking spray. Build up edges slightly. Prick dough thoroughly with a fork. Bake 5-8 minutes or until edges are lightly browned., Meanwhile, in a large nonstick skillet, cook sausage over medium heat until no longer pink; drain. Place tomatoes in a food processor; cover and pulse until finely chopped., Spread tomatoes over crusts; layer with spinach, sausage and provolone cheese. 1 1/2 tablespoons olive oil, preferably extra-virgin
4 cups (packed) ready-to-use spinach leaves (about 6 ounces)
1 1/2 teaspoons chopped fresh rosemary
1/2 teaspoon dried crushed red pepper
2 teaspoons fresh lemon juice
1 teaspoon grated lemon peel
2 6-inch purchased fully baked pizza crusts
1 3- to 3 1/2-ounce package soft fresh goat cheese with garlic and herbs

Steps:

  • Preheat oven to 425°F. Heat oil in heavy large skillet over medium heat. Add spinach; toss until beginning to wilt, about 2 minutes. Add rosemary and crushed pepper and toss 1 minute. Remove from heat; mix in lemon juice and peel.
  • Arrange crusts on work surface. Spread 1/4 of goat cheese on each. Top each with half of spinach mixture, then drop remaining goat cheese over spinach by teaspoonfuls.
  • Place pizzas directly onto oven rack. Bake until crusts are crisp and cheese on top begins to brown, about 10 minutes.

This pizza is one happy accident! A great twist on pizza. I had never heard of Kasseri cheese before so I was interested to try it. Glad I did! It has great flavor.

1 - thin & crispy prepared pizza crust
- olive oil for brushing and drizzling
3/4 bunch(es) fresh spinach, washed and coarsely chopped
1 cup(s) fresh sweet basil, coarsely chopped
1/2 cup(s) fresh Italian oregano, coarsely chopped
1 tablespoon(s) finely chopped jalapeno pepper
1/2 cup(s) fresh cilantro, finely chopped
1/3 cup(s) white onion, finely chopped
1/2 large red bell pepper, chopped
2 medium fresh tomatoes about the size of a tennis ball
3 tablespoon(s) pesto paste
8 - anchovies in olive oil
4 ounce(s) Kasseri cheese (sheep & cow milk cheese, mild, a bit like cheddar) sliced or grated
- salt & fresh pepper to taste

Steps:

  • Brush the prepared pizza crust with olive oil, making sure to cover it completely. I used one that's already rolled out. Place it on a well oiled pizza stone (don't make my mistake of not oiling the stone!!)
  • Pat the leafy vegetables completely dry after washing them. Chop everything coarsely, except the jalapeno and onions - you want those finely chopped. Put all the vegetables in a bowl, drizzle with olive oil, add pesto paste, salt & pepper, and toss well.
  • Pile the vegetables onto the pizza crust (residual juice and all) and put in the oven. Turn the oven to 325. Don't pre-heat the oven. The reason is that with so many vegetables, you want them to dehydrate a little while not letting the pizza crust get overdone.
  • Peek in on it about every 15 minutes, and spread out the vegetables toward the edges of the crust as they wilt. Scoot dry bits from the edges toward the middle. Again, the idea is to let the vegetables dehydrate while cooking.
  • When the veggies look cooked and have lost some volume (about 30 minutes), spread them out toward the edges again, and lay whole or chopped anchovy fillets and cheese on top. Turn the oven up to 375 and bake until the cheese is melted and golden - maybe 10-15 minutes or so.
  • Remove from oven, cut into slices and serve. Note: some people think they don't like anchovies - but it's the anchovies that make this really taste great. The briny saltiness with the cheese and vegetables is surprisingly good. If you think you don't like anchovies, try using high quality fresh anchovies from a gourmet market. I used a jar of anchovies in olive oil. You can also chop the anchovies if you don't want the taste of bigger chunks. I like anchovies, so enjoy getting a big piece in a bite. Another note on pizza crust - a thin crispy crust works best for this pizza because of the volume and softness of the vegetables and the lack of a lot of cheese. A softer, or regular crust might get mushy.

Martha's Pizza Dough
4 ounces Gruyere cheese, grated
2 ounces young pecorino cheese, finely grated
8 ounces buffalo mozzarella cheese, torn into 2-inch pieces
6 ounces fresh spinach, stems removed
2 cloves garlic, thinly sliced
Freshly ground black pepper
Extra-virgin olive oil, for drizzling
1 tablespoon thinly sliced fresh mint leaves
Lemon wedges, for serving

Steps:

  • Preheat oven to 550 degrees (or highest temperature) with a pizza stone placed on lowest rack for at least 30 minutes. Top a pizza peel with parchment paper.
  • Working with one piece of dough, flatten dough into a disk that is thicker in the center than at the edges. Using your fingers, gently pull on the edges of the dough to form a 12-inch circle; dough should still be thicker in the center. Transfer dough to prepared pizza peel.
  • Top dough with one-quarter of the cheeses, spinach, and sliced garlic. Season with pepper and drizzle with olive oil.
  • Transfer pizza along with parchment paper to pizza stone and bake until spinach is wilted and slightly browned, 10 to 12 minutes.
  • Using pizza peel, remove pizza from oven and top with one-quarter of the mint. Serve with lemon wedges. Repeat process with remaining dough and toppings.
