SPICY PEACH SALAD
This unexpected combination of ingredients is very refreshing on a hot summer day. Since you don't have to peel the peaches, it's a snap to put together! And fat-free! This was originally from a magazine (don't remember which one) but i have modified it a bit to suit.

Steps:
- Pit and slice the peaches.
- Coarsely chop the cilantro.
- Combine all ingredients and toss to mix.
- Chill for at least 2-3 hours to blend flavors.

MOM'S SPICY PEACH SALAD
This recipe is good, and easy. Of course, it was one of Mom's (Madeleine's), so what else could I expect?

Steps:
- Drain peaches, reserving syrup. Dissolve jello, sugar and spices in boiling water. Stir in peach syrup and vinegar. Chill until thickened. Add peaches. Pour into a 3 cup mold. Chill firm. For different taste mix cream cheese with powdered sugar, form soft balls, roll in chopped nuts and float into salad before chilling.

- Drain peaches, reserving syrup. Chop peaches set aside. In a small saucepan, combine reserved syrup, orange juice concentrate, cinnamon, and cloves bring to a boil. Reduce heat simmer, uncovered, for 5 minutes. Remove from heat cool. Remove spices and discard. Beat cream cheese with mayonnaise gradually stir in the cooled juice mixture. Add chopped peaches and mix well. Whip cream fold into fruit mixture. Line a 9 x 9-inch baking pan with foil. Pour salad into pan. Cover, label, and freeze.Before serving, lift salad and foil from pan. Let stand at room temperature for 10-15 minutes before serving. Remove foil and cut into serving pieces serve on lettuce.
