ITALIAN SAUSAGE AND PEPPER BURGERS



Italian Sausage and Pepper Burgers image

1 tablespoon olive oil
1 onion, thinly sliced
1 red bell pepper, cored and thinly sliced
1 tablespoon tomato paste
12 ounces hot Italian sausage (if links, remove casings)
12 ounces sweet Italian sausage (if links, remove casings)
8 slices provolone
1/4 cup mayonnaise
3 tablespoons pesto
4 ciabatta rolls, buttered and lightly toasted
Pickled banana peppers, for topping

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onions and peppers and saute until the onions are translucent and the peppers are tender, 6 to 8 minutes. Stir in the tomato paste and cook for 1 minute longer. Remove from the heat.
  • Preheat an outdoor grill to medium high.
  • Combine both sausages in a bowl. Form into 4 patties. Grill until cooked through, 4 to 5 minutes per side. Top each burger with some of the onions and peppers and 2 slices of cheese, cover the grill and cook until the cheese melts.
  • In a bowl, add the mayo and pesto and stir to combine. Spread the rolls with the pesto mayo, add the burgers and banana peppers and serve immediately.

OWENS SAUSAGE AND GROUND BEEF BACKYARD BURGERS



Owens Sausage and Ground Beef Backyard Burgers image

This recipe was included in an ad in my local paper. It sounded so good that we had to try it. We used Owens rolled sausage since I had the coupon. It was great, but I'm sure other sausage brands would work too! The recipe originally said to make 8 patties, but they ended up so small that I decided next time I will make 6 larger patties. We used regular flavored sausage, but my husband and I love spicy food, so I can't wait to try this recipe using hot flavored sausage. Be sure to have all your favorite burger toppings on hand like lettuce, tomatoes, pickles, etc.**Update - made these patties for the 4th of July and used 96/4 extra lean hamburger since the sausage is so "fatty". Doubled the recipe and made 12 patties. They came out just the right size. Huge hit with all the guests! Many tried to guess the "secret ingredient" and were amazed when I told them it was breakfast sausage mixed with the beef.

1 lb sausage (I used Owens original roll sausage)
1 lb ground beef
2 tablespoons Worcestershire sauce
1/2 cup parmesan cheese, grated
1/3 teaspoon ground pepper
6 hamburger buns

Steps:

  • In a large bowl, combine all ingredients except the hamburger buns.
  • Form into 6 patties.
  • Over medium heat on the grill, cook burgers on each side until done (no longer pink), approximately 15 minutes total.
  • Serve on buns with favorite toppings.

Hot Sausage Burgers with Broccoli Rabe and Provolone image

1 1/2 to 1 3/4 pounds coarsely ground pork (ask butcher to do this)
1 teaspoon crushed red pepper flakes, 1/3 palmful
2 teaspoons smoked sweet paprika, 2/3 palmful
1 1/2 teaspoons ground fennel, fennel pollen or 1 teaspoon fennel seed
1 teaspoon ground sage, 1/3 palmful
1 teaspoon granulated onion, 1/3 palmful
1 teaspoon granulated garlic, 1/3 palmful
Salt
Extra-virgin olive oil, for drizzling, plus 1 tablespoon
3 tablespoons dark brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon balsamic vinegar
1 cup tomato sauce
Freshly ground black pepper
1 small bundle broccoli rabe, tough ends discarded
1 large or 2 small cloves garlic, finely chopped
A few grates nutmeg
4 thick deli slices sharp provolone cheese
4 ciabatta rolls or other crusty rolls, split
Store-bought olive oil-rosemary or herb flavored fancy potato chips

Steps:

  • In a large bowl, combine the pork, red pepper flakes, paprika, fennel, sage, onion, garlic and salt, to taste. Form the meat into 4 patties, put on a plate and coat with a drizzle of extra-virgin olive oil.
  • Heat a small pot over medium-low heat and add the brown sugar, Worcestershire, vinegar, tomato sauce and black pepper, to taste. Simmer until the mixture becomes a thick steak sauce consistency, about 15 minutes.
  • Add a couple inches of water to a medium skillet over medium-high heat. Bring to a boil, then salt the water and add the broccoli rabe. Cook for 5 minutes, then drain. Transfer the broccoli rabe to a cutting board and chop it into 2-inch pieces. Set aside. Return the skillet to the stove over medium heat and add 1 tablespoon of extra-virgin olive oil. Stir in the chopped garlic and the broccoli rabe. Saute for 2 minutes, then season with a few grates of nutmeg, to taste.
  • Heat a drizzle of extra-virgin olive oil in a skillet over medium-high heat, add the patties and cook for 5 to 6 minutes on each side. Top the patties with a slice of provolone during the last minute of cook time and tent with foil to melt.
  • Divide the broccoli rabe on the bottoms of the rolls and top with the cheesy sausage patties. Slather some of the warm sauce on the roll tops and cover the burgers. Serve the burgers on individual plates with a few chips alongside.

2 tablespoons extra-virgin olive oil
1/2 pound cremini mushrooms, sliced
1 large onion, quartered lengthwise then sliced
2 Cubanelle peppers, seeded and halved lengthwise, then thinly sliced
Salt and freshly ground black pepper
1/2 cup beef stock
1 pound bulk hot Italian sausage
1 pound ground sirloin
1 tablespoon grill seasoning
2 large cloves garlic, grated
A handful flat-leaf parsley, finely chopped
8 deli slices provolone cheese
4 sesame Kaiser rolls, split

Steps:

  • Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Saute mushrooms, onions and peppers until tender, 7 to 8 minutes then season with salt and pepper. Deglaze the pan with stock.
  • Combine the sausage and sirloin with grill seasoning, garlic and parsley. Mix and form 4 patties thinner at the center and thicker at the edges for even cooking and to keep burgers from bulging. Heat cast iron or nonstick skillet with 1 tablespoon olive oil over medium-high heat, cook patties 12 minutes turning once and top with mushrooms, onions and peppers and 2 slices of cheese. Turn heat off and cover pan with foil to melt cheese, 2 minutes. Pile on buns and serve.

2 teaspoons Worcestershire sauce
2 teaspoons Liquid Smoke, optional
1 teaspoon lemon-pepper seasoning
1 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/2 teaspoon cayenne pepper
1/2 teaspoon lemon juice
3 pounds ground beef
9 slices pepper Jack cheese
9 hamburger buns, split
Lettuce leaves and tomato slices, optional

Steps:

  • In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. Shape into nine patties. , Grill, uncovered, over medium heat for 7-8 minutes on each side or until no longer pink. Top with cheese. Grill 3-5 minutes longer or until cheese is melted. 2 tablespoons olive oil
2 red bell peppers, sliced
1 large onion, sliced
Pinch plus 1 teaspoon kosher salt
Pinch plus 1 teaspoon freshly ground black pepper
3 cloves garlic, sliced
1/2 cup pizza sauce
2 pounds (80/20) ground beef
1 pound sweet Italian sausage, casing removed
1/2 teaspoon dried oregano
1/2 teaspoon dried ground sage
6 slices provolone
6 semolina rolls, split and toasted
Torn fresh basil, for topping

Steps:

  • Preheat a grill to medium heat.
  • Pour the olive oil into a large skillet over a medium-high heat. When the oil is hot, add the bell pepper and onion, then sprinkle with a pinch each of salt and pepper. Cook, stirring frequently, until lightly browned and just tender, 8 to 10 minutes. Add the garlic and cook until just softened, about 1 more minute. Stir in the pizza sauce and 1/2 cup water, then simmer until thickened but still saucy, about 5 minutes. Set aside and keep warm.
  • Combine the beef, sausage, oregano, sage and remaining teaspoon each of salt and pepper in a large bowl. Mix with your hands until well combined. Form into six patties, about 1 inch thick and 4 1/2 inches wide.
  • Grill the patties until cooked through, 6 to 7 minutes per side. Top each with a slice of cheese during the last 1 to 2 minutes and cover to melt.
  • Serve the burgers on the rolls and top with the pepper and onion sauce, then add the fresh basil.

10 ounces ground beef chuck
1/2 pound ground beef sirloin
3/4 pound hot Italian sausage meat, casings removed
Salt and freshly ground black pepper to taste
Vegetable oil cooking spray

Steps:

  • 1. Combine the chuck, sirloin, sausage meat, and salt and pepper in a bowl. Using your hands, mix well. Form into 6 patties. Refrigerate until ready to grill.
  • 2. Prepare a charcoal or gas grill: Lightly spray the grill rack with vegetable oil cooking spray. Light the coals or heating elements, and let them burn or heat until hot.
  • 3. Grill the burgers for about 5 minutes. Turn and grill for 4 to 6 minutes longer for medium-well burgers. Be sure the burgers reach 155°F so that the pork is thoroughly cooked.
