MANGO & MINT SOUP

Now for something different...a lovely chilled soup for lunch or dinner...during the hot summer...so easy to make and so flavourful.... Wonderful served with a simple grilled chicken salad and warm rolls. (You may substitute any variety of fresh mint if you do not enjoy spearmint)

8 mangoes, very ripe, little yellow ones
2 cups pineapple juice
1 cup coconut milk, sweet
1 cup orange juice, fresh squeezed
2 lemons, juice of
1 lime, juice of
1/4 cup fresh spearmint
1/4 cup coconut, toasted

Steps:

  • Puree all ingredients well.
  • Served very chilled with toasted coconut to garnish.
  • Can be made early in the day and refrigerated.

Every now and again I get the urge to eat something fresh and healthy. I tried this raw diet soup out from a raw food website and found it to be quite delicious! The avocado gave it some richness and overall it was tangy and flavourful. I was pleasantly surprised! Remember not to warm it too much at the end (no more than 116 degrees Farhenheit or 46.6 degrees Celcius), so that you get all the healthy enzymes etc that come with a raw food recipe.

10 carrots
1 green apple
1 avocado
1/2 lemon
1/2 teaspoon sea salt
1/2 teaspoon chopped gingerroot
1/4 teaspoon allspice

Steps:

  • Juice the carrots, apple, and lemon.
  • Put everything juice and otherwise into a blender and blend till thick and smooth.
  • Warm slightly in a pot on the stove (no more than 116 F/46.6 C) and serve.

SPICY GINGER LENTIL SOUP



Spicy Ginger Lentil Soup image

A while ago I saw this recipe on the BBC good food site but it's no longer available so I figured I'd share it here. Serves 6 and only 74cal per portion!

olive oil, to serve
1 onion, finely chopped
1 large carrot, peeled and diced
2 stalks celery, diced
2 garlic cloves, crushed
25 g gingerroot, peeled and grated
1 red chili pepper, finely sliced (I use 1 tsp dried red chilli flakes)
1 tablespoon curry powder
150 g red lentils, rinsed
400 g chopped tomatoes
2 tablespoons low-fat yogurt, to serve

Steps:

  • Heat Oil in a large saucepan and fry the onion carrot and celery for 5 minutes
  • Add the garlic, ginger root and chilli and cook for another 2 minutes.
  • Stir in the curry powder with 4 tbsp cold water. Stir constantly for 2 minutes Add the lentils and tomatoes into the pan.
  • Refill the now empty tomato tin with water and add to the pan (repeat this 3 times). Season. bring to the boil and then simmer for 40 minutes.
  • Serve with a tbsp of low fat yoghurt (I prefer 0% fat Greek style yoghurt).

1 tablespoon fresh ginger, grated
450 g fresh mango
300 ml water
60 ml fresh orange juice
1 teaspoon lemon juice
salt
black pepper

Steps:

  • Place all the ingredients except for the black pepper in a blender and process until smooth.
  • Garnish with black pepper and serve well chilled.
