Thai Turkey Meatballs in Coconut Curry Sauce

Juicy meatballs packed with lucious thai coconut flavor. This recipe was a bored Sunday afternoon's entertainment. I love to create new & different dishes. This turned out GREAT! NOTE: You can get the Spice & Tea Exchange Thai Coconut Rub at www.spiceandtea.com

1 1/2 pound(s) ground turkey
1/4 cup(s) diced green pepper
1/4 cup(s) diced red pepper,
1/4 cup(s) diced onion
3 tablespoon(s) spice & tea exchange thai coconut rub
1 1/2 tablespoon(s) celery salt
1/2 cup(s) saltine cracker crumbs
1 - egg
1/2 teaspoon(s) fish sauce
1/2 teaspoon(s) maggi seasoning
1 teaspoon(s) lemon juice
2 tablespoon(s) flour
1 can(s) coconut milk, unsweetened
1 teaspoon(s) spice & tea exchange thai coconut rub
1/2 teaspoon(s) curry powder
1/2 teaspoon(s) fish sauce
1/2 cup(s) peanut butter
1/2 teaspoon(s) garlic powder
- salt and pepper

Steps:

  • DIRECTIONS: mix first 11 ingredients and form into 1 inch balls. Refrigerate for 15 minutes. brown in 1/4 cup canola oil in skillet and place in 9 x 13 pan. Mix flour in with drippings in pan, let cook till raw smell is gone, stir in coconut milk & remaining ingredients. simmer till thickened & creamy. Pour over meatballs. Bake at 350 for 20 minutes. Serve with Thai noodles & salad.
