ASPARAGUS PASTA SALAD WITH PARMESAN DRESSING
Delicious! Perfect to serve for a luncheon. This needs to chill for 2 hours before serving. The dressing is wonderful!

Steps:
- Boil pasta in water until firm-tender (do not overcook, leave firm!) drain, and rinse with cold water; set aside.
- Steam asparagus until crisp-tender; drain and plunge into very cold or ice water; drain and pat dry with a paper towel.
- Place all dressing ingredients in a blender, and blend until well mixed (adjusting all ingredients to suit taste).
- Place the veggies and the cooked pasta shells in a large bowl; toss to combine.
- Pour the dressing over; toss well to coat.
- Add in slivered almonds and mix.
- Chill in the fridge for a minimum of 2 hours before serving.

- Cut all peppers, onion, and prepare sun-dried tomatoes.
- Cook pasta and drain.
- Cook all chicken and cut into strips.
- Sauté pepper, tomatoes and onion in skillet with olive oil.

CHICKEN ASPARAGUS PASTA SALAD
This recipe is adapted from the "Simply Down Home Cookbook' that I received from Studentchef in the Spring 2009 Cookbook Swap. It uses some of my favorite ingredients and I can not wait until late Spring when fresh, local asparagus is in season! A neighboring town, Hadley, Massachusetts is famous for its asparagus and I eat more than my fill every year!

Steps:
- Bring 4 quarts of water to boil in a stockpot.
- Cook pasta according to package directions until al dente.
- Drain pasta and keep warm.
- Wash asparagus and remove and discard tough ends.
- Slice asparagus into one inch pieces.
- Cook asparagus in a large skillet in shallow water and steam for 1-2 minutes until crisp tender.
- Drain well and reserve.
- Chop chicken into one inch pieces.
- Cut grape tomatoes in half.
- Combine Italian dressing ingredients in a large bowl.
- Add cooked pasta and asparagus to the Italian dressing and mix together until everything is evenly coated.
- Add chicken, tomatoes, basil, olives, and cheese and stir to combine.
- Serve pasta salad warm or at room temperature.

- Place asparagus in an ungreased 2-qt. baking dish; drizzle with 2 teaspoons oil and sprinkle with salt and pepper. PASTA SALAD WITH GRILLED ASPARAGUS, PIMIENTO AND FETA

- Prepare a grill for medium-high heat. Cook the pasta in well-salted boiling water according to the package directions for fully cooked (not al dente). Drain the pasta, rinse under cold water to stop the cooking and toss with 1 tablespoon olive oil. Set aside. Meanwhile, snap the woody ends off the bottoms of the asparagus and toss in a bowl with 1 tablespoon olive oil, 1/2 teaspoon salt and some pepper. Grill, turning occasionally, until charred and tender, about 4 minutes. Transfer to a Food Network CookingGreen Bamboo Cutting Board and cut into bite-size pieces. Whisk together the lemon zest and juice, 1 1/2 teaspoons salt, some pepper and the remaining 1/2 cup olive oil in a large bowl. Add the pasta, asparagus pimientos, feta and dill and toss to combine. Let stand 30 minutes at room temperature so the flavors can meld before serving.
SPICY PIMENTO CHEESE ASPARAGUS CHICKEN PASTA SALAD
This pasta salad reminds me of the best pimento cheese I ever had. IMy friends and family are always asking me to make pasta salad. I normally make a vinaigrette for my pasta salad, not this time! I decided to fuse my beloved pimento cheese with pasta and top it off with some grilled chicken. This salad is quick, simple, easy and is simply delcious. I will make this often. - In a large pot of salted water, boil aspargus for 3 minutes. Remove immediately and place in an ice bath to stop the cooking process. Drain asparagus in a colander. Slice and set aside. Add pasta to the same boiling water. Boil according to package. Remove and drain in a colander. Run cold water over pasta until cool. Drain. Set aside. In a large mixing bowl combine the dressing ingredients . Mix well. Fold in asparagus, roasted red peppers & cheese. Chill for at least 1 hour. Top with grilled chicken when ready to serve. Enjoy!
