MEDITERRANEAN TILAPIA

We had some beautiful tilapia fillets, but no recipes! I had recently bought some amazing sun-dried tomatoes packed in oil, and decided to invent a slightly Mediterranean fish dish for a quick weeknight dinner. My husband is a recipe purist, always follows them to the letter, but after this, he's learned to trust my inventions!

3 tablespoons sun-dried tomatoes packed in oil, drained and chopped
1 tablespoon capers, drained
2 tilapia fillets
1 tablespoon oil from the jar of sun-dried tomatoes
1 tablespoon lemon juice
2 tablespoons kalamata olives, pitted and chopped

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). In a small bowl, stir together the sun-dried tomatoes, olives and capers. Set aside.
  • Place the tilapia fillets side by side in a baking dish. Drizzle with oil and lemon juice.
  • Bake for 10 to 15 minutes in the preheated oven, until the fish flakes with a fork. Check after 10 minutes, so as not to overcook, or the fish may be dry. When fish is done, top with the tomato mixture, and serve.

My husband won't eat fish unless its Tilapia, so I've had to find ways to make it interesting. This is my favorite variation I've done so far. I generally serve this with fresh snow peas or green beans splashed with teriyaki sauce.

12 ounces tilapia fillets
1 teaspoon olive oil
1 teaspoon lime zest
2 teaspoons fresh ginger, grated
1 teaspoon paprika
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon garlic powder
3 tablespoons lime juice
salt
pepper

Steps:

  • Mix together the lime zest, ginger, paprika, garlic powder, red pepper flakes, salt and pepper.
  • Sprinkle mixture on both sides of each tilapia filet.
  • Heat olive oil in a pan. Add the fish filets to the pan and cook on medium-high for 4 minutes on each side.
  • Sprinkle finished filets with lime juice.

1/4 cup olive oil
2 pounds tilapia, red snapper, or orange roughy fillets
1/2 cup chopped fresh parsley
1/2 teaspoon dried crushed red pepper
4 cups cherry tomatoes, halved
1 cup Kalamata olives or other brine-cured black olives, chopped
6 garlic cloves, minced

Steps:

  • Heat olive oil in heavy large skillet over medium-high heat. Sprinkle fish with salt and pepper. Add half of fish to skillet and sauté until just opaque in center, about 3 minutes per side. Transfer fish to platter. Repeat with remaining fish. Add parsley and crushed red pepper to same skillet; sauté 1 minute. Add tomatoes, olives, and garlic; sauté until tomatoes are soft and juicy, about 2 minutes. Season sauce with salt and pepper; spoon over fish.

2 garlic cloves, minced
1 teaspoon fennel seed

1 bunch kale, trimmed and coarsely chopped (about 16 cups)

4 tilapia fillets (6 ounces each)
3/4 teaspoon pepper, divided
1/2 teaspoon garlic salt
1 can (15 ounces) cannellini beans, rinsed and drained
