HOT ITALIAN SAUSAGE PANINI WITH PICKLED PEPPERS



Hot Italian Sausage Panini with Pickled Peppers image

Number Of Ingredients 14

1 1/2 cups white vinegar
1 1/2 cups water
1/2 teaspoon red pepper flakes
2 teaspoons salt
1 tablespoon sugar
2 garlic cloves, smashed
1 red bell pepper, cored, seeded and sliced
1 green bell pepper, cored, seeded and sliced
1 medium onion, sliced
1 pound or 6 links hot Italian sausage, butterflied
6 ciabatta rolls or 1 loaf ciabatta bread, cut into 6 portions
6 tablespoons olive oil
1/4 pound or 6 thin slices provolone
1/4 pound Parmesan, shaved

Steps:

  • In a large pot, combine the white vinegar, water, red pepper flakes, salt, sugar, and garlic and bring to a boil over medium heat. Once boiling, remove the pot from the heat and add the sliced peppers and onions. Let the ingredients pickle at room temperature for about 30 minutes. The peppers will last up to 1 month in a re-sealable container that has been stored in fridge.
  • Preheat an outdoor grill or grill pan over medium-high heat. Arrange the butterflied sausages on the grill, cut side down. Cover the sausages with a sheet pan and weigh it down with a tea kettle filled with water or a heavy pan. Grill for 4 to 5 minutes per side.
  • Slice the rolls in half and brush them, inside and out, with the olive oil. Layer a slice of provolone over the bottom half of each roll. Add the cooked sausages to the cheese, top with some of the pickled peppers and onions, then finish with 3 pieces of shaved Parmesan and, finally, cover with the top half of each roll. Put the sandwiches in a panini press, 2 or 3 at a time, and cook until the bread is crisp and cheese is melted, about 4 to 5 minutes. If you do not have a panini press, grill the sandwiches in a large skillet over medium heat and put a cast iron or heavy-bottomed pan on the sandwiches to flatten. Cook for 3 minutes per side. Transfer the sandwiches to a serving platter and serve.

2 - johnsonville new orleans spicy smoked sausage links
1 teaspoon(s) red wine vinegar
- roasted red pepper julienned
2 - slices mozarella cheese
2 - slices pepper jack cheese
1 teaspoon(s) lemon garlic chicken soup mix
1/2 cup(s) chicken broth
1 - naan flatbread
- a few strips of red onion sliced thin
- salt, pepper, cumin, garlic powder, tony's seasoning. just a pinch of each or to taste.

Steps:

  • Slice both links of sausage in half. Place in stove top grill on medium heat to cook. Add salt, pepper, cumin, garlic powder and tony's seasoning to the meat while it was cooking. NOTE: placed cast iron fry pan on top of sausage to keep from curling up.
  • add to 1/2 cup of chicken broth the 1 teaspoon of soup mix and red wine vinegar. Mix well. Add this to sausage in grill. Add red onions and roasted red pepper and cook till liquid is reduced down to about 1 tablespoon
  • Lightly brush one side of flatbread with EVOO. The side that will be touching the grill.
  • ASSEMBLY: on half of bread place a slice of mozarella, top with sausage, pepper, onion and liquid. Place 2 slices pepper jack cheese on top of this and fold flatbread in half. Place back in grill and cook till crispy, flip and cook other side till crispy. Once sammie is plated open and spread a little chipotle sammie spread and serve.

1/2 teaspoon salt
1/2 teaspoon dried sage leaves
1/4 teaspoon ground coriander
1/4 teaspoon pepper
1/8 to 1/4 teaspoon crushed red pepper flakes

Steps:

  • Crumble pork into a large bowl. Sprinkle with seasonings; mix well. Shape into four 3-in. patties., In a large skillet, cook patties over medium heat for 5-6 minutes on each side or until a thermometer reads 160°. Drain on paper towels.

2 tablespoons olive oil
1 pound fully cooked smoked sausages (such as hot links), cut diagonally into 1/4-inch-thick slices
1 large onion, chopped
6 large garlic cloves, minced
1 teaspoon dried crushed red pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon rosemary
1 pound linguine
1 1/2 cups canned low-salt chicken broth
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add sausages and sauté until brown, about 5 minutes. Using slotted spoon, transfer sausages to paper towels and drain. Add chopped onion, minced garlic, dried crushed red pepper, basil, oregano and rosemary to same skillet and sauté until onion is golden, about 5 minutes. Return sausages to skillet. Season with salt and pepper. Remove from heat.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain. Pour broth into same pot. Bring to boil. Return pasta to pot. Toss to coat.
  • Transfer pasta and broth to large bowl. Spoon sausage mixture over pasta. Sprinkle with Parmesan cheese and parsley and serve.
