PECAN CHEESE LOGS

Steps:
- In a large bowl, beat cream cheese until smooth. Stir in the shredded cheeses, mayonnaise, garlic powder, onion powder and Worcestershire sauce. Shape mixture into two logs, about 6 in. long. Roll in pecans, pressing down gently., Wrap each in plastic wrap; refrigerate for at least 2 hours or overnight. Serve with crackers.

SPICY MONTEREY JACK CHEESE LOGS
A pair of these savory spreads makes a great holiday gift. I made these last Christmas as an appetizer before our big dinner, and I watched them disappear! You can make ahead and wrap each log in heavy-duty plastic wrap and freeze. Thaw in the refrigerator overnight. Steps:
- Combine first 3 ingredients in a large bowl, blend well. Stir in shredded cheeses. Divide cheese mixture in half, and shape each portion into an 8-inch log.
- Combine pecans and chopped parsley, roll logs in nut mixture. Cover and chill 8 hours (I wrapped in wax paper). Let stand 1 hour before serving.
- Serve with a variety of crackers. Garnish if desired.

EASY CHEESY LOADED GRITS
Steps:
- Preheat oven to 325°. In a large skillet, cook sausage and onion over medium heat for 6-8 minutes or until sausage is no longer pink, breaking up sausage into crumbles; drain., In a large saucepan, bring water and salt to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, about 5 minutes or until thickened, stirring occasionally. Remove from heat., Add green chiles, 3/4 cup cheddar cheese, 3/4 cup Monterey Jack cheese, butter and pepper sauce; stir until cheese is melted. Stir in eggs, then sausage mixture., Transfer to a greased 13x9-in. baking dish. Top with remaining cheeses; sprinkle with paprika. Bake, uncovered, until golden brown and set, 50-60 minutes. Let stand 10 minutes before serving. Sprinkle with cilantro.

This is so simple and an incredibly good crunchy, savory treat. You can also use hot peppered Jack cheese for another taste altogether. Great as an appetizer or served with soup.

- Cut cheese into l/4 inch slices.
- Space cheese 3 inches apart on a non-stick cookie sheet.
- Sprinkle with garlic powder, to taste.
- Bake 5-10 minutes at 400 degrees F depending on your oven (Watch these closely; Do not overbake).
- Remove immediately and let cool.
- Store in an airtight container.
