SPICY SAUSAGE QUESO DIP
A variation of the queso recipe -- crumbled hot sausage added to Ro*Tel tomatoes and Velveeta for a quick party dip.

Steps:
- Heat large nonstick skillet over medium-high heat; add sausage. Cook 5 minutes or until crumbled and no longer pink, stirring occasionally. Drain; return to skillet.
- Add Velveeta and undrained tomatoes to skillet; stir to combine. Cook over medium heat 5 to 7 minutes or until Velveeta melts, stirring occasionally.
- Serve with tortilla chips, if desired.

SPICY CROCK POT QUESO (CHEESE DIP)
A rich, spicy cheese dip that is a must for parties and get-togethers. It also works well as a sauce. You can make it as mild or as spicy as you like, depending upon the type of sausage and/or Rotel you use.

Steps:
- Crumble sausage and brown in skillet.
- Place Velveeta and Rotel into a crock pot and heat on high.
- Once sausage is browned, add it to the crock pot.
- Continue heating on high, stirring occasionally, until cheese has melted.
- Turn heat down to low, get out the tortilla chips and beer, and enjoy the ballgame.
- This recipe works as a sauce as well.
- If you are having a large get-together, I recommend doubling the recipe, it's usually the life of the snack buffet.
SPICY SAUSAGE QUESO
This is a great dip that I always get requests for...took it to work (hospital) and it disappeared before lunchtime. The difference is the fresh vegetables and cheese mix. Try it, you won't be disappointed. Freezes well also.

Steps:
- Fry sausage and drain.
- Combine tomatoes, onion and pepper together and sauté.
- Cube cheeses, add to vegetables and slowly melt cheese over low heat (can be done in crock pot).
- Mix in sausage and heat to serving temperature.
