SPICY PUMPKIN CHILI



Spicy Pumpkin Chili image

The pumpkin is a great surprise in this chili! It makes the whole house smell good and tastes great! Garnish with cheese and jalapenos if desired. This recipe can be made on stovetop too. Cooking time would be reduced to 30-45 minutes for chili to simmer.

1 pound ground beef
½ teaspoon crushed red pepper flakes, or to taste
1 teaspoon minced garlic
½ large onion, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can Great Northern beans, drained and rinsed
1 (8 ounce) can tomato sauce
1 (4 ounce) can tomato sauce with garlic and onions
2 (14.5 ounce) cans petite diced tomatoes
1 (14.5 ounce) can fire roasted diced tomatoes
1 (15 ounce) can pumpkin puree
2 teaspoons pumpkin pie spice
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon salt, or to taste

Steps:

  • Heat a large skillet over medium-high heat; cook and stir the beef in the skillet until crumbly and no longer pink, about 5 minutes. Stir in the red pepper flakes, garlic, and onion; continue cooking until the beef has browned and the onion has softened and turned translucent. Add the green and red bell pepper and cook 5 minutes more.
  • While the beef is cooking, combine the kidney beans, black beans, Great Northern beans, tomato sauce, tomato sauce with garlic and onions, petite diced tomatoes, fire roasted diced tomatoes, and pumpkin puree in a large slow cooker. Season with pumpkin pie spice, chili powder, cumin, and salt. Stir in the ground beef mixture.
  • Cook on Low until the chili is hot, 1 to 2 hours.

From my Thanksgiving recipe file (which I'm trying to post here). I haven't made it yet. You can omit the food processor/blender step by adding green chilies directly to the soup. Finely chop the cilantro and combine it with the sour cream and then dollop with mixture as directed.

1 (4 ounce) can green chilies, diced, drained
1/4 cup reduced-fat sour cream
1/4 cup fresh cilantro leaves
1 (15 ounce) can solid pack pumpkin
1 (14 ounce) can reduced-sodium fat-free chicken broth
1/2 cup water
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
1/8 teaspoon ground red pepper (optional)
salt, to taste

Steps:

  • Combine green chilies, sour cream and cilantro in a food processor or blender and process until smooth. (See description note for alternative to processing.).
  • Combine pumpkin, chicken broth, water, cumin, chili powder, garlic powder, and pepper if desired, in a medium saucepan; stir in 1/4 cup of the green chili mixture.
  • Bring to a boil; reduce heat to medium.
  • Simmer, uncovered, 5 minutes, stirring occasionally.
  • Pour into 4 serving bowls and top each with a dollop of the the remaining green chili mixture and additional sour cream, if desired. Check seasoning to see if it needs adjustment or salt.
  • Run tip of spoon through dollops to make swirl.

2 tablespoons butter
1 onion, minced
3 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1 pound Italian sausage, casings removed
1 (15 ounce) can kidney beans
1 (8 ounce) can chopped mushrooms, drained and rinsed
2 cups canned pumpkin puree
¼ cup milk
salt to taste
½ cup grated Cheddar cheese

Steps:

  • Melt butter in a large skillet over medium heat. Add onion and garlic; cook and stir until onion is translucent, about 5 minutes. Stir in chili powder and cumin; cook and stir until fragrant, about 2 minutes. Add sausage; cook, stirring to break up clumps, until juices run clear, 5 to 8 minutes.
  • Stir kidney beans and mushrooms into the skillet. Cook until heated through, about 5 minutes. Mix in pumpkin until warm, about 2 minutes. Pour in milk. Simmer until flavors combine, about 10 minutes. Season with salt; scatter Cheddar cheese on top.

2 pounds Mexican chorizo (please read above)
1 yellow onion, finely chopped
4 cups (32-ounce box) chicken broth
1 tablespoon cinnamon
Chili powder (optional)
3 - 4 lb. pie pumpkin
2 (14-ounce) cans black beans, rinsed and drained
Salt and pepper to taste
Topping Ideas:
Sour cream
Lime wedges
Diced avocado
Chopped cilantro
Crumbled cotija or queso fresco cheese
Tortilla chips
Oyster crackers
Toasted pumpkin seeds (pepitas)

Steps:

  • Break the chorizo up into a 5-quart Dutch oven and sauté over medium heat, breaking up the meat into small pieces until the bright orange juices are running. Add the chopped onion and continue cooking, stirring and scraping the bottom of the pan until the onions are soft. Pour in the chicken broth, bring to a boil and reduce the heat to medium-low. Stir in the cinnamon. Add chili powder to taste if you feel the chorizo doesn't have enough flavor and spice. While the chorizo is simmering, prepare the pumpkin. Cut the pumpkin in half and scoop out the seeds and fibrous innards. Cut the halves into quarters and cut away the orange rind and any green-tinged flesh. Use a very sturdy and sharp knife and go slowly and carefully. Cut the pumpkin flesh into bite size chunks. Remember you'll be eating this with a spoon, so size the pieces accordingly. Add the pumpkin to the simmering chorizo. Cook for about 10 minutes, then add the drained black beans. Continue to simmer the chili until the pumpkin is tender and the chili has thickened. Add salt and pepper to taste. Serve warm with sour cream and fresh limes to squeeze over the chili, and a selection of toppings. The chili can be made up to 24 hours ahead and gently reheated.

LISA'S PUMPKIN SPICY CHILI

I made this last night for dinner and my family loved it, not to hot and spicy just right. You could also do this in your crock pot as well. Cook your beef as directed above and then add everything in the crock pot and cook on low for about 8 hrs.

WHAT YOU NEED
2 pound ground beef
1 teaspoon red chili flakes
1 garlic clove crushed
1 small onion diced
1 can kidney beans
1 can black beans
1 can lentils
2 cans pork & beans
1 can crushed tomatoes
1 can whole tomatoes
2 cups pumpkin puree
2 teaspoons pumpkin pie spice
2 teaspoons chili powder
2 teaspoon ground cumin
salt & pepper to taste
shredded cheese for topping (optional)

Steps:

  • 1. Heat a large skillet over medium-high heat with a little oil and add onions, saute for about 2 min or till they are soft and translucent. Add beef and cook till crumbly and no longer pink, Stir in the red pepper flakes, garlic, and continue cooking until the beef has browned .
  • 2. Add the rest of your ingredients except the cheese, and mix together well. Turn down and let simmer on low for about 2 hours. When ready to serve ladle in bowls and top with a good hand full of shredded cheese. I serve cornbread with my chili perfect dinner for a cold winter day

1 pound ground beef
1/2 pound cut up steak
1/2 teaspoon crushed red pepper flakes, or to taste
1 teaspoon minced garlic

1 can kidney beans, rinsed and drained
1 can black beans, rinsed and drained
1 can cannelloni beans, drained and rinsed
1 can (8 ounce) tomato sauce
1 can (4 ounce) tomato sauce with garlic and onions
2 cans (14.5 ounce each) petite diced tomatoes
1 can (14.5 ounce) fire roasted diced tomatoes
1 can (15 ounce) pumpkin puree
2 teaspoon s pumpkin pie spice
2 teaspoon s chili powder
1 teaspoon ground cumin
Bacon salt
Cheese
1 cup croutons

Steps:

  • Heat a large skillet over medium-high heat; cook bacon and remove.
  • In the same pan cook and stir the beef in the skillet until crumbly and no longer pink, about 5 minutes. Cook steak same way and remove from heat and set aside.
  • Stir in the red pepper flakes, garlic, and onion; continue cooking until the beef has browned and the onion has softened and turned translucent.
  • Add the green and red bell pepper and cook 5 minutes more.
  • While the beef is cooking, combine the kidney beans, black beans, cannelloni beans, tomato sauce, tomato sauce with garlic and onions, petite diced tomatoes, fire roasted diced tomatoes, and pumpkin puree in a large slow cooker. Season with pumpkin pie spice, chili powder, cumin, and Bacon Salt. Stir in the ground beef mixture.
