2 pounds ground beef
1 small onion, diced
3-4 cloves garlic minced
1 jalapeno, seeded and finely diced
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
1/2 teaspoon onion salt
1/4 teaspoon red pepper flakes (optional)
Salt and pepper, to taste
1 (15 oz.) can tomato sauce

Steps:

  • In a large skillet over medium heat, cook ground beef with onion, garlic and jalapeno, breaking the meat into small pieces, until beef is cooked through, 6-8 minutes; drain grease if needed.
  • Stir in all of the spices, along with salt and pepper, to taste. Cook for an additional minute or two.
  • Stir in the tomato sauce. Cover and simmer for 15-20 minutes. Reseason with salt and pepper, to taste, if needed.
  • Serve with taco shells, tortillas, and your favorite taco toppings.

Making a ground beef taco filling ain't rocket science. You just cook ground meat with Tex-Mex seasonings. This recipe is a little spicy, but feel free to skip the serranos and substitute a packaged taco seasoning mixture for the spices, especially if you're cooking for kids. Many taco seasoning mixes, such as Old El Paso and Ortega, come in your choice of spicy or mild.

For the filling:
1 tablespoon vegetable oil
1/2 onion, chopped
1/2 pound ground beef or vegetarian substitute, such as Lightlife Plant-Based Ground
1 garlic clove, minced
1 serrano chile, stemmed and chopped
1/2 teaspoon salt
1 teaspoon chili powder
1/4 teaspoon ground black pepper
1/4 teaspoon ground cumin
For the tacos:
1 1/2 cups grated Cheddar or Monterey Jack cheese
1 1/2 cups chopped tomato
1 1/2 cups chopped iceberg lettuce
6 taco shells
1 cup Salsa Picante or favorite salsa, optional

Steps:

  • For the filling:
  • Heat the oil in a skillet over medium-high heat and cook the onion until it begins to wilt, about 2 minutes. Add the meat and sear, chopping with a spatula into small pieces until the pink color is gone. Add the garlic and chile and cook for 2 minutes or until the garlic is soft. Add the salt, chili powder, black pepper, cumin, and a tablespoon of water, mix well, and cook for 2 to 3 minutes or until well blended.
  • Assembly:
  • To assemble the tacos, put 1/4 cup meat mixture, then 1/4 cup each cheese, chopped tomato, and lettuce on each taco shell. Drizzle with salsa if desired.

2 onions, minced
1/4 cup chili powder
3 tablespoons vegetable oil
6 garlic cloves, minced
2 teaspoons ground cumin
1 tablespoon minced fresh oregano (or 1 t. dried)
1 (8 ounce) can tomato sauce
2 teaspoons cider vinegar
2 teaspoons light brown sugar
2 slices white bread, torn into quarters
1/4 cup whole milk
2 lbs lean ground beef (90%)
salt
pepper

Steps:

  • Microwave onions, chili powder, oil, garlic, cumin, coriander, and oregano in bowl, stirring occasionally, until onions are softened, about 5 minutes; transfer to slow cooker.
  • Stir tomato sauce, vinegar, and sugar into slow cooker.
  • Mash bread and milk into paste in large bowl using fork.
  • Mix in ground beef, ½ tsp salt, and ¼ tsp pepper using hands.
  • Stir beef mixture int o slow cooker, breaking up any large pieces (do not overmix).
  • Cover and cook until beef is tender, 6-8 hours on LOW or 3-5 hours on HIGH.
  • Let beef filling settle for 5 minutes, then remove fat from surface using large spoon.
  • Break up any remaining large pieces of beef with spoon.
  • Season with salt and pepper to taste.
  • Use as filling for tacos, burritos, etc.
