HONEY PECAN CRUSTED CHICKEN image

4 boneless, skinless chicken breasts
2 TBSP butter
1 cup of Panko breadcrumbs
1/2 cup chopped pecans
1/4 tsp garlic powder
1/3 cup honey
2 TBSP dijon mustard
1 Lemon
Salt and pepper to taste

Steps:

  • Preheat oven to 375 F. Place butter in glass baking dish and place in oven until butter is melted. In a bowl, combine honey and mustard, stirring until smooth. Season breadcrumbs with garlic, salt and pepper. Add chopped pecans to breadcrumb mixture. Place chicken breasts in honey mustard mixture, coating both sides evenly. Once chicken is coated with honey-mustard, dredge both sides with breadcrumb mixture and place in baking dish. Add the remainder of the honey-mustard mixture and the juice of a lemon to the baking dish. Bake at 375F for 45-60 minutes or until juices run clear. Add extra chopped pecans for the last 5-10 minutes if you want. Enjoy!
