Pork Chops with Twice Baked Sweet Potatoes image

Love me some sweet potatoes! Then lets make it twice baked, and I go directly into my happy place. Add pork chops, need I say more? Another one from Barb & Dad.

Number Of Ingredients 11

2 large sweet potatoes
1 tablespoon(s) maple syrup
1/4 teaspoon(s) cinnamon
1/4 teaspoon(s) salt
1/4 teaspoon(s) pepper
2 tablespoon(s) finely chopped pecans, divided
4 boneless pork chops
1 tablespoon(s) olive oil
1/4 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/2 teaspoon(s) dried rosemary

Steps:

  • Oven to 375 degrees. Prick potatoes with fork, place on sheet of foil in oven. Bake until tender, about 45 min. Let cool, cut slice lengthwise along each potato, scoop out insides and place in mixing bowl.
  • Stir in maple syrup, cinnamon, salt and pepper. Return mixture to potato shells, top each with 1/2 T pecans. Mist a baking pan with PAM. Bake potatoes in pan, uncovered, for 25 min.
  • Sprinkle pork chops with salt, pepper and rosemary. Warm oil in skillet oven med heat. Saute chops until cooked through, about 4-5 min per side. Serve with potatoes on the side.
