2 cups diced seeded peeled cucumber
1 cup chopped celery
1 cup chopped green onions
1 4-ounce can chopped mild green chilies
3 14 1/2-ounce cans diced tomatoes in juice
1 slice white bread, torn into pieces
1/4 cup olive oil
1/4 cup drained capers
2 tablespoons red wine vinegar
1 tablespoon chili powder
2 garlic cloves

Steps:

  • Place 1 cup cucumber, 1/2 cup celery, 1/2 cup green onions and half of chilies in small bowl and reserve.
  • Working in batches, coarsely puree remaining cucumber, celery, green onions, chilies and next 7 ingredients in blender. Pour into large bowl. Mix in reserved vegetables. Season with salt and pepper. Chill at least 6 hours and up to 1 day.

2 large tomatoes, coarsely chopped
1 (20 ounce) can DOLE® Pineapple Chunks, drained, divided

¼ cup chopped mint leaves
1 cup orange juice
1 pound medium-large raw shrimp, peeled and deveined

Steps:

  • Combine vegetable juice, tomatoes, 1 cup each pineapple and mango chunks, honey and chili garlic sauce in blender or food processor container. Cover; blend until smooth.
  • Add remaining pineapple and mango chunks and mint; pulse 2 or 3 times just to chop fruit.
  • Pour into large bowl; stir in orange juice; chill at least 1 hour.
  • Toss shrimp with Creole seasoning in large bowl to coat well. Grill over medium-high heat for 3 to 4 minutes or until pink, turning once.
  • Serve chilled gazpacho in shallow bowls. Top with cooked shrimp. Garnish with mint, if desired.

The soup we know as gazpacho originated in Spain's southern region of Andalusia. Farm harvesters traditionally prepared their lunches in the fields by pounding garlic, stale bread, water, olive oil, and salt in a large wooden bowl, forming a sort of nourishing paste to which they added cold water. Legend maintains that Christopher Columbus took barrels of this paste on his first voyage to the New World. Discovering tomatoes, cucumbers, and bell peppers in the Andes, he added them to the mix, creating the liquid salad we still call gazpacho. From "The Florida Keys Cookbook". 3/4 cup finely diced red onion
3/4 cup finely diced red bell pepper

2 cups organic tomato juice
2 cups reduced-sodium spicy vegetable juice
1 cup reduced-sodium Clamato juice
1 cup organic chicken broth or 1 cup vegetable broth

Steps:

  • ONE DAY AHEAD:.
  • Place olive oil in a 5-quart saucepan over medium heat.
  • When oil is hot, add onions, red and green peppers and garlic. Saute until soft, about 7 minutes.
  • Add tomato juice, V-8 juice, Clamato juice, chicken broth, parsley, basil and chives.
  • Season with salt and pepper to taste.
  • Raise heat to high and bring mixture to boil.
  • Immediately remove from heat and add tomatoes and cucumber.
  • Stir to combine.
  • Transfer soup to a covered container and refrigerate overnight to marry flavors.
  • TO SERVE:.
  • Transfer soup to individual bowls.
  • Serve soup cold with sides of bread, cheese, croutons, or crackers.
  • NOTE: The secret to a good gazpacho is the harmonious marriage of flavors. This soup is best at peak harvest season, when vine-ripened tomatoes, peppers, and cucumbers are available.

2-1/2 cups finely chopped fresh Roma/plum tomatoes
1-1/4 cups finely chopped, unpeeled and seeded, long English cucumber
1/4 cup each finely chopped green, red and orange bell peppers
1/2 cup finely sliced green onions
2/3 cup finely chopped sweet onion - such as Vidalia
1/3 cup virgin olive oil
2 cups fat-free beef broth
juice and fine zest of 1 lemon
juice and fine zest of 1 lime
1/3 cup sherry vinegar
1/3 cup minced fresh flat-leaf Italian parsley
1/3 cup minced fresh cilantro
2 tablespoons Worcestershire sauce
1 tablespoon creamy-style horseradish
3 large cloves garlic, minced
2 jalapeno peppers, seeded and minced
1 hard-boiled egg, chopped
3-1/2 cups spicy V-8 juice
3-1/2 cups spicy Clamato juice
1 tablespoon sugar
fine sea salt to taste
1 teaspoon fresh, coarsely ground pepper

2/3 cup fine, plain bread crumbs
1-1/2 cups small cooked shrimp
GARNISH

Steps:

  • In a non-reactive stock pot, gently combine tomatoes, cucumber, peppers, green onions, onion, olive oil, beef broth, lemon and lime juices/zests, sherry vinegar, parsley and cilantro. Place Worcestershire sauce, horseradish, garlic, jalapenos and cooked egg in blender and puree until smooth. Gently stir into vegetable mixture until well combined. Working in batches, puree 1/3 of vegetable mixture in blender until smooth, then add to remaining vegetables in pot. Add V-8, Clamato juice and sugar, and stir gently to combine. Add salt a little at a time, stirring and tasting after each addition until satisfied. Add pepper and a few dashes of hot pepper sauce if desired. Add bread crumbs and stir just until they melt/dissolve into the soup. Lastly, add shrimp and stir gently to combine. Cover and chill in refrigerator 3-4 hours. Ladle gazpacho into chilled bowls, mugs or large stemmed glasses. Garnish with a dollop of sour cream sprinkled with avocado and lemon/lime zest. NOTE: If a vegetarian gazpacho is preferred: Use only V-8 juice, substitute vegetable broth for beef broth, and omit both shrimp and horseradish.

Sweet shrimp and plump mussels may not be traditional gazpacho ingredients, but they turn this spicy tomato-based soup into a hearty meal.

10 beefsteak tomatoes, (about 5 pounds)
1 small clove garlic
2 small jalapeno peppers, halved and seeded
Juice of 4 limes
1 1/2 teaspoons salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning
1 shallot, minced
1 cup dry white wine
1/2 pound mussels, (about 14), scrubbed
1/2 pound medium shrimp, (about 15), peeled and deveined
1/2 pound yellow cherry tomatoes
2 Kirby cucumbers, peeled, seeded, and finely chopped
1 small red onion, finely chopped
1/2 cup loosely packed fresh cilantro leaves, finely chopped

Steps:

  • Bring a large pot of water to a boil. Using a paring knife, score nonstem end of each tomato with shallow hatch mark. Blanch tomatoes in boiling water for 30 to 60 seconds, until skin peels easily. Transfer tomatoes to a bowl of ice water. Peel and halve them after they cool. Remove and discard most of the seeds, without wasting pulp.
  • Place tomatoes in the jar of a blender, and add garlic and half of 1 jalapeno. Blend mixture, working in batches if necessary, until smooth. Season mixture with lime juice, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Transfer to refrigerator, and chill.
  • Meanwhile, combine shallot, white wine, and 2 cups water in a large skillet. Bring mixture to a boil, and add mussels. Cover skillet, and let mussels cook until shells open, about 2 minutes. Using a slotted spoon, transfer mussels from skillet to a bowl. Cool slightly, cover with plastic, and refrigerate.
  • Return skillet to heat, and bring to a simmer. Add shrimp, and poach until shrimp are pink and cooked through, about 1 1/2 minutes. Transfer shrimp from poaching liquid to a bowl, let cool slightly, and refrigerate.
  • Dice the remaining 1 1/2 jalapeno peppers. Slice yellow cherry tomatoes in half.
  • Adjust seasoning of chilled tomato puree with salt and pepper. Stir in chopped jalapenos, cucumbers, red onion, and sliced cherry tomatoes. Ladle soup into bowls. Divide seafood among bowls. Sprinkle each bowl with chopped cilantro, and serve.

4-5 large tomatoes, cut up and diced
2 can(s) diced tomatoes (14 oz each)
1 large diced cucumber
1 medium red bell pepper, diced
1 medium jalapeno pepper, cleaned and diced
1 medium red onion, diced
2 clove garlic, minced
1 bottle V-8 (spicy, low sodium or any variety), 32 oz. juice or tomato juice
2 Tbsp extra virgin olive oil
2 Tbsp balsamic vinegar or sherry or wine vinegar if preferred
2 Tbsp fresh squeezed lime juice
1 tsp salt
1/2 tsp chili powder
TOPPING INGREDIENTS (SUGGESTIONS)
sliced avocado
low-fat sour cream
pumpkin seeds
chopped cilantro
lime wedges for additional zing!

Steps:

  • 1. Put the ingredients in a large bowl and stir to combine.
  • 2. Place 1/2 the mixture in a blender and pulse until roughly chopped but not pureed. Do the same for the second half or if you like chunky, leave it and mix together with the blended mixture.
  • 3. Place in the refrigerator for at least half an hour to chill before serving.
  • 4. Top with your favorite topping and serve with grilled bread or croutons if preferred. Enjoy!

4 1/4 cucumbers (about 2 3/4 pounds), divided
1 cup plain yogurt
1 teaspoon Thai red curry paste
1/3 cup plus 1/2 teaspoon lime juice, divided
1/2 jalapeno, seeded and coarsely chopped
1 1/4 teaspoons salt, plus a pinch, divided
1/4 teaspoon freshly ground black pepper, plus a pinch, divided
30 cilantro leaves, divided
20 fresh mint leaves, divided
1/2 cup plus 1 teaspoon olive oil, divided
1/2 medium tomato, cut into small dice

Steps:

  • 1. Peel, seed and cut 4 cucumbers into quarters. Cut the remaining one-fourth cucumber in small dice and set aside for garnish. 2. Place half the quartered cucumbers in a blender jar and add the yogurt, curry paste, one-third cup lime juice, the jalapeno, 1 1/4 teaspoons salt and one-fourth teaspoon pepper. Puree. While the blender is running, add the remaining cucumber, 20 cilantro leaves and 10 mint leaves. This will turn the gazpacho a light green. 3. Adjust the seasonings, then while the blender is on, gradually pour in one-half cup olive oil to emulsify. Chill until ready to serve. 4. In a small bowl, make the garnish by combining the diced cucumber, the remaining lime juice, a pinch each of salt and pepper, the remaining mint and cilantro, the remaining 1 teaspoon olive oil, and the diced tomato. 5. Ladle into bowls and garnish.
