SPICY RUM NUT BRITTLE
My family LOVES this! It has just a hint of lingering spice that so compliments the brittle.

Steps:
- 1. Butter or spray a flat cookie sheet.
- 2. Combine sugar, corn syrup, nuts, butter, cinnamon, cayenne, salt, nutmeg in a deep sauce pan. Cook on medium high until the mixture turns a light amber color.
- 3. Remove from heat and quickly stir in baking soda and extracts until light and foamy.
- 4. Immediately pour on prepared cookie sheet and spread with metal spatula. Cool completely, break into pieces and store in air tight container. Makes a nice sized batch. It doesn't last at my house longer than the day I made it...
SPICY NUT BRITTLE
A few years ago dietary changes dictated we were no longer allowed peanuts or corn. Since we love Christmas candy I had to come up with a replacement for peanut brittle. This recipe is the result, and what a happy consequence! Nut brittle all grown up. It's sneak attack is surprising and wonderful :)

Steps:
- 1. Combine sugar and honey in a deep 2 qt. microwave-safe dish; I use a Corning Ware casserole dish.
- 2. Cook on high 3 minutes. Stir. Cook 3 minutes more.
- 3. Stir in butter and hot sauce.
- 4. Stir in baking soda until light and foamy.
- 5. Spread lightly onto baking sheet. Cool. Break into pieces. Enjoy!
- 6. NOTE: Use any nuts, or combination, that you like.
