Smoked nuts can be made in your pellet smoker, grill or electric smoker for an epic sweet and spicy batch of smoked nuts that is epic on it's own or perfect added to salads, side dishes and even ice cream! These are great for gifting at the holidays!

3 cups pecans (or nuts of your choice - almonds or cashews are also great smoked)
1 tablespoon smoked sugar OR brown sugar
1 tablespoon smoked paprika
1.5 tablespoon smoked sea salt
1 tablespoon smoked coarsely ground black pepper
½ tablespoon ground coriander
1/2 tablespoon chipotle powder
1 teaspoon brown sugar

Steps:

  • Soak nuts in water for 10 minutes, then remove and lightly pat dry (getting the nuts wet helps the smoke adhere to their surface).
  • Combine the rub ingredients in a large bowl.
  • Toss the nuts in the rub so that all the nuts are covered in seasoning.
  • Place the nuts on a frog mat and smoke for 45 minutes at 250 degrees for an hour until the nuts have begun to lightly brown.

1/2 package (17.3 oz.) Pepperidge Farm® Puff Pastry Sheets (1 sheet)
1/2 cup packed brown sugar
2 tablespoons butter OR margarine, melted
1/3 cup chopped pecans
Confectioners' sugar

Steps:

  • THAW pastry sheet at room temperature 40 min. Preheat oven to 400 degrees F. Mix brown sugar, butter and pecans.
  • UNFOLD pastry on lightly floured surface. Roll into 15"x 12" rectangle. Cut into 20 (3") squares. Press squares into bottoms of 3" muffin-pan cups. Place 1 heaping tsp. pecan mixture in center of each.
  • BAKE 12 minutes or until golden. Remove from pans. Let cool. Sprinkle with confectioners' sugar. Makes 20 pastries.

1 jar (21.1 ounces) orange breakfast drink mix
1 jar (6 ounces) sugar-free instant lemon iced tea mix
2/3 cup sweetened lemonade drink mix
2 teaspoons ground cinnamon
1 teaspoon ground cloves
ADDITIONAL INGREDIENTS FOR HOT SPICED TEA:
1 cup boiling water
ADDITIONAL INGREDIENTS FOR HOT SPICED PUNCH:
2 quarts apple juice or cider
1-1/2 cups cranberry juice
3 cinnamon sticks (3-1/2 inches)

Steps:

  • In an airtight container, combine the first five ingredients. Store in a cool, dry place for up to 6 months. Yield: about 7-1/2 cups total. , To prepare tea: Dissolve about 1 tablespoon tea mix in boiling water; stir well. Yield: 1 serving., To prepare punch: In a 3-qt. slow cooker, combine the juices, 1/4-1/3 cup tea mix and cinnamon sticks. Cover and cook on low for 4 hours. Yield: about 12 servings (6 ounces each).

2 cups unsalted butter, softened
4 cups shredded sharp cheddar cheese
4-1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 cup finely chopped pecans, toasted

Steps:

  • In a large bowl, cream butter and cheese until light and fluffy. In another bowl, whisk flour, salt, garlic powder and cayenne; gradually beat into creamed mixture. Stir in pecans., Shape into eight 10-in. long logs. Wrap in plastic. Refrigerate 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on ungreased baking sheets. Bake until edges are crisp and lightly browned, 12-14 minutes. Cool on pans 1 minute. Remove to wire racks to cool. Refrigerate in airtight containers. Freeze option: Place wrapped logs in resealable plastic freezer bags; place in freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand 15 minutes at room temperature before cutting. Bake as directed, increasing time by 1-2 minutes.

HOMEMADE CHEDDAR AND PECAN CRISPS

1 pound extra-sharp cheddar, grated
1 cup plus 1 tablespoon butter
1 1/3 cups pecans
Kosher salt
2 cups all-purpose flour
1 1/4 teaspoons cayenne pepper
1/2 teaspoon black pepper

Steps:

  • Preheat the oven to 350°F.
  • Coarsely grate the cheddar cheese, and transfer it to the bowl of an electric mixer fitted with the paddle attachment. Cut the two sticks of butter into sixteen pieces, and scatter the pieces over the cheese. Let the cheese and butter soften. Place the pecans in one layer on a baking sheet, and toast them in the oven until they are a shade darker and fragrant, 7 to 8 minutes. While the nuts are still warm, transfer them to a medium bowl and toss with the remaining tablespoon of butter (the hot nuts will melt the butter) and salt to taste. Cool the nuts completely, then finely chop.
  • Add the chopped pecans, flour, a pinch of salt, cayenne, and black pepper to the bowl of the mixer, and beat the ingredients at medium speed until the mixture pulls together into a dough, about 2 minutes.
  • Divide the dough into eight pieces. On a sheet of waxed paper, roll each piece of the dough into a log 1 inch in diameter, and wrap the logs tightly in waxed paper and foil. Chill the logs for at least 8 hours and up to 1 week. The dough will keep frozen for 2 months.
  • Preheat the oven to 350°F.
  • Working with one log at a time, cut the log crosswise into 1/8-inch-thick slices, and arrange the slices 1/2 inch apart on parchment-lined baking sheets. Bake the crisps in batches until they are golden and just firm to the touch, 10 to 12 minutes. Cool the wafers on the baking sheet. Stored in an airtight container at room temperature, the wafers will keep for up to 4 days.

3 cups (about 12 ounces) chopped pecans
1/2 cup granulated sugar
3 tablespoons Lapsang Souchong dry tea leaves (from about 8 tea bags; see headnote)
Scant 1 teaspoon smoked sea salt, plus 1/4 teaspoon more for garnish
1 teaspoon ground cinnamon
1 teaspoon ground allspice
Generous 1/4 teaspoon ground cayenne pepper
1 1/4 cups flour, plus more as needed
1 1/2 tablespoons safflower oil or other neutral vegetable oil
2 large eggs, one of them separated into yolk and white
2 tablespoons plus a few more teaspoons water, or as needed
3 tablespoons coarse, translucent sugar crystals or turbinado sugar, for garnish

Steps:

  • -Preheat 300 degrees. -Toast pecans for 9 - 12 min, stirring. Cool. -Combine the sugar, tea leaves, sea salt, & spices in a food processor. Process 3 - 4 min, or until the tea has reduced to a fine powder. Reserve 1/3 of tea mixture for garnish. -Add flour, 1/2 the chopped pecans & oil to processor. Process until pecans are finely chopped & ingredients are beginning to clump together; scrape down bowl. -Whisk together 1 whole egg, 1 yolk & 2 tbsp water; add to the mixture in the food processor, pulsing until mixture just comes together to form a dough. If dry, add a bit more water, pulsing, until dough holds together. -Shape it into a square, then center it between two sheets of parchment. Roll out the dough (still between the parchment) into a 14" square; peel off the top sheet of parchment. -Cut & patch the dough to make an even square. -Use a fork to whisk together the remaining egg white with 1 tsp water in a small bowl. Brush the dough surface evenly with half the egg white mixture. -Sprinkle half the reserved tea garnishing mixture evenly over the dough, then sprinkle w/ half the remaining pecans & coarse sugar, and 1/8 tsp coarse salt. -Reposition the parchment on top, then roll back & forth with the pin to firmly embed the garnish. Sandwich the parchment & dough layers between two baking sheets & carefully flip over the dough. Peel off the second parchment sheet; repeat brushing on the egg white, then the remaining tea mixture, pecans, coarse sugar & salt on the 2nd side. Trim away & discard the uneven dough edges. -Cut the dough equally into 8 x 8, forming 64 crisps. Transfer the squares to a large parchment-lined baking sheet, spacing slightly apart; retrace the cuts if needed. -Bake for 20 min, invert the crisps; bake on 2nd sides for 20 min. Cool. -Once all the crisps have been baked, gather them on a single baking sheet & place in the oven (turned off; the crisps can over overlap). Let them cool/crisp up in the oven for 45 minutes.
