1 pkg. Jimmy Dean® Maple Flavor Pork Sausage Roll
6 cups bread cubed into ¾-inch pieces
10 eggs
3 cups milk
1 teaspoon vanilla
2 large granny smith apples, peeled and chopped
2 Tbsp sugar
1 tsp ground cinnamon
2 cups shredded cheddar cheese, divided
maple syrup, if desired

Steps:

  • Brown sausage in a skillet until cooked; drain.
  • In a large bowl, whisk together eggs, milk and vanilla until well blended.
  • In another bowl, mix apples, sugar and cinnamon together until well coated.
  • In a greased 9 x 13 inch baking dish, place half of the bread cubes followed by half the sausage, half the apples, and and 1 cup of the cheese. Repeat layers with remaining ingredients.
  • Pour egg mixture over the layers making sure to evenly coat it all with the egg mixture.
  • Place in fridge and refrigerate overnight.
  • In the morning, remove the casserole from the fridge and preheat oven to 325 degrees. Bake uncovered for 55-60 minutes or until knife inserted in center comes out clean. Cut into 6-8 pieces and served topped with a drizzle of maple syrup if desired.

Steps:

  • 1. Heat oil in a large pan on a medium heat, fry the sausages 5 mins turning frequently.
  • 2. Scatter over the onion, and cook for another 5 mins until softened.
  • 3. Increase the heat and add the rosemary and apples, and cook for 3-4 minutes till the apple changes colour.
  • 4. Add the cranberry sauce and mustard to the stock and stir, then add the stock to the pan too.
  • 5. Bring to the boil and simmer uncovered for 10 mins.
  • 6. Season to taste and serve with mashed potatoes (sweet potatoes work well with this dish)

1 large apple
1 large egg, lightly beaten
1/2 cup chopped fresh parsley
3 to 4 tablespoons minced fresh sage
2 garlic cloves, minced
1-1/4 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
1-1/4 pounds lean ground turkey
6 teaspoons olive oil, divided

Steps:

  • Peel and coarsely shred apple; place apple in a colander over a plate. Let stand 15 minutes. Squeeze and blot dry with paper towels., In a large bowl, combine egg, parsley, sage, garlic, seasonings and apple. Add turkey; mix lightly but thoroughly. Shape into sixteen 2-in. patties. Place patties on waxed-paper-lined baking sheets. Refrigerate, covered, 8 hours or overnight., In a large nonstick skillet, heat 2 teaspoons oil over medium heat. In batches, cook patties 3-4 minutes on each side or until golden brown and a thermometer reads 165°, adding more oil as needed. Freeze option: Place uncooked patties on waxed-paper-lined baking sheets; wrap and freeze until firm. Remove from pans and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time to 4-5 minutes on each side.
