6 teaspoons olive oil, divided
1 package (12 ounces) fully cooked roasted garlic chicken sausage links or flavor of your choice, sliced
1 cup sliced fresh mushrooms
1 small onion, halved and sliced
1 medium zucchini, halved lengthwise and sliced
1 medium yellow summer squash, halved lengthwise and sliced
3 tablespoons chopped fresh basil
8 whole wheat pita pocket halves, warmed
Optional: Sliced tomato and plain Greek yogurt

Steps:

  • In a large nonstick skillet, heat 2 teaspoons oil over medium-high heat. Add sausage; cook and stir 4-6 minutes or until lightly browned. Remove from pan., In same skillet, heat 2 teaspoons oil over medium-high heat. Add mushrooms and onion; cook and stir 4-6 minutes or until tender. Remove from pan., Add remaining oil to pan. Add zucchini and yellow squash; cook and stir 3-5 minutes or until tender. Stir in basil, sausage and mushroom mixture; heat through. Serve in pitas. If desired, add tomato and yogurt.

4 whole wheat pita breads (6 inches)
1 cup plain yogurt
2 green onions, chopped
2 tablespoons minced fresh parsley
1 teaspoon lemon juice
1 garlic clove, minced
3/4 pound Italian turkey sausage links or other sausage links of your choice, casings removed
1 medium cucumber, seeded and chopped
1 medium tomato, chopped
Additional minced fresh parsley

Steps:

  • Preheat oven to 325°. Wrap pita breads in foil; warm in oven while preparing toppings., In a small bowl, mix yogurt, green onions, parsley, lemon juice and garlic. In a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles., To assemble, spoon sausage over pitas. Top with cucumber, tomato and yogurt mixture; sprinkle with additional parsley.

well...it's a little sandwich i whipped up at home..i'm a teenager..and i wanted something simple ..fast..and most of all delicious! Variations can be made with the brands of pita pockets, cheese,sausage and sauce.It's and incredibly easy recipe..but it tastes soooo good

2 jimmy dean turkey sausage patties
2 -3 slices cheese (I reccommend Cabot sharp cheddar cheese)
1/2 pita pocket
2 -3 tablespoons taco bell mild taco sauce

Steps:

  • First, heat a pan on medium heat (I like to spray a little cooking spray, because the sausages sometimes stick) and then cook the two sausage patties until browned.
  • Then take the slices of cheese and place them on the sausage pattie, and turn the heat down to low.
  • When the cheese is a little melted take the patties and place them in the halfed pita pocket. Then put the pocket back in the pan, and brown until lightly toasted on both sides.
  • Lastly, take out the pita pocket and spoon the sauce into the sandwich.
  • enjoy.
  • *NOTE: you can use any type of cheese or meat and sauce.

1 courgette , trimmed and thinly sliced lengthways
2 tsp harissa paste
2 tsp olive oil
small handful broad beans (fresh or frozen)
2 tbsp hummus
1 spring onion , finely sliced
1 tsp tahini paste
small garlic clove , crushed
squeeze lemon juice
1 tbsp Greek-style yogurt
1 large wholemeal pitta bread

Steps:

  • Toss the courgette slices in the harissa and olive oil, and season. Cook on a hot griddle pan for 2 mins each side or until tender. Transfer to a plate and set aside.
  • Cook the broad beans in boiling water for 2 mins, drain under cold running water, then slip them out of their outer skins. Discard the skins. Put the broad beans, hummus and spring onion in a small bowl and mix to combine.
  • In another bowl, mix the tahini, garlic, lemon juice and yogurt. Toast the pitta and split it to create 2 pockets. Spoon the hummus mix inside each pocket, followed by the spicy courgette slices and a drizzle of the yogurt mixture.

1 ½ pounds ground pork sausage
1 medium head cabbage, shredded
1 small onion, chopped
1 tablespoon crushed red pepper
1 tablespoon white sugar
salt to taste
½ cup water
⅓ cup sour cream
1 (8 ounce) package pitas, halved

Steps:

  • In wok or skillet, brown pork sausage, drain and set aside.
  • Combine in wok or skillet: Shredded cabbage, onion, crushed red pepper, sugar, salt, and water. Steam covered for approximately 20 minutes or until cabbage is tender; stirring occasionally.
  • Return pork sausage to wok or skillet with cabbage mixture and add sour cream; mix well. Serve stuffed inside warmed pita bread.
