SPICY SHRIMP NACHOS
Spicy and sweet! The Jamaican Jerk seasoning really works here, bringing all the flavors together. What an amazing taste sensation! I ended up being so busy today that I had to use pre-cooked shrimp, but it was still fabulous! I submitted the recipe the way it was written in Better Homes and Gardens, but I ended up using more cheese as we didn't think 4 oz. was enough. I used twice that much, a full 8 oz and broiled them on a baking sheet. It took about 5 minutes on the second-to-the-top position in my oven. YUM!

Steps:
- Preheat broiler.
- For salsa: In a bowl stir together mango, sweet pepper, onion, and chile pepper; set aside.
- In a large bowl stir together brown sugar and jerk seasoning.
- Add shrimp and toss to coat.
- Coat a grill pan or large skillet with cooking spray.
- Heat over medium-high heat.
- Add half the shrimp at a time to the pan.
- Cook for 1 to 2 minutes each side or until shrimp are opaque.
- Remove and set aside.
- If desired, coarsely chop shrimp.
- Spread tortilla chips on a broiler-safe platter or baking sheet.
- Top with shrimp and salsa.
- Sprinkle with cheese.
- Broil 4 inches from heat for 1 to 2 minutes or until heated through and cheese is melted.

SPICY BLACKENED SHRIMP SKILLET NACHOS
I am SO into nachos. Always have been. We make them A LOT in our house and I never hear complaining. Like, never ever. Shrimp just makes these nachos seem so decadent. It also makes these nachos appealing to adults. Especially shrimp-loving adults like myself. The best part about this recipe isn't even the shrimp though, it's how easy the nachos are to make. There are just a few ingredients needed and they take approximately 7 minutes to make. I made these nachos in a cast-iron skillet. Makes it easy to throw in the oven and melt the cheese. Super easy!

Steps:
- Preheat oven to 350 degrees, or start your broiler.
- Heat a large cast iron skillet on high heat until very hot and starts to smoke.
- Add one tablespoon of dressing, shrimp, chopped red peppers and seasoning to the skillet.
- Cook, stirring frequently, for 1 to 2 min. or until shrimp is heated through and evenly coated with dressing mixture.
- Stir in remaining tablespoon of dressing.
- Remove shrimp mixture from skillet.
- Layer half of the chips, shrimp mixture and cheese. Repeat layers.
- Place in oven for 3-5 minutes or until cheese is melted.
- Or Broil for 1-2 minutes or until cheese is melted.
- Top nachos with onions, cilantro and jalapenos.
- Serve immediately
JERK SHRIMP AND SPICY SWEET POTATO NACHOS
How to make Jerk Shrimp and Spicy Sweet Potato Nachos

- Preheat oven to 425 degrees
- Toss the chopped sweet potato with the oil, chili powder and Jerk seasoning. Place on a medium size baking sheet in a single layer.
- Roast for 30 minutes, turning occasionally.
- Heat a large skillet to medium heat and spray with cooking oil. Toss shrimp with Jerk seasoning and cook for 3-4 minutes on each side until shrimp is pink and cooked through.
- To assemble the nachos:
- Place the sweet potato tortilla chips in a single layer on a large baking sheet, top with roasted sweet potatoes, black beans, shrimp, onions and cheese. Broil on low for approximately one minute until cheese is melted.
