These burgers are chock full of spicy peppers. When handling the chile peppers be sure to wear gloves, and don't let the pepper oils come in contact with your eyes. Serve on buns with your favorite toppings.

2 pounds ground beef
2 teaspoons minced garlic
2 fresh jalapeno peppers, seeded and minced
1 small fresh poblano chile pepper, seeded and minced
1 fresh habanero pepper, seeded and minced
1 teaspoon crushed red pepper flakes
2 tablespoons chopped fresh cilantro
1 teaspoon ground cumin

Steps:

  • Preheat grill for high heat.
  • In a large bowl, mix together the beef, garlic, jalapeno peppers, poblano pepper, habanero pepper, red pepper flakes, cilantro, and cumin. Form into burger patties.
  • Lightly oil the grill grate. Place burgers on grill, and cook for 5 minutes per side, or until well done.

2 pounds bone-in skin-on turkey thighs (about 2 thighs)
1/2 cup minced onion
1/4 cup chopped fresh cilantro
2 minced garlic cloves
2 teaspoons chopped jalapeño or serrano chile with seeds
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon freshly ground black pepper
Kosher salt

Steps:

  • Cut meat into 1" cubes; discard skin and bones. Place in a single layer on a rimmed baking sheet, cover with plastic wrap, and transfer to freezer. Chill protein until very cold (it should feel firm but still give when pressed with your finger), about 15 minutes. Meanwhile, place all grinding parts (the stand mixer's grinding attachment, including the dies, or the bowl and blade of the food processor) in the freezer until very cold, at least 15 minutes. Assemble grinder attachment with chilled coarse die. Set a bowl in a large bowl of ice; arrange beneath the attachment to catch ground turkey and keep it cold.
  • Transfer turkey to a medium bowl. Mix in onion, cilantro, garlic, jalapeño or serrano chile, coriander, cumin, paprika, and freshly ground black pepper. Grind mixture in batches, with mixer on medium speed, and plunge gently to press through grinder.
  • Form into four 1/2"-thick patties. Season with kosher salt and freshly ground black pepper. Grill burgers over medium heat until cooked through, 5-7 minutes per side.

1 jar (10 ounces) dill pickle relish
3 plum tomatoes, seeded and finely chopped
1 small white onion, finely chopped
1/2 cup finely chopped red onion
1/2 cup minced fresh cilantro
1 tablespoon olive oil
1 to 2 serrano peppers, seeded and chopped
BURGERS:
3 pounds ground beef
2 teaspoons salt
1 teaspoon pepper
12 hamburger buns, split

Steps:

  • For salsa, in a bowl, mix the first seven ingredients. In another bowl, combine beef, salt and pepper; mix lightly but thoroughly. Shape into twelve 1/2-in.-thick patties., In two batches, grill burgers, covered, over medium heat or broil 4 in. from heat 4-5 minutes on each side or until a thermometer reads 160°. Serve with salsa.
