When I need a different weeknight meal, I pull out this salad recipe. To make it in record time, I use fully cooked chicken strips, jarred mango, bottled vinaigrette and packaged, shredded cheese.

2 cups chopped peeled mangoes
1 medium red onion, chopped
1/2 cup chopped sweet red pepper
1/4 cup minced fresh cilantro
1 jalapeno pepper, seeded and chopped
2 tablespoons lime juice
2 packages (9 ounces each) ready-to-use grilled chicken breast strips
2 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon onion powder
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
Dash salt
2 tablespoons olive oil
2 packages (8 ounces each) ready-to-serve European blend salad greens
1/3 cup oil and vinegar salad dressing
2 cups shredded pepper Jack cheese
Tortilla chips

Steps:

  • For salsa, in a large bowl, combine the first six ingredients; chill until serving. In a large skillet, saute the chicken, cumin, onion powder, chili powder, cayenne and salt in oil until heated through. Add garlic; cook 1 minute longer., Toss greens with dressing; divide among seven serving plates. Top with chicken mixture, mango salsa and cheese. Serve immediately with tortilla chips.

2 teaspoons minced fresh ginger
1/4 teaspoon dried crushed red pepper
16 uncooked jumbo shrimp, peeled, deveined
3 tablespoons fresh lime juice
2 tablespoons soy sauce
3 cups cooked short-grain brown rice (about 1 1/4 cups uncooked)
1 mango, peeled, pitted, chopped
4 green onions, thinly sliced
8 ounces sugar snap peas
1 teaspoon oriental sesame oil
1 teaspoon sesame seeds
4 10- to 12-inch metal skewers

Steps:

  • Whisk 1 tablespoon vegetable oil, 1 teaspoon ginger, and crushed red pepper in bowl. Add shrimp; toss. Chill 2 hours.
  • Whisk 2 tablespoons vegetable oil, 1 teaspoon ginger, lime juice, and soy sauce in another bowl. Add rice, mango, and onions; toss well. Cover rice salad; let stand at room temperature.
  • Boil sugar snap peas in salted water until crisp-tender, about 1 minute. Drain peas and transfer to medium bowl. Toss peas with sesame oil and sesame seeds.
  • Prepare barbecue (medium-high heat). Thread 4 shrimp onto each of 4 skewers. Grill shrimp until just opaque in center, about 2 minutes per side.
  • Mound rice and mango salad in center of large platter; surround with sesame sugar snap peas. Top with grilled shrimp skewers and serve.

1/2 cup cornstarch

1/2 cup canola oil
2 Florida passion fruits, ripened, scooped out with a spoon
1/2 cup mirin
1 tablespoon chopped peeled fresh ginger
1/4 cup dry white wine
2 cups whipping cream
3/4 cup unsweetened coconut milk
1/2 teaspoon Thai red curry paste
1 tablespoon rice wine vinegar
1/2 teaspoon grain mustard
2 bulbs fennel, with stalks removed
Sea salt and freshly ground black pepper
1/4 cup virgin olive oil
3 Florida oranges
2 Florida grapefruits
2 pounds fresh Florida gulf shrimp
1/4 cup canola oil
Sea salt and freshly ground black pepper
Green Mango Jam, recipe follows
3 Green Florida mangoes, unripe
1/2 cup white vinegar
1/3 cup sugar
1 1/2 teaspoons salt
1-inch piece fresh gingerroot, peeled
1 fresh jalapeno chili
5 garlic cloves
1 teaspoon ground cumin
1 teaspoon ground coriander seeds
1/2 teaspoon ground turmeric
3-inch piece cinnamon stick
2 star anise
2 tablespoons corn oil

Steps:

  • Crispy Pan Seared Florida Snapper: With a sharp knife make small slices in the skin of the fish, making a crosshatching pattern. Pat completely dry with paper towels. Keep refrigerated until time to cook. Preheat a large saute pan on medium-high heat. Lightly dust the skin side of the fish with cornstarch and season lightly with sea salt and fresh ground pepper. Add enough oil to the hot pan to coat the bottom. Carefully lay the fish in the pan skin side down. Cook for several minutes, on both sides until skin is crispy and fish is just done. Cooking time will vary. Keep fish skin side up and transfer to a platter.
  • Florida Passion Fruit Cream: Place passion fruit, mirin and ginger in heavy medium sized saucepan. Boil until reduced to about 1/4 cup, about 6 minutes. Add wine and boil until reduced to about 1/4 cup, about 6 minutes. Add cream and coconut milk, bring to boil, then reduce heat to medium. Simmer sauce until slightly thickened, stirring occasionally, about 12 minutes. Stir in curry paste. Season sauce, to taste, with sea salt and fresh ground pepper. Strain through a fine mesh sieve or strainer lined with cheesecloth.
  • Florida Citrus and Shaved Fennel Salad: Whisk together vinegar, mustard, salt, and pepper in a large bowl. Add oil in a slow stream, whisking, until emulsified. Cut peel, including all white pith, from oranges and grapefruit with a paring knife. Working over a bowl, cut into segments. Squeeze juice from membranes into a small bowl, then whisk 3 tablespoons juice into vinaigrette. Drain citrus segments, then add to vinaigrette. Quarter fennel bulbs lengthwise, then cut into paper-thin slices, about 1/16-inch thick, with a slicer or mandolin. Add to fruit along with fennel and toss gently to combine.
  • Sauteed Florida Gulf Shrimp: Preheat a large skillet over medium-high heat. Peel and devein shrimp, leaving tails intact. Pat dry with a paper towel. Add oil to hot pan, and carefully add shrimp and season with salt and pepper. Saute until pink and just done. Place cooked shrimp on plate and serve with Florida Green Mango Jam.;
  • Florida Spicy Green Mango Jam: Peel mangoes and cut into 1/2-inch cubes. In a small bowl, toss mangoes with vinegar, sugar, and salt. To make seasoning paste: cut gingerroot into 4 pieces. For a milder chutney, while wearing rubber gloves, remove seeds and veins from jalapeno. Add to a food processor with motor running gingerroot, jalapeno, garlic, cumin, coriander, and turmeric, 1 at a time, and puree to a paste. Heat a 4-quart heavy pot over moderately low heat until hot. Cook seasoning paste, cinnamon stick, and star anise in oil, stirring frequently, for 10 minutes, or until very fragrant. Stir in mango mixture and simmer, covered, over low heat, stirring occasionally, until mangoes are tender, about 30 minutes. Remove cinnamon stick and star anise and cool chutney completely.

1 1/2 lbs large shrimp, peeled and deveined (3 to 4 per person)
1/2 cup plus 2 tablespoons grapeseed oil
3 garlic cloves, peeled and finely chopped
2 tablespoons smoked paprika
1/4 teaspoon plus a pinch cayenne pepper
1 teaspoon heaping orange zest, finely grated
1 tablespoon coarsely cracked black pepper
1/4 cup lime juice, freshly squeezed, plus 1 generous teaspoon grated lime zest
1/2 teaspoon Dijon mustard
1 teaspoon coarse salt, plus more to taste
1/4 cup extra virgin olive oil
freshly ground white pepper, to tate
1/2 small red onion, halved, peeled and thinly sliced (about 1/3 cup sliced)
1 mango, peeled, seeded and cut into 1/2-inch dice
1 avocado, peeled, pitted and cut into 1/2-inch dice
4 cups lettuce (recommended red oak or lolla rossa)

Steps:

  • Put the shrimp in a bowl.
  • Make the marinade: Pour 1/4 cup of the grapeseed oil into a small bowl. Add the garlic, paprika, 1/4 teaspoon cayenne pepper, orange zest and cracked black pepper and stir together. Set aside 1 tablespoon of the mixture, and pour the remaining marinade over the shrimp. Toss, cover and refrigerate for 30 minutes to 6 hours.
  • Make the vinaigrette: In a small bowl, whisk together the reserved 1 tablespoon marinade, the lime juice and zest, the mustard, 1 teaspoon salt and the remaining pinch of cayenne. Slowly whisk in the remaining 1/4 cup grapeseed oil, then the olive oil. Season to taste with salt and white pepper.
  • Put the onion, mango, avocado and lettuces in a large bowl. Dress lightly with 1/2 cup of the vinaigrette, or more if necessary, and season with salt and white pepper. (Extra dressing can be spooned over the shrimp.) Set aside.
  • Heat the remaining 2 tablespoons grapeseed oil in a saute' pan set over medium high heat. Season the shrimp with salt, add them to the pan, and sear quickly, just over one minute on each side. Remove them from the pan and cover to keep them warm.
  • Mound the salad in the center of a platter and surround it with the shrimp. Serve family style from the center of the table, passing any extra dressing alongside.

1 teaspoon sugar
1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
Juice of 2 limes
2 cloves garlic, finely chopped
1/2 cup extra-virgin olive oil
4 mangoes, sliced
4 Roma tomatoes, halved and sliced
1 small jicama, peeled and cut into julienne
1 red onion, thinly sliced
1/4 cup fresh cilantro leaves
8 leaves fresh basil
2 avocados, sliced

Steps:

  • Whisk together the hot sauce, sugar, salt, cumin, lime juice and garlic in a small bowl. Whisk in the olive oil.

24 jumbo tiger shrimp (about 10 per pound), deveined
1/4 cup fresh lime (substitution: lemon juice)
1/4 cup palm sugar or granulated sugar
1/4 cup fish sauce
1 large garlic clove, finely grated
1 to 2 fresh red Thai chiles, stemmed, seeded, and minced
1/4 cup packed fresh Thai basil, minced (substitution: mint or cilantro leaves)
2 tablespoons vegetable oil
Sour Mango Salad, recipe follows
4 large green mangos, peeled, halved lengthwise, sliced using an Asian shredder or julienned with a knife
2 large carrots, peeled and julienned
2 red Thai chiles, stemmed, seeded, and sliced into thin rounds
1/4 cup fresh lime juice (substitution: lemon juice)
1/3 cup fish sauce
1/3 cup sugar

Steps:

  • Using a paring knife, cut through the back shell of each shrimp. Remove the dark vein by running your forefinger between the shell and the flesh of each shrimp, keeping the shell intact. Reserve shrimp in a re-sealable gallon plastic bag.
  • In a medium bowl, whisk together the lime juice and sugar until the sugar is completely dissolved, then add the fish sauce. Add the garlic, chile, Thai basil, and 1 tablespoon oil. Stir well and pour over the reserved shrimp in the plastic bag. Seal the bag, squeezing out the air. Massage the bag to make sure that all of the shrimp are covered and refrigerate for 30 minutes to 1 hour.
  • Heat a grill pan over high heat. Oil the grill pan with remaining oil. Grill the shrimp, turning once to prevent burning, until evenly pink and golden on both sides, 2 to 3 minutes. Serve shrimp on large plate over Sour Mango Salad.
  • Mix the mangos, carrots, and chiles in a large bowl.
  • For the dressing: in a medium bowl, whisk together the lime, fish sauce, and sugar until the sugar is completely dissolved. Add the dressing to the bowl and toss together. Let stand 20 minutes. Drain and serve at room temperature or lightly chilled.

1 tablespoon ginger julienned
1 1/2 tablespoons sambal
1 1/2 pounds large shrimp, peeled and deveined
Juice of 2 limes
2 ripe mangoes, diced
1/2 pound of blanched snow peas

1/8 cup rice wine vinegar
1/4 cup canola oil
Salt and black pepper to taste

Steps:

  • In a hot wok, coat wok with oil and caramelize onions with the ginger. Season. Add sambal and shrimp and stir fry until just cooked through. Deglaze with lime juice and add mangoes. Check for seasoning.

This recipe actually started off very different for me because I initially wanted to make my version of a Thai green papaya salad. I had the hardest time finding green papaya while I was visiting my in-laws, so I used what I found in the store: crunchy green apples, sweet tangy mango and cooling cucumber. Luckily, this quickly turned into one of my new favorite salads. It goes great with grilled pork, chicken, shrimp and fish.

One 1 1/2-pound pork tenderloin
Grapeseed oil, for greasing
Kosher salt and freshly ground black pepper
1 English cucumber, cut into 3-inch-long matchsticks
1 green apple, cored and cut into 1/4-inch-thick half-moons
1 mango, pitted and cut into 1/4-inch-thick half-moons
1/2 cup loosely packed mint leaves, torn, plus whole leaves for garnish
1 small lime, zested and juiced
1 medium jalapeno, finely minced
1 clove garlic, minced or grated
1 tablespoon light brown sugar
1 tablespoon fish sauce
1 tablespoon tamari
2 teaspoons rice wine vinegar
1 teaspoon kosher salt
1/4 cup lightly salted, dry roasted peanuts, roughly chopped

Steps:

  • For the pork: Preheat the grill to medium-high, about 375 degrees F, or preheat a large grill pan over medium-high heat. Clean and oil the grill grates or grill pan.
  • Lightly oil the tenderloin and sprinkle with salt and pepper. Grill, covered, until you get nice grill marks and a thermometer inserted into the thickest part registers 145 degrees F, flipping once, 14 to 16 minutes. Remove to a cutting board and let rest for 5 minutes. Slice into 1/2-inch thick pieces and transfer to a large plate or platter.
  • While the pork grills, make the salad: Combine the cucumber with the apple, mango and mint in a large bowl. Combine the lime zest with the juice, jalapeno, garlic, brown sugar, fish sauce, tamari, vinegar and salt in a small bowl. Whisk together then pour over the salad (see Cook's Note). Add some of the peanuts, saving the rest for garnish.
  • Top the pork with the salad, mounding it high in the middle of the platter. Sprinkle with the reserved peanuts and a few mint leaves.

4 skinless boneless chicken breasts
drizzle olive oil
1 tbsp garam masala
1 large ripe mango
½ cucumber
½ small red onion
handful fresh coriander leaves
4 tbsp soured cream or natural yogurt
grated zest and juice ½ lime
warm naan bread , to serve

Steps:

  • Heat a griddle or frying pan until hot. Rub the chicken with oil, garam masala and a good pinch of salt. Cook for 6 minutes on each side or until slightly charred and cooked through.
  • Peel and slice the mango into slim wedges. Halve the cucumber lengthways and slice thickly at an angle. Thinly slice the onion. Toss the salad ingredients together with the coriander and pile onto plates.
  • Mix the soured cream or yogurt with the lime zest and juice, season and dollop beside the salad. Cut the chicken in half or into thirds diagonally, arrange next to the salad and serve with naan bread.

2 pounds Maine crab leg meat, picked clean
2 cups, rehydrated mung bean noodles, cut into 2 to 3-inch lengths
1/2 cup sliced scallions, green part only
2 serrano chiles, de-stemmed and minced
1/4 cup chopped cilantro
2 tablespoons fish sauce (3 Crab)
2 limes, juiced
1/2 bunch picked Thai basil leaves
1 package (12-inch) ban trang, rice paper
Salt and black pepper, to taste
1 head red leaf lettuce
1/2 bunch fresh mint
1 ripe mango, peeled, roughly chopped
1 large shallot, peeled and roughly chopped
1 tablespoon rice vinegar
1 tablespoon sambal
1 orange, juiced
2 tablespoons canola oil
Salt and black pepper, to taste

Steps:

  • In a large, chilled bowl, mix together the crab, noodles, scallions, chiles, cilantro, fish sauce, lime juice and basil. Check for seasoning. At this point, you have the Crab Salad finished. You can drizzle a little of the mango sauce to complete the plating. Now to finish the cha gio. Take the same mixture and roll it in rehydrated rice paper. Let rest, seam side down for 2 minutes. Fry at 375 degrees until golden brown.
  • PLATING Slice the cha gio on the bias and plate on a very small mound of the filling. Serve the sauce in a soy sauce dish. Use the red leaf lettuce to pick up the hot cha gio with your fingers. Garnish with the fresh mint.
  • In a blender, add the mangoes, shallots, vinegar, sambal and juice. Blend at high speed and add the oil. Season and check for seasoning.

3 tablespoons unsweetened coconut flakes
3 tablespoons well-stirred spicy ginisang bagoong (sautéed shrimp paste, Barrio Fiesta brand)
2 tablespoons fresh lime juice, or more to taste
1 teaspoon thinly sliced fresh red Thai chile pepper
1/4 teaspoon kosher salt, plus more to taste
4 cups batons (1/4 by 3 inch) peeled green mango or tart green apple
3 tablespoons store-bought Thai or Vietnamese fried shallots or fried onions

Steps:

  • Preheat the oven to 350 degrees F. Spread the coconut in one layer on a small baking sheet or toaster-oven tray and bake, tossing frequently, until the coconut is crunchy and golden, 3 to 5 minutes. Set aside to cool.
  • Mix the shrimp paste, lime juice, chile and salt in a large bowl. Add the mango and toss (ideally with gloved hands) until it's well coated in the mixture. Season to taste with additional salt and lime juice, then sprinkle the coconut and fried shallots on top. Eat!

Mangos (2 large), ripe but still firm
Tuna packed in water (1 large can) or about 1 pound fresh cooked, chilled, and shredded
Small shell pasta (1 pound box)
Low Fat Mayonaise (1 quart)
Green Curry Paste (2 to 4 tablespoons)
Fresh ground black pepper (dash) for color
Grated Parmesan cheese (1 pound) OPTIONAL
Plain Breadcrumbs (4 cups) OPTIONAL

Steps:

  • - Prepare the pasta according to normal directions, drain, cool, and pour into a large mixing bowl. Set aside. - In a smaller mixing bowl, add the Green Curry Paste and pepper to the mayonaise and mix until thoroughly blended. Start with 2 tablespoons and add to your taste. Remember that the tuna, pasta, and mango will offset the bite, so you want it a little spicier than you think it should be. - Add the mayonnaise to the pasta and mix thoroughly. Use a rubber spatula to clean the bowl well. - Cook, cool, and shred the tuna (if preparing fresh) or drain the canned tuna well and shred with a fork. Put the shredded tuna into the small mixing bowl. - Peel and chop the mango into quarter inch dice. You want the mango pieces to be about the same size as the cooked pasta shells. Add the mango to the tuna and mix well. - Add the tuna mango mixture to the pasta, using a wooden spoon or your hands to blend well. - Plate the prepared salad and chill for serving. Add thin slices of mango to the top for garnish if desired. - OPTION Split the salad into casserole dishes lined with breadcrumbs or crumbled saltines, and heat it in a 300F oven topped with shredded parmesan cheese until melted. Do not overheat as the sauce is mayonnaise based and may get oily but the breadcrumbs can only absorb so much liquid.

1 teaspoon fresh lemon juice
1 1/4 cups canola oil
3 tablespoons fresh chives, snipped

1 garlic clove, minced
1 pinch salt
3 mangoes
1 lime
1 medium jicama
1/4 long English cucumber
2 radishes
24 large raw shrimp, peeled and deveined
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon fresh ground black pepper
1 tablespoon vegetable oil
mixed salad green

Steps:

  • To make Dressing: whisk egg yolk, gradually adding vinegar and lemon juice. Whisk in canola oil until well incorporated. Add remaining ingredients, shake well and store in refrigerator.
  • Peel and slice mango. Squeeze juice from lime and toss with mango.
  • Peel and slice jicama and cucumber into strips. Thinly slice radishes.
  • Mix together garlic powder, paprika, onion powder and pepper. Coat shrimp with seasoning and quickly panfry in oil until just cooked (pink).
  • Divide lettuce among 6 plates. Arrange mango and vegetables on lettuce. Drizzle with Honey-Chive Dressing and place cooked shrimp on each salad.

4 large apples - cored and cut into 1x1/4-inch matchsticks
½ large onion, chopped
½ cup lime juice
¼ cup chopped fresh cilantro

1 teaspoon red pepper flakes
salt and ground black pepper to taste
½ cup roasted peanuts

Steps:

  • Mix mangos, apples, and onion together in a large bowl.

1 large shallot, minced
1/2 cup extra virgin olive oil
1/2 teaspoon kosher salt
1/8 head red cabbage, finely shredded
3/4 lb jicama, peeled and cut into 1/4 by 2 inch matchsticks
1 -3 jalapeno chile, with seeds, stemmed and chopped
1/2 red onion, minced (about 1/2 cup)

1 canned chipotle pepper in adobo sauce, finely chopped
2 Tbsp. KRAFT Classic Ranch Dressing
4 skinless salmon fillets (1 lb.)
1 pkg. (5 oz.) baby spinach leaves
1 can (15-1/2 oz.) black beans, rinsed
1 mango, cubed
2 green onions, sliced

Steps:

  • Heat greased grill to medium heat.
  • Combine barbecue sauce and peppers. Remove 1/4 cup barbecue sauce mixture for brushing onto fish. Mix remaining barbecue sauce mixture with dressing; reserve for drizzling over salad.
  • Grill fish 5 to 6 min. on each side or until fish flakes easily with fork, brushing with 1/4 cup barbecue sauce mixture for the last few minutes.

1 1/2 tablespoons sambal
1 1/2 pounds large shrimp, peeled and deveined
2 ripe mangoes, diced
1/2 pound blanched snow peas
1 tablespoon Dijon mustard
1/8 cup rice wine vinegar
1/4 cup canola oil
Salt and black pepper to taste

Steps:

  • In a hot wok, coat wok with oil and caramelize onions with the ginger. Season. Add sambal and shrimp and stir fry until just cooked through. Deglaze with lime juice and add mangoes. Check for seasoning. In a mixing bowl, whisk together Dijon, vinegar and oil. Check for seasoning. Toss with snow peas. Place a pile of snow peas in the middle of the plate. Surround with stir fry. Garnish with mango slices.
